INDIAN BUTTERNUT SQUASH CURRY

200g brown basmati rice
1 tbsp olive oil
1 butternut squash, diced
1 red onion, diced
2 tbsp mild curry paste
300ml vegetable stock
4 large tomatoes, roughly chopped
400g can chickpeas, rinsed and drained
3 tbsp fat-free Greek yogurt
small handful coriander, chopped

Steps:

  • Cook the rice in boiling salted water, as per pack instructions. Meanwhile, heat the oil in a large frying pan and cook the butternut squash for 2-3 mins until lightly browned. Add the onion and the curry paste and fry for 3-4 mins more.
  • Pour over the stock, then cover and simmer for 15-20 mins, or until the squash is tender. Add the tomatoes and chickpeas, then gently cook for 3-4 mins, until the tomatoes slightly soften.
  • Take off the heat and stir through the yogurt and coriander. Serve with the rice and some wholemeal chapattis if you like.

Very easy to make ahead and makes a great lunch! Trust your gut with seasonings; you can always add more as you go on and cooking will deepen the flavors. Curry will thicken as it cools.

1 onion, chopped
1 tablespoon curry powder
1 tablespoon minced fresh ginger root

2 (10 ounce) packages frozen butternut squash
1 cup coconut milk
3 tablespoons peanut butter
⅛ teaspoon salt, or more to taste

Steps:

  • Heat a deep pot with a tight-fitting lid over medium-high heat. Add oil to the hot pot. Add onion to the hot oil and cook until softened, about 5 minutes. Add curry, ginger, and cayenne. Cook until onion just starts to brown, about 2 minutes.
  • Add squash, coconut milk, and peanut butter; stir until well incorporated. Sprinkle with salt and pepper; bring to a boil.
  • Cover and reduce heat to low. Cook, stirring once or twice, until squash is tender, about 20 minutes.
  • Remove lid. If soup is not thick enough, turn heat to medium-high and cook until thickened, about 20 minutes more. Adjust seasoning and garnish with cilantro.

1 tablespoons coconut oil (or any oil really)
1 large shallots, chopped (or 2 small)
2-2 ½ cups diced butternut squash (about 1.5 pounds)
1 tablespoon grated ginger
2-3 tablespoons red curry paste
½ tablespoon yellow curry powder
1 (15 ounce) can coconut milk
¾ cup vegetables or chicken broth
2 teaspoons fish sauce (omit for vegans/vegetarians)
2 teaspoons sugar
3-4 cups fresh baby spinach
basmati rice, crushed cashews/ peanuts, cilantro, lime wedges for serving

Steps:

  • Heat the oil in a large, deep skillet over medium high heat. Add the shallots and saute them for 5-6 minutes or until they just begin to get golden. Add the butternut squash and grated ginger, stir to coat with the oil.
  • Add the red curry paste, yellow curry powder and stir until all the butternut squash is nicely coated. Continue to cook the curry paste for 2-3 minutes or until it's fragrant. Add the broth, coconut milk, fish sauce, and sugar. Let the sauce come to a simmer before covering. Lower the heat and allow the squash to cook all the way through, about 12-18 minutes. You'll know it's done when you can easily pierce the butternut squash with the tip of a knife. Stir in the baby spinach and allow it to wilt.
  • Serve with basmati rice topped with crushed nuts, cilantro, and lime wedges.

2 tbsp Madras curry paste
1 large butternut squash (600g/1lb 5oz peeled weight), chopped into medium size chunks
1 red pepper , halved, deseeded and roughly chopped into chunks
400g can reduced-fat coconut milk
small bunch coriander , roughly chopped

Steps:

  • Heat a large frying pan or wok, tip in the curry paste and fry for 1 min. Add the squash and red pepper, then toss well in the paste.
  • Pour in the coconut milk with 200ml water and bring to a simmer. Cook for 15-20 mins or until the butternut squash is very tender and the sauce has thickened. Season to taste, then serve scattered with chopped coriander and naan bread or rice.

1 medium onion finely chopped
4 cloves garlic minced
1 teaspoon fresh ginger grated
2 tablespoons curry powder
1/2 teaspoon paprika
1 teaspoon dried thyme
1 14-ounce can coconut milk
1 cup vegetable broth or 1 vegetable bouillon plus 1 cup water
1/4 teaspoon Cayenne pepper optional
1 teaspoon sea salt or to taste
2 tablespoons fresh cilantro leaves

Steps:

  • Heat oil in a large saucepan on medium-high. Add onion, garlic and ginger.
  • Cook until onion is soft, about 3 minutes.
  • Stir in curry powder, paprika and thyme. Cook for 1 minute.

  • Bring to boil, Cover and reduce to a simmer on low heat.

