ROAST LAMB WITH MINT, ROSEMARY AND GARLIC

This roast recipe creates succulent lamb, perfect for the Easter weekend.

6 garlic cloves
4 level tbsp rosemary leaves (picked from around three sprigs), plus 2 sprigs
2 tbsp. olive oil
6 level tbsp mint leaves, plus 10 sprigs, to garnish
2 kg (4½lb) leg of lamb

Steps:

  • Preheat the oven to 200°C (180°C fan) mark 6. Put the garlic cloves, rosemary and olive oil in a blender and whiz to a rough paste. Add the mint and whiz for 10sec. Season well with salt and freshly ground black pepper.
  • Put the lamb on a board and slash the skin six or seven times. Season well with salt and freshly ground black pepper. Massage the mint and rosemary paste into the cuts in the lamb, put in a roasting tin and cover with foil. Roast for 2hr 5min or 25min for every 450g (1lb) plus an extra 25min for medium; or 30min for every 450g (1lb) plus an extra 30min for well done.
  • Put on a board, cover with foil and leave to rest for 10min.
  • Arrange the mint sprigs on a serving dish, put the lamb on top and garnish with the remaining sprigs of rosemary. Recording from memory, as my wife said I HAVE to make these for her Mom when she comes to town next month. I never measure or write down ingredients, and am suffering from "memory almost full"! So, here goes

Number Of Ingredients 8

6 -7 lamb loin chops (i.e., one Costco package)
3 sprigs fresh rosemary, chopped
3 -6 sprigs of fresh mint (mine were very large and I used 3)
1 tablespoon chopped garlic
2 tablespoons balsamic vinegar
4 tablespoons olive oil
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Throw everything in a baggy or tupperware container to marinate for a couple of hours REFRIGERATED.
  • Pour the marinade into a sauce pan and heat well.
  • In a large covered skillet,fry half of the chops on one side until browned, 4-5 minutes. Remove from pan and repeat with the other chops.
  • Return all of the chops to the skillet browned side up and fry for 1-2 minutes.
  • Add the simmered marinade, cover, reduce heat to low and allow flavors and aroma to permeate the meat until cooked to desired doneness; lamb usually does better when still slightly pink in the center and still juicy. (We don't do rare meat around here -- nasty cootie attack 15 years ago).
  • Classified under inexpensive as one chop can easily be a portion, and package of 7 was around $15.00 U.S. While it was easy as a dish can be, it would work quite nicely for a breaking-out-the-good-china dinner. Just dress up the serving platter with a little fresh mint and rosemary.
  • Cooking time includes marinating time.

1 whole bone-in leg of lamb (7 to 8 pounds), trimmed of excess fat and membrane
Coarse salt and ground pepper
1 tablespoon olive oil
4 large garlic cloves, cut into 20 slivers
1/2 cup white-wine vinegar
1 cup sugar
1 cup packed fresh mint leaves, chopped
1/2 cup water

Steps:

  • Preheat oven to 450 degrees, with rack in lower third. Rub lamb with a generous amount of salt and pepper, then rub with oil. With the tip of a sharp paring knife, cut twenty 1/2-inch-deep slits all over lamb; insert garlic slivers into openings.
  • Place lamb on a roasting rack set on a rimmed baking sheet; place in oven. Immediately reduce oven temperature to 325 degrees. Roast lamb until an instant-read thermometer inserted in the thickest part (avoiding bone) registers 125 degrees to 135 degrees for rare, or 135 degrees to 140 degrees for medium, 1 1/4 to 1 3/4 hours. Remove from oven; let rest 10 to 15 minutes before carving.
  • Meanwhile, make the mint sauce: In a small saucepan, bring vinegar, sugar, and water to a boil. Reduce heat; simmer until liquid is syrupy and reduced to 1 cup, 10 to 15 minutes. Remove from heat; stir in mint, and let cool completely.

1 sprig fresh rosemary
1 -2 tablespoon granulated sugar
1/4 cup wine balsamic vinegar

Steps:

  • In a food processor chop mint and rosemary leaves with sugar finely.
  • Put in a bowl.
  • Heat the vinegar and pour it over the mint.
  • Adding more sugar if you if you want it sweeter.
  • Serve hot or cold with roasted lamb or other meat.

1 cup fresh mint leaves
2 cloves garlic, sliced
2 tablespoons olive oil
½ cup plain bread crumbs
salt and ground black pepper to taste
1 pinch cayenne pepper, or to taste
1 ½ tablespoons finely grated Parmigiano-Reggiano cheese
¼ cup Dijon mustard
2 teaspoons honey
2 tablespoons extra virgin olive oil
2 teaspoons rice vinegar
2 teaspoons honey
1 teaspoon Dijon mustard
1 pinch salt and freshly ground black pepper to taste
2 (1 1/4 pound) racks of lamb, trimmed
1 teaspoon vegetable oil
salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Line a baking sheet with foil.
  • Cook mint leaves in a pot of boiling water for about 10 seconds.
  • Transfer mint leaves to a bowl of ice water; soak for 30 seconds, drain and squeeze dry.
  • Combine blanched mint with garlic, olive oil, bread crumbs, salt, black pepper, and cayenne pepper in a food processor or blender. Blend for 20 to 30 seconds until fine and crumbly.
  • Transfer mint mixture to a large bowl; stir in Parmigiano-Reggiano cheese, set aside.
  • Combine 1/4 cup Dijon mustard and 2 teaspoons honey in a small bowl, set aside.
  • Combine extra-virgin olive oil, rice vinegar, 2 teaspoons honey, 1 teaspoon Dijon mustard, salt, and black pepper in a jar with a lid. Shake vinaigrette vigorously until combined, about 30 seconds. Set vinaigrette aside.
  • Slice 1/2 to 1-inch slits between each bone of the lamb racks to assure the meat roasts evenly.
  • Season each rack with salt and black pepper on all sides.
  • Heat vegetable oil in skillet over high heat. Brown each lamb rack for 2 to 3 minutes on each side.
  • Transfer lamb racks to the foil-lined baking sheet.
  • Brush each rack with mustard and honey mixture. Sprinkle mint mixture over the top and sides of each rack.
  • Bake in the preheated oven until browned on top and medium rare in the center, about 20 minutes. An instant-read thermometer inserted into the center should read 125 to 130 degrees F (52 to 54 degrees C). Remove from oven and allow lamb to rest for 10 minutes before serving, drizzled with honey mustard vinaigrette.

2 large garlic cloves
1 teaspoon salt
1 teaspoon ground pepper
2 teaspoons olive oil
4 4-ounce loin lamb chops
3 tablespoons mint jelly
3 tablespoons white wine vinegar
1 teaspoon minced fresh rosemary or 1/2 teaspoon dried

Steps:

  • Chop garlic cloves with salt and pepper on cutting board, then use flat side of knife blade to mash garlic mixture to paste. Scrape paste into small bowl; mix in olive oil. Rub garlic paste on both sides of lamb chops. Let lamb chops stand 10 minutes.
  • Meanwhile, stir 3 tablespoons mint jelly, 3 tablespoons white wine vinegar and rosemary in small saucepan over high heat until mint jelly melts and mixture boils. Reduce heat to medium and cook until sauce thickens to syrup, about 2 minutes.
  • Preheat broiler. Broil lamb chops until well browned but still pink inside, about 4 minutes per side. Arrange lamb chops on 2 plates. Spoon sauce over.
