- Place potatoes in a 13-in. x 9-in. baking dish coated with cooking spray. In a small bowl, combine the oil, molasses, vinegar, thyme and salt. Drizzle over potatoes and toss to coat. , Bake, uncovered, at 350° for 30 minutes. Stir in walnuts. Bake 30-35 minutes longer or until potatoes are tender, stirring once. Sprinkle with chives.

ROASTED NEW POTATOES WITH GARLIC

- Preheat oven to 375 degrees F.
- Half the potatoes lengthwise and cut them into 1-inch-wide wedges. In a medium bowl, toss the potatoes with the butter and 1 teaspoon of salt. Spread the potatoes out on a roasting pan large enough to hold them in a single layer. (Arrange the potatoes cut-side down, to ensure crisply browned edges.)
- Roast the potatoes until golden brown, about 45 minute. Add the garlic and stir to coat the potatoes evenly. Continue to roast until the potatoes and garlic are evenly browned, about 15 minutes more. (Take care that the garlic doesn't burn.) Remove from the oven and mix with the parsley. Season with salt and pepper to taste. Serve.
MOLASSES NEW POTATOES WITH WALNUTS
Taken from Taste of Home's Holiday & Celebrations Cookbook/2005, recipe by Janet Dingler. I made these potatoes recently, they are simply outstanding! it's a perfect potato side dish to a holiday meal. I doubled the amounts and baked it in a small roaster pan. I also used lots of black pepper, you may also want to increase the salt amount if desired.

Steps:
- Butter a 13 x 9-inch baking dish.
- Dry potatoes with paper towels then place in a medium bowl.
- In a small bowl combine oil with molasses, vinegar, thyme and salt; drizzle over the potatoes in the bowl and toss to coat.
- Place the potatoes into the prepared baking dish (drizzle any extra molasses mixture into the baking dish also).
- Bake uncovered at 350 degrees for about 20 minutes.
- Stir in the walnuts.
- Continue to bake, stirring once for another 20-25 minutes or until the potatoes are fork-tender.
- Sprinkle with chives.
- Do not overcook the potatoes.

This dish was served at the Inauguration Luncheon in 2008; I've been making it ever since as my go-to sweet potato recipe for holidays and special occasions.

Steps:
- Preheat the oven to 400 degrees F. Place sweet potatoes on a baking sheet and roast until easily pierced with a fork, about 1 hour.
- Peel the skin off of the sweet potatoes while still hot. By hand or mixer, smash potatoes until all large chunks are gone.
- Combine the potatoes, butter, salt, orange juice, brown sugar, ground cumin, molasses and maple syrup in a large bowl. Continue to mix all together until all lumps are gone.
- Adjust any of the seasonings to your specific tastes. Can be made the day before.

BROWNED NEW POTATOES
From The Southern Living Cookbook. A simple and unusual way to prepare potatoes. Crispy with a lovely brown color and a touch of sweetness from molasses. I always use a cast iron skillet. Recipe says it serves 3 to 4 but they go quickly.

- Cook potatoes in boiling water to cover until almost tender, about 10 minutes; drain. Heat bacon drippings in a heavy ovenproof skillet over medium heat; add potatoes and cook 10 minutes or until lightly browned, turning frequently. Sprinkle with salt and pepper. Bake at 400 degrees for 30 minutes or until browned, turning once. Stir in molasses and sprinkle with parsley, if desired. Serve immediately.

- Preheat oven to 400 degrees.
- Place potatoes on a baking sheet and transfer to oven. Roast until easily pierced with a fork, about an hour. Let potatoes cool slightly; remove skin and discard.
- Transfer potatoes to the bowl of an electric mixer fitted with the paddle attachment; beat until smooth. Add butter, salt, orange juice, sugar, molasses, and maple syrup; beat until butter is melted and mixture is well combined. Serve immediately or store, covered and refrigerated, up to 1 day. To reheat, transfer potato mixture to an ovenproof dish, cover, and place in a 350-degree oven until heated through.

- In a small bowl, mix mayonnaise, garlic, oregano, salt , and pepper. Set aside.
- Bring a large pot of salted water to a boil. Add potatoes, and cook until almost done, about 10 minutes. Don't overcook otherwise the potatoes will break apart. Drain, and cool.
- Preheat oven broiler. Line a baking tray with aluminum foil, and lightly grease the aluminum foil.
- Arrange potatoes in the prepared baking tray. Spoon the mayonnaise mixture over the potatoes. Broil in the preheated oven until potatoes are tender and mayonnaise mixture is lightly browned, about 10 minutes.
