I modified Beatrice's Excellent Oatmeal cookies very slightly. I came up with something that my boyfriend went CRAZY over! I've never seen him enjoy cookies to that extent! He said I blew his mother's recipe away.

1 cup butter, softened
1 cup packed light brown sugar
½ cup white sugar
2 eggs
2 teaspoons vanilla extract
1 ¼ cups all-purpose flour
½ teaspoon baking soda
1 teaspoon salt
3 cups quick-cooking oats
1 cup chopped walnuts
1 cup semisweet chocolate chips

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended. Mix in the quick oats, walnuts, and chocolate chips. Drop by heaping spoonfuls onto ungreased baking sheets.
  • Bake for 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

1 egg
2 cups quick-cooking oats
1 1/2 cups Gold Medal™ all-purpose or unbleached flour
1 teaspoon baking soda

1 cup semisweet chocolate chips (6 oz)
1 cup chopped nuts, if desired

Steps:

  • Heat oven to 350°F. In large bowl, stir brown sugar and butter until blended. Stir in vanilla and egg until light and fluffy. Stir in oats, flour, baking soda and salt; stir in chocolate chips and nuts.
  • Onto ungreased cookie sheet, drop dough by rounded tablespoonfuls about 2 inches apart.
  • Bake 10 to 12 minutes or until golden brown. Cool slightly; remove from cookie sheet to wire rack.

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in eggs and vanilla. There will be none for anyone else and I am left with "cookie eaters remorse" for DAYS afterwards. This is my favorite *instant gratification* treat. You won't be disappointed... 1 cup shortening
3/4 cup brown sugar
3/4 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon baking soda, dissolved in
1 teaspoon hot water
1 1/2 cups flour
1 teaspoon salt
2 cups oatmeal
1 (12 ounce) bag milk chocolate chips

Steps:

  • Heat oven to 375 degrees.
  • Mix together shortening, brown sugar, granulated sugar, eggs and vanilla extract.
  • Add the baking soda that has been dissolved in hot water.
  • Mix together the flour and salt in a separate bowl, then add to the first mixture.
  • Add the oatmeal and chocolate chips.
  • Drop the dough by teaspoon on to an ungreased baking pan, 2 inches apart.

¼ teaspoon salt
1 cup rolled oats
1 cup unsalted butter, softened
1 ⅓ cups packed dark brown sugar
2 eggs

2 cups semisweet chocolate chips

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Grease cookie sheets. Stir together the flour, baking soda, salt and oats; set aside.
  • In a medium bowl, cream together the butter and brown sugar until smooth. Beat in the eggs one at a time then stir in the vanilla. Mix in the dry ingredients until well blended before stirring in the chocolate chips. Drop by heaping spoonfuls onto the prepared cookie sheet at least 3 inches apart. Flatten cookies to 1/2 inch thick.

Steps:

  • Preheat oven to 350°F.

  • Using your hands clump together a tablespoon of dough. Use you hands to really squeeze the dough into a ball. If the mixture is not holding add 1 tablespoon more of oil. Place on prepared baking sheet. If your balls are a little crumbly do not worry, they will come together while baking. Repeat with remaining dough.
  • Bake for 10 -12 minutes or until set and golden. These are best right out of the oven, so eat up!