1 carrot, cut into 1/2-inch dice
1/2 Spanish onion, cut into 1/2-inch dice
2 tablespoons finely minced fresh ginger
4 cups 1-inch-dice kabocha squash (from about 1 peeled squash)
Kosher salt and freshly ground black pepper
4 cloves garlic, minced
2 tablespoons Thai red curry paste
Two 13.5-ounce cans coconut milk
1 cup chicken stock
2 tablespoons fish sauce
1 cup fresh spinach
Cooked long-grain rice (preferably jasmine), for serving
1/2 cup peanuts, toasted
1/2 cup fresh cilantro leaves
1/4 cup pomegranate seeds
Lime wedges, for serving

Steps:

  • Add the butter to a medium pot over medium heat and let it brown. Add the carrot, onion and ginger and let cook until lightly softened, about 5 minutes.
  • Add the squash and cook, stirring occasionally, for 5 more minutes. Season with salt and pepper. Add the garlic and cook for 2 more minutes. Add the curry paste and cook for another 2 minutes. Whisk in the coconut milk and chicken stock. Simmer until the sauce is reduced and thickened, about 45 minutes. Stir in the fish sauce and spinach.
  • Serve over rice and garnish with the peanuts, cilantro, pomegranate and limes.

1 large shallot (diced (~1/3 cup))
3 cloves minced garlic ((~1 and 1/2 teaspoons))
2 tablespoons finely minced ginger ((from a 1 and 1/2 inch piece))
1 butternut squash (diced (~4 and 1/2 cups))
2 tablespoons coconut oil
3 tablespoons red curry paste (Note 1)
1 and 1/2 teaspoons yellow curry powder
1/4 teaspoon ground coriander
3/4 cup Packaged Butternut Squash Soup (Note 2)
1 can (15 ounces) full-fat coconut milk
1 can (14.5 ounces) good quality fire-roasted diced (or crushed) tomatoes
1 teaspoon fine sea salt
1-2 teaspoons white sugar (optional)
3 cups fresh baby spinach
Serve with: cooked basmati rice, crushed cashews/peanuts/pistachios, chopped cilantro, lime wedges

Steps:

  • Start by prepping ingredients: dice the shallot, mince the garlic and ginger. I peel the ginger with a spoon or vegetable peeler and then finely mince it. Peel and then dice the butternut squash to get about 4 and 1/2 cups. Set aside.
  • Heat the coconut oil in a large, deep skillet over medium-high heat. Add the shallots and saute them for 2-3 minutes or until they are beginning to get golden. Add the butternut squash, garlic, and ginger. Stir to coat everything with the oil.
  • Add the red curry paste (see Note 1), yellow curry powder, and coriander. Stir until all the butternut squash is well coated. Continue to cook the spices and veggies for 3-5 minutes or until everything is fragrant. Pour in the butternut squash soup (See Note 2), coconut milk, and can of tomatoes. Stir and add in the salt. Bring the sauce to a simmer and then lower the heat and cover with a lid. Allow the squash to cook all the way through, about 18-25 minutes. (Check tenderness by piercing with a fork; if it pierces easily, it's ready.) Remove the lid and continue to simmer for a few minutes to thicken the sauce. Depending on the tomatoes you used, you may need to add 1-2 teaspoons white sugar. Taste and add as needed. Remove from heat and let cool for 1-2 minutes before very gently stirring in the baby spinach and allowing it to wilt.
  • Serve curry over cooked basmati rice. Squeeze fresh lime over each bowl (a must-have addition IMO) and if desired, top with finely chopped nuts and cilantro.

To make it easy to peel and chop, precook it in the Instant Pot or pressure cooker: Place a trivet in the bottom of the cooker, add 1 cup water, and place the squash on the trivet (if it won't fit, cut it in half and arrange halves on trivet.) Set pressure cooker to 8 minutes at high pressure. When cooking time is over, allow pressure to come down naturally, remove the squash, and allow it to cool until comfortable to handle. (If you do not have a pressure cooker, you may steam the squash for 15 minutes or skip this step and peel and chop it raw. You may also use pre-chopped fresh or frozen squash.)
  • Peel the squash, cut it in half, and remove the seeds. Cut the squash into large chunks (about 1-inch). Set aside
  • Heat a large Dutch oven or soup pot. Add the onions and cook until they begin to brown. Then add the garlic, ginger, cumin seeds, and mustard seeds and cook for another minute (be careful not to let the spices burn.) Add the water or broth (or water plus 2 teaspoons bouillon) and the chopped squash. Bring to a boil, reduce the heat to simmer, and cover. Cook until the squash is tender, around 15 minutes.
  • Once the squash is tender, use a slotted spoon to remove 4 cups of the squash and onions and place it in a blender. Use a ladle to remove 3 cups of the liquid and add it to the blender. Carefully start the blender on its lowest setting to avoid splashing hot liquid. Increase the speed gradually to blend the squash into a smooth puree.
