CUCUMBER LIME AGUA FRESCA

Cucumber Lime agua fresca is among some of the popular drinks for those hot summer days. An easy to prepare a drink that takes the term "agua fresca" to the next level, it really tastes like fresh times 2! Cucumber, lime juice, sugar, and mint to garnish.

1 large English cucumber or 2 garden cucumbers (about 3 cups
when chopped)
½ cup of lime juice (about 4-6 limes (depending on the size)
or juiciness of the limes)
6 cups of water
2/3 cups of sugar
3 cups of ice cubes
3 small sprigs of mint
Some lime & cucumber slices to garnish the drink.

Steps:

  • Peel the cucumbers and remove the seeds using a spoon. Chop cucumbers into chunks and place into the blender. Gather all the ingredients to prepare the agua fresca.
  • Add the 2/3 cups of sugar, ½ cup of lime juice, and three cups of the water into the blender. Process for a couple of minutes, until everything has been processed into a smooth mixture.
  • Now, using a strainer, pour the mixture into a large-sized pitcher. In this case, I'm using my Rubbermaid pitcher. Press down on the strainer with the back of a spoon to extract as much liquid as possible. Afterwards, discard those residues.
  • Add the remaining 3 cups of water and 2 cups of ice cubes, then stir and refrigerate for an hour. To serve, place some slices of lime or cucumber in the glasses and garnish with a few mint leaves. Enjoy!

3 sprigs mint
3 sprigs basil
1/4 stalk crushed lemongrass
1 large cucumber, peeled and diced

2 ounces Infused Simple Syrup
2 ounces Cucumber Juice
1 1/2 ounces citrus vodka
Ice
Cucumber stick, for garnish
Lemon slice, for garnish

Steps:

  • Infused Simple Syrup: In a saucepan over medium heat, combine the sugar, water, cilantro, mint, basil, and crushed lemongrass. Slowly bring to a simmer and cook until the sugar is dissolved. Take off heat and let herbs steep until the liquid is cool. Strain into a glass or a bowl and reserve.
  • Cucumber Juice: Add the cucumber to a blender with 2 cups of water. Blend on high until fully liquefied, then pour through a fine strainer and reserve.
  • Drink: Add the drink ingredients to each pint glass filled with ice. Stir and garnish each glass with a cucumber stick and a lemon slice.

1 cup peeled and seeded cucumber (1 large cucumber, plus more for garnish)
1 cup granulated sugar (or coconut sugar)
6 cups water, divided

Steps:

  • Juice the lemons. Peel the cucumber and remove the seeds with a spoon (if using an English cucumber, you can skip this step).
  • Add the cucumber, sugar and 2 cups warm water to a blender and blend until smooth. Strain the liquid through fine mesh sieve into a pitcher, using a spatula to push the liquid through (discard the pulp; this takes a few minutes to complete).
  • To the pitcher with the cucumber mixture, add 4 cups cold water and the fresh squeezed lemon juice. Add a few handfuls ice and serve. If desired, garnish with extra cucumber slices and lemon wedges.

zest of one lemon
7 mini cucumbers (or 1 1/2 English cucumbers)
1 cup mint syrup
1 cup freshly-squeezed lemon juice, strained of pulp (8 small lemons or 4 large lemons)
1 cup cold water
1 -2 cup ice
cucumber, ribbons (for garnish)
mint (for garnish)

Steps:

  • For the mint syrup: Combine fresh mint, sugar and water in a small pot and bring to a boil, stirring until sugar is completely dissolved. Remove from heat and stir in lemon zest. Let mint steep for 30 minutes before straining syrup through a sieve lined with cheesecloth. Allow to cool completely and store in refrigerator until ready to use.
  • For the lemonade: Slice cucumbers into rounds and add to a blender. Blend on high until cucumbers are fully broken down into juice, stirring as needed. Strain cucumber juice through a sieve lined with cheesecloth, pressing down on the pulp to remove all of the liquid. You should be left with about one cup of juice.
  • In a large pitcher, combine cucumber juice, mint syrup, lemon juice and cold water. When ready to serve, add 1-2 cups of ice. Garnish individual glasses with cucumber ribbons and fresh mint.
