This quick and easy coffee cake will be your go-to for all occasions. It's so moist and never fails to impress.

1 box golden cake mix
1 box instant vanilla pudding
1 cup oil
1 cup water
4 eggs
3 tbsp brown sugar
3 tsp cinnamon

Steps:

  • Preheat oven to 350ºF, and spray (or grease and flour) bundt pan
  • Combine sugar and cinnamon in small bowl, and set aside
  • In medium sized bowl, combine cake mix, pudding mix, oil and water
  • With beaters on high-speed, add eggs one at a time beating well in between each addition for a total of 4 minutes
  • Pour half of mixture into bundt pan & sprinkle with half of sugar/cinnamon mixture
  • Pour remaining batter over in pan and top with remaining sugar/cinnamon
  • Swirl knife through to create a marbled effect
  • Bake 55 mins & let cool for 5 mins before removing from pan
  • To remove from pan, place cooling rack on top of bundt pan and flip, and gently jiggle cake out of pan

No-Bake pudding based cake with layers of ladyfingers! Make-ahead: needs 8-24 hours of chilling time. Note: Cool the filling before folding in whipped cream. Chilling mixture will make it too stiff.

serving-size package vanilla pudding mix
2 -3 teaspoons instant coffee crystals
1 teaspoon unflavored gelatin
2 cups milk
6 ounces sweet baking chocolate, broken
75 ladyfingers, divided
1 cup whipping cream, whipped
slivered almonds (optional)

Steps:

  • For filling, in a large saucepan, combine pudding mix, coffee crystals, and gelatin. Stir in milk. Cook and stir over medium heat until boiling. Remove from heat; add chocolate. Stir until chocolate is melted. Transfer to a large bowl. Cover with plastic wrap. Cool for 45 minutes.*.
  • Meanwhile, line a 9x5x3-inch loaf pan with waxed paper or clear plastic wrap. Line bottom and sides with split ladyfingers.
  • Stir filling until smooth. Cool filling. Fold in the whipped cream. Spoon half of the filling into the ladyfinger-lined loaf pan. Cover filling with a layer of ladyfingers. Repeat layers. Cover; chill at least 8 hours or up to 24 hours.
  • To serve, uncover loaf and invert onto serving plate. Remove waxed paper or wrap. Garnish with additional whipped cream and slivered almonds, if you like. Slice into serving-size pieces.

2 packages (3 ounces each) ladyfingers, split
3 cups heavy whipping cream
1 package (8 ounces) cream cheese, softened
1/2 cup lemon curd
2/3 cup confectioners' sugar

Steps:

  • Set aside 5 ladyfingers; line the sides and bottom of a lightly greased 9-in. springform pan with remaining ladyfingers. In a large bowl, beat cream until stiff peaks form; set aside. , In another large bowl, beat cream cheese and curd until smooth; add sugar. Beat on medium for 1 minute. Fold in whipped cream. Spread half of cream cheese mixture into prepared pan. Arrange reserved ladyfingers in a spoke pattern over top. Spread with remaining cream cheese mixture. Cover and chill overnight.

  • In a large mixing bowl, stir together the cake and pudding mixes. Add the milk and water and stir to combine. Beat in the eggs one at a time, combing well after each, then add the butter and vanilla extracts. Beat for 6 minutes at high speed.
  • In a small bowl, stir together the streusel ingredients: granulated sugar, cinnamon, and pecans. Bake the cake in the center of the oven until golden and a skewer inserted in the center comes out clean, 50 to 60 minutes.
