I'm in love with molasses breakfast cookies made without sugar. They're sweetened with molasses and honey and whole grains. Healthy enough for breakfast!

2 eggs
1/3 cup coconut oil, room temperature
2 Tbsp honey
1/3 cup molasses
1 tsp vanilla
1 cup milled flaxseed
1 cup oats, ground into a flour in a blender
1/2 cup whole grain flour
2 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg

Steps:

  • Preheat the oven to 350F.
  • In a big bowl OR in the bowl of a stand mixer, mix together eggs, coconut oil, honey, molasses and vanilla until well combined.
  • Add the milled flaxseed, oat flour, whole grain flour, baking powder, cinnamon and nutmeg and stir until combined well.
  • Let the dough sit for about 5 minutes while you line a cookie sheet with a silpat mat, or lightly grease the cookie sheet.
  • Scoop cookies onto the cookie sheet, leaving enough room for expansion*. Bake for 12 minutes, or until the edges are just slightly darker.

My Mom's recipe and one of my favorites. Spicy and chewy, they store well and can be frozen. Great for gift giving or shipping.

¾ cup margarine, melted
1 cup white sugar
1 egg
¼ cup molasses
2 cups all-purpose flour
2 teaspoons baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground cloves
½ teaspoon ground ginger
½ cup white sugar

Steps:

  • In a medium bowl, mix together the melted margarine, 1 cup sugar, and egg until smooth. Stir in the molasses. Combine the flour, baking soda, salt, cinnamon, cloves, and ginger; blend into the molasses mixture. Cover, and chill dough for 1 hour.
  • Preheat oven to 375 degrees F (190 degrees C). Roll dough into walnut sized balls, and roll them in the remaining white sugar. Place cookies 2 inches apart onto ungreased baking sheets.
  • Bake for 8 to 10 minutes in the preheated oven, until tops are cracked. Cool on wire racks.

These are basically a soft ginger snap. I made them for my 8 year olds class and they were fighting over the extras. I also made them for a very sweet older friend who said she hadn't tasted these since her mother made them when she was little, They make a ton and stay fresh for quite awhile. This works perfectly for Christmas or large amounts of company!

3 1/2 cups margarine
4 cups sugar
4 eggs
1 cup molasses
8 cups flour
4 teaspoons cinnamon
1 teaspoon ginger
1 teaspoon salt
8 teaspoons baking soda

Steps:

  • Cream margarine and sugar, add eggs and molasses.
  • Finally add dry ingredients.
  • Roll in balls size of fifty cent piece.
  • Roll in sugar--do not flatten!
  • bake on greased cookie sheet and bake at 350° for 10-12 minutes.
