This is an exuberant sauce, like a very gutsy pesto, super-charged with pounded anchovies and capers.

2 cloves garlic, chopped
1/2 teaspoon salt
4 anchovy fillets, preferably salted
1 tablespoon capers
6 tablespoons chopped parsley leaves
2 tablespoons chopped mint leaves
1 tablespoon red wine vinegar
1/2 cup to 3/4 cup olive oil

Steps:

  • Pound the garlic and salt in a mortar and pestle to a smooth paste. Chop the anchovies (if using salted anchovies, first rinse them under cool running water and pat them dry). Add the anchovies and capers to the garlic and pound to a paste. Add the parsley and mint and pound until you have a slightly coarse paste. Stir in the vinegar.
  • Stirring with the pestle, slowly pour in the olive oil so it makes a fairly smooth paste, like pesto. After you've added one-half cup, begin tasting the sauce and stop when you like the texture and flavor.
  • Alternatively, puree the garlic, salt, anchovies (if using salted anchovies, first rinse them under cool running water and pat dry), capers, parsley, mint and vinegar in a blender. With the machine running, slowly add the olive oil. After you've added one-half cup, begin tasting the sauce and stop when you like the texture and flavor.

1 lemon, halved, plus 3 tablespoons lemon juice
2 pounds baby artichokes (14 to 18)
2 cups fresh mint, chopped
1 cup fresh parsley, chopped
1 small Fresno chile pepper, seeded and finely chopped
1 tablespoon capers, drained and chopped
2 oil-packed anchovy fillets, chopped
1 small clove garlic, finely chopped
1 teaspoon dijon mustard
1/2 cup extra-virgin olive oil
Kosher salt

Steps:

  • Preheat a grill to medium. Fill a large bowl with cold water and squeeze in the halved lemon; reserve the halves. Remove the outer dark green leaves from the artichokes until only light green and yellow leaves remain. Cut off the top 1/2 inch of the artichokes. Using a paring knife, trim the stem and lightly peel around the bottom of the base where it meets the stem. Cut the artichokes in half, rub with the lemon halves and add to the lemon water.
  • Make the salsa verde: Combine the mint, parsley, chile pepper, capers, anchovies, garlic and mustard in a medium bowl. Stir in the lemon juice and 6 tablespoons olive oil to make a thick, chunky sauce; season with salt. Set aside at room temperature.
  • Drain the artichokes and pat dry. Toss the artichokes in a large bowl with the remaining 2 tablespoons olive oil; season with salt. Grill the artichokes, turning occasionally, until tender and charred in spots, 6 to 10 minutes, depending on their size. Toss with the salsa verde while still warm.

1/4 cup salted capers, soaked for 30 minutes, drained, coarsely chopped
1/2 cup chopped fresh Italian flat leaf parsley
1/3 cup chopped scallions
1/2 cup chopped fresh mint leaves
1/2 cup fresh lemon juice
2 teaspoons grated lemon peel
1 cup olive oil, preferably extra-virgin
2 teaspoons dried crushed red pepper flakes
3 1/2 teaspoons coarse salt
1 1/2 teaspoons freshly ground black pepper
1 (4 1/2 to 5-pound) butterflied boned lamb shoulder
1 tablespoon minced garlic
Nonstick cooking spray

Steps:

  • Stir the first 7 ingredients and 1 teaspoon red pepper flakes in a large bowl to blend. Whisk in 1 1/2 teaspoons of salt and 1/2 teaspoon of black pepper. Set the salsa verde aside. Place the lamb in a 15 by 10 by 2-inch glass baking dish. Rub the minced garlic, remaining 2 teaspoons of salt, 1 teaspoon of black pepper, and remaining 1 teaspoon red pepper flakes all over lamb. Pour 1/2 cup of salsa verde over the lamb, turning the lamb to coat evenly. Use immediately, or cover the dish and remaining salsa verde separately with plastic wrap and refrigerate up to 1 day.
  • Spray the grill rack with nonstick spray and prepare the barbecue (medium-high heat). Grill the lamb until a meat thermometer inserted into the thicker parts registers 130 degrees F for medium-rare, turning occasionally, about 40 minutes. Transfer the lamb to a work surface and let rest 15 minutes.
  • Cut the lamb across grain into thin slices. Arrange the lamb slices on a platter. Serve the remaining salsa verde alongside.

3 tablespoons lemon juice

Steps:

  • In a small bowl, combine the oil, garlic and seasonings. Rub over lamb. Place in a roasting pan; cover and refrigerate for 1 hour. In a bowl, combine the salsa ingredients; cover and refrigerate until serving., Bake lamb, uncovered, at 425° until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), 20-30 minutes. Cover loosely with foil and let stand for 5-10 minutes before slicing. Serve with mint salsa.

A Saveur recipe.Wow!.I had this as the main dish at my 21st birthday.Everyone loved this,even the people that weren't big on lamb!The way the briney-ness of the anchovies and capers combined with the refreshing herbs was delicious-and helped cut some of the smoky richness.Think Mediterranean salsa verde,not Mexican.Don't be afraid to splurge on a nice olive oil for this if you can afford to:it's definitely worth it and the flavor will shine through in every bite.You could substitute dried tarragon in a pinch,but you should definitely not use dried parsley or mint because it makes up so much of the salsa's body.If you double the recipe only make the one recipe's worth of sauce as this really makes more than you need.You won't mind the leftovers though;the flavors continue to meld and improve as the sauce sits overnight.It's still good a couple of days later if you refrigerate it . I haven't given detailed instructions for how to start a fire/when it's ready;I think most people already how,but in case you don't ,there are plenty of other sources that can instruct you on the best way to do it better than I can,so please don't make this and tell me it turned out badly because I didn't spell it out step by step;take responsibility for your own grilling!:) From Saveur Issue 123,October 2009.

  • Build a fire in a charcoal grill (of course you can use a gas or electric grill if you want to,but I promise you'll be missing out on a lot of flavor;the recipe says to set a gas grill to medium -hot)When the grill is ready add the lamb chops and turn when one side is browned.and continue cooking to your liking.6-8 minutes for medium-rare.10-12 minutes will give you medium well to well done.

2 large jalapeño chiles, stems removed
5 small garlic cloves, peeled

3/4 cup loosely packed fresh Italian parsley leaves
1/3 cup (packed) fresh mint leaves
1 1/2 tablespoons vegetable oil
1 1/2 teaspoons salt

Steps:

  • Mix first 2 ingredients in large saucepan. Cover with water. Bring to boil. Reduce heat; simmer until soft, about 15 minutes. Remove from heat; let stand 15 minutes. Drain.
  • Coarsely chop tomatillo mixture, garlic, and cumin in processor using on/off turns. Add next 3 ingredients; blend until herbs are chopped and salsa is chunky.
  • Heat oil in heavy large saucepan over medium heat. Add salsa and simmer until slightly thickened and reduced to 4 cups, about 10 minutes. Stir in salt.
