Strawberries in White Wine image

So crisp and yummy. And so simple. Cooking time is chill time. I posted this for Zaar World Tour 05.

1 cup dry white wine
2 tablespoons sugar
2 slices lemon zest
2 pints strawberries, hulled and sliced thin

Steps:

  • In a bowl, combine the wine, sugar, and lemon zest.
  • Stir to dissolve the sugar.
  • Add the berries and mix well.
  • Cover and refrigerate for 1 hour. Serve in stemmed glasses.
  • NOTE: These are alchoholic, so it's not recomended to serve these for children. For a non-alchoholic version, replace the wine with sparling white grape juice or cider.

1 1/4 cups dry white wine
1/3 cup sugar
1/2 ripe cantaloupe, halved, seeded, cut into 3/4-inch cubes (about 3 cups)
1 basket (8-ounce) fresh strawberries, quartered
1 cup seedless green grapes, halved lengthwise
1 tablespoon chopped fresh mint leaves

Steps:

  • Bring the wine and sugar to a boil in a small saucepan, stirring until the sugar is dissolved. Boil for 2 minutes. Remove from the heat.
  • Chop and combine the cantaloupe, strawberries, grapes, and mint in a large bowl. Pour the warm wine mixture over; toss to coat. Cover and refrigerate until cold, stirring occasionally, at least 2 hours.
  • Transfer to the fruit mixture to a wide jar with a tight-fitting lid. Keep chilled.

Wonderful dessert that is light and refreshing. The strawberries marinate in the wine for hours producing a strawberry flavor wine at the bottom of the bowl that everyone will be fighting for. Adjust the amount of sugar depending on the sweetness of the berries you have. Great way to dress up not-too-sweet strawberries! Champagne may be substituted for the wine.

3 cups fresh strawberries, hulled and quartered lengthwise
¾ cup white sugar, or to taste
1 ½ cups white wine

Steps:

  • Place strawberries into a medium bowl. Dust with sugar, then pour the wine over them. Cover and refrigerate for 2 to 3 hours.
  • Let the strawberries stand at room temperature for 15 to 20 minutes before serving. Spoon berries into 6 dessert cups, and distribute the remaining wine over the berries.

1 tablespoon cornstarch
1 tablespoon sugar
1/8 teaspoon ground nutmeg
1/8 teaspoon pepper
1/2 cup water
1 cup fresh strawberries, coarsely chopped
1/2 cup white wine or white grape juice
2 teaspoons minced fresh mint
CHICKEN:
4 boneless skinless chicken breast halves (6 ounces each)
1/2 teaspoon salt
1/4 teaspoon pepper
Sliced green onion

Steps:

  • In a small saucepan, mix the first five ingredients until smooth; stir in strawberries and wine. Bring to a boil. Reduce heat; simmer, uncovered, 3-5 minutes or until thickened and strawberries are softened, stirring occasionally. Remove from heat; stir in mint., Sprinkle chicken with salt and pepper. On a lightly oiled grill rack, grill chicken, covered, over medium heat 5-7 minutes on each side or until a thermometer reads 165°; brush occasionally with 1/4 cup sauce during the last 4 minutes. Serve with remaining sauce. Sprinkle with green onion.

1 pint fresh strawberries, quartered
6 fresh mint leaves, finely chopped
¼ cup water
2 tablespoons sugar
4 scoops vanilla ice cream
1 cup whipped cream for garnish
4 fresh mint leaves for garnish

Steps:

  • Mix the strawberries with the mint in a bowl.
  • Combine the water and sugar in a small saucepan and bring to a boil. Reduce heat to medium and simmer until mixture reaches a thin syrup consistency, about 3 minutes.
  • Drizzle syrup over the strawberries and mint and toss gently. Divide berries into four serving cups. Top each with ice cream and a dollop of whipped cream. Garnish with a mint leaf.

A chilled 750-ml. bottle dry white wine

  • In a pitcher combine the mint, the sugar and 3 tablespoons hot water and with a wooden spoon combine the mixture well, bruising the mint. Stir in the wine and the brandy and chill the sangría, covered, for 1 hour. Strain the sangría into tall glasses filled with ice cubes and garnish each drink with mint sprig.

2 -3 cups dry white wine such as sauvignon blanc wine
fresh mint sprig

Steps:

  • Halve large berries; leave hulls on a few berries.
  • Place berries in a large bowl; sprinkle with sugar and cover bowl with plastic wrap.
  • Let stand at room temperature at least 1 hour, stirring once or twice.
  • Remove mint leaves from one bunch of mint. Stack 6 to 8 leaves together; roll the stacked leaves. Slice across the roll to create narrow strips.
  • Repeat with remaining leaves.
  • Add the shredded mint to strawberries just before serving.
  • To serve, evenly divide the minted berries and juices among 8 glasses; pour wine over berries until just covered.
  • Garnish with mint sprigs.
