To keep our wedding simple and fun, Joe and I asked our guests to bring their favorite covered dish and a copy of the recipe (I wanted to put together a wedding cookbook later). We ended up with an outstanding buffet, including this delightful down-home casserole. The recipe came from Erma Thoeming.

2 cups sour cream
1 cup butter, melted and cooled
2 packages (8-1/2 ounces each) corn bread/muffin mix
2 cans (15-1/4 ounces each) whole kernel corn, drained
2 cans (14-3/4 ounces each) cream-style corn
1/4 cup diced pimientos
1/8 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon cayenne pepper

Steps:

  • In a large bowl, combine sour cream and butter; stir in muffin mixes. Fold in the remaining ingredients. , Transfer to two greased 8-in. square baking dishes. Bake, uncovered, at 350° for 55-60 minutes or until a knife inserted in the center comes out clean. Serve warm.

2 cups whole milk
1/3 cup yellow cornmeal
1 1/2 cups fresh corn kernels (from 2 to 3 ears)
1 tablespoon unsalted butter
1 teaspoon salt
4 large eggs, separated

Steps:

  • Preheat oven to 425°F.
  • Bring milk, cornmeal, corn kernels, butter, and salt to a boil in a 3-quart heavy saucepan over moderately high heat, stirring frequently, and simmer, stirring constantly, until thickened, 3 to 4 minutes. Remove from heat and cool 5 minutes, stirring occasionally, then whisk in yolks.
  • Beat whites and a pinch of salt with an electric mixer at medium speed just until soft peaks form. Whisk one fourth of whites into cornmeal mixture in pan to lighten, then fold in remaining whites gently but thoroughly. Spread mixture evenly in a buttered 9 1/2-inch deep-dish glass pie plate or 1 1/2-quart shallow casserole and bake in middle of oven until puffed and golden, 15 to 20 minutes. Serve immediately (like a soufflé, spoon bread collapses quickly).

  • In a mixing bowl, stir together the sour cream, butter, creamed corn, corn niblets, and corn muffin mix.
  • Pour into a casserole dish or 9-inch baking dish. Bake in preheated oven for 40 minutes or until set.

I have this good recipe adapted from The Pioneer Woman Southern comfort food to share here. Enjoy it.

2 eggs, whisked
1 cup sour cream
1 cup heavy whipping cream (or use evaporated milk)
2 tablespoons vegetable oil
1/2 cup butter, melted
2 (15 ounce) cans sweet whole kernel corn, undrained (or use fresh or frozen corn kernels)
2/3 cup all-purpose flour
1/2 cup yellow cornmeal
2 tablespoons sugar (optional)
1 tablespoon baking powder
1/2 teaspoon salt (or more to taste)
1/4 teaspoon pepper
add 1/2 cup shredded cheddar cheese, chopped jalapenos or red pepper, if you like

Steps:

  • Mix the wet ingredients and the dry ingredients in separate bowls, and then combine them. Add salt and fresh cracked pepper to taste.
  • Pour into a greased 8-9 inch square pan or 10 inch cast iron skillet, or 1-1/2 quart casserole baking dish. Top with small dabs of butter (about 2 or 3 tablespoons).
  • Bake at 350ºF. for 50-55 minutes, or until golden brown and get set in the middle, (To test, give it a shake, it shouldn't jiggle too much in the middle when it's ready).
  • UPDATE NOTE: I made the correction in Step 2 for the baking size pan for 12 servings, and added optional ingredients according with a review posted below.

This has to be one of my most favorite recipes my mother ever made. She baked it on special occasions as a substitute for traditional stuffing. If you like the taste of sweet corn with a spicy kick, you may enjoy this.

1 (15 ounce) can cream-style corn
1 (5 ounce) can Mexican-style corn
8 ounces sour cream
1/2 cup butter or 1/2 cup margarine, melted
2 eggs, slightly beaten
1 (8 1/2 ounce) package Jiffy cornbread mix
8 ounces jalapeno jack cheese, shredded

Steps:

  • Mix eggs, butter, sour cream, and cornbread mix together.
  • Pour in both cans of corn.
  • Stir in half the cheese.
  • Pour into a baking pan or casserole dish.
  • Bake at 350F for 30 minutes.
  • Remove from the oven and sprinkle the remaining cheese on top.
  • Bake until the cheese has melted and the center of the casserole is solid.

1 can whole kernel corn, drained
1 can cream style corn
8 oz. sour cream
1 (8 1/2 oz.) size box Jiffy corn muffin mix
Optional:
Chopped red and/or green pepper
Grated cheddar cheese

Steps:

  • Melt butter. Beat eggs slightly. Combine all ingredients except green pepper and cheese. Stir to mix. If you wish to make spoon bread, do not add the pepper and grated cheese. If you wish to make a corn casserole, at this point, add the pepper and grated cheese. Pour into an 11 x 7 inch glass baking dish. Bake at 350 degrees for about an hour or until top is light golden brown. At the holidays make with red and green pepper for some festive fun.
