- In a large micro-wave safe glass bowl, heat butter for 50 seconds on high or until the butter is melted.
- Whisk together the butter, flour and milk.
- Add 1 cup shredded cheddar cheese.
- Place bowl in microwave and cook on high for 1 1/2-2 minutes, whisking every 30 seconds or so, until sauce is thick and heated through.
- Season with salt, if desired, and whisk until blended.
3-INGREDIENT CHEESE SAUCE
This velvety-smooth sauce uses real cheddar (not the processed stuff) and comes together in less than 10 minutes. Serve as is with chips, fries, or chili dogs, or transform it into the best queso you've ever had (see below for more on that). - Toss cheese and cornstarch in a medium heatproof bowl. Pour evaporated milk over and cook in microwave on high 1 minute. Whisk and continue to cook in 30-second increments, whisking in between, until melted and smooth (about 2 minutes total).

- In a large pot with boiling salted water cook the elbow macaroni until al dente. Drain and set aside.
- In a 2-quart microwave-safe covered casserole dish, cook the onions and butter or margarine on high for 3 to 4 minutes.
- Add the cooked and drained pasta, milk, and cubed cheese and stir. Cook for 11 to 12 minutes on high, stirring well after 4, 8, and 11 minutes. The mixture will still be runny at this stage. Add salt and pepper to taste.
- Let stand for 5-8 minutes before serving. The sauce will thicken as it cools slightly.

- Melt butter in microwave oven.
- Stir in corn flour well.
- Add the milk and stir.
- Cook in the microwave for 4 to 6 minutes, taking out 1/2 way to give a good stir or whisk for 30 seconds.

- Select a small to medium-sized microwave-safe dish that is wide and shallow. A glass pie plate or glass casserole dish works well. It will need to have walls, so a dinner plate isn't the best choice.
- Grate plenty of cheese into the dish. You don't have to measure. Just make a loosely packed layer an inch or so deep, depending on how much sauce you want to make and how large a dish you have.
- Pour a tablespoon or two of milk into the cornstarch and make a slurry before adding the corn starch to the dish. Make sure all of the cornstarch is dissolved in the milk before you add it to the pie plate.
- Stir everything together with a fork, making sure to mix the cornstarch so it dissolves completely.
- Microwave the whole thing in the dish for two minutes. Cover the dish if you want to save yourself some cleanup.
- Stir with a fork again. Break up and loosen any clumps of cheese that stick together, or to the bottom.
- Repeat the microwaving and stirring until the sauce blends and thickens. Microwave the sauce for about two minutes at a time, stirring in between. It will take about 2-4 two-minute cycles, depending on your microwave and quantities.
- Serve hot. Pour it over pasta, veggies, or whatever else needs to be a bit cheesier. Advertisement.
