Asparagus Galette image

A galette is a freeform flat pastry crust-like a pie. We've filled this one with mushrooms, cherry tomatoes, bacon and asparagus. Perfect as an appetizer or light dinner meal.

Pastry Crust
1 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon ground red pepper (cayenne)
1/4 cup cold Land O Lakes® Extra Creamy Butter cut into chunks
2 ounces (1/4 cup) cold cream cheese, cut into chunks
1 to 2 tablespoons ice water
1 teaspoon cider vinegar
Filling
6 slices bacon, chopped into large pieces
1/2 pound asparagus, ends trimmed, cut into 2-inch pieces
1/2 cup quartered baby bella mushrooms
1/2 cup halved cherry tomatoes
2 tablespoons balsamic vinegar
1/3 cup crumbled goat cheese
1/3 cup shredded Gruyère cheese
Egg Wash
1 large Land O Lakes® Egg beaten
Crumbled goat cheese, as desired

Steps:

  • Combine flour, salt and ground red pepper in bowl. Cut in butter and cream cheese with pastry blender or fork until mixture resembles coarse crumbs. Stir in ice water and cider vinegar with fork just until flour is moistened. Shape dough into ball. Flatten slightly. Wrap in plastic food wrap; refrigerate 30 minutes.
  • Cook bacon in 12-inch skillet over medium-high heat until crisply cooked. Remove from pan; drain on paper towel. Reserve 1 tablespoon bacon grease in pan. Return pan to heat; add asparagus and mushrooms. Cook 3 minutes or until asparagus is crisply tender. Add tomatoes and balsamic vinegar. Cook 2-3 minutes or until liquid is almost gone. Remove from heat; set aside.
  • Heat oven to 425°F. Line baking sheet with parchment paper.​
  • Roll out dough on prepared baking sheet into 12-inch circle (edges can be ragged). Sprinkle dough with 1/3 cup goat cheese, leaving 2-inch border around edge. Sprinkle bacon and Gruyère cheese on top of goat cheese. Spoon vegetable mixture on top. Fold edge over filling, leaving middle uncovered. Brush edge of crust with egg wash.
  • Bake 18-22 minutes or until crust is golden brown. Remove from oven; let cool on pan 5 minutes before serving. Sprinkle with additional goat cheese, as desired.

This asparagus galette could be an appetizer or a side dish, or you could top it with an egg and serve it as an entree. While I prefer to make my own whole wheat crust to add a nutty flavor, you could use a refrigerated crust instead. Cooking all vegetables before assembling the galette adds flavor and expels most of the moisture, so the crust gets crispy in the oven. 3/4 cup all-purpose flour
3/4 cup whole wheat flour
1 teaspoon kosher salt
10 tablespoons cold unsalted butter
1 to 3 tablespoons ice water
FILLING:
2 tablespoons unsalted butter, divided
2 medium leeks (white portion only), cut into 1/4-inch slices
2 teaspoons kosher salt, divided
1 tablespoon olive oil
1/2 pound sliced baby portobello mushrooms
1 pound fresh asparagus, trimmed and cut into 3-inch pieces
1 log (4 ounces) fresh goat cheese
1 large egg, lightly beaten

Steps:

  • Place flours and salt in a food processor; pulse until blended. Add butter; pulse until butter is the size of peas. While pulsing, add just enough ice water to form moist crumbs. Shape dough into a disk. Cover and refrigerate 1 hour or overnight., In a large skillet, heat 1 tablespoon butter over medium heat. Add leeks and 1 teaspoon salt; cook and stir until softened, 5-7 minutes. Reduce heat to medium-low; cook until deep golden brown, 25-30 minutes, stirring occasionally. Remove from pan to a large bowl., In the same skillet, heat oil and remaining 1 tablespoon butter over medium heat. Add mushrooms and remaining 1 teaspoon salt; cook and stir until reduced by half and crispy, about 20 minutes. Add to bowl with leeks., Meanwhile, in a Dutch oven, bring 8 cups water to a boil. Add asparagus; cook, uncovered, until the stalks turn bright green, 2-3 minutes. Remove asparagus and immediately drop into ice water. Drain and pat dry; add to bowl with leeks and mushrooms., Preheat oven to 400°. On a lightly floured surface, roll dough into a 12-in. circle. Transfer crust to a parchment-lined baking sheet., Crumble goat cheese over top of vegetable mixture. Spoon over crust to within 2 in. of edge. Fold crust edge over filling, pleating as you go and leaving a 6-in. opening in the center. Brush folded crust with beaten egg. Bake until crust is golden brown and cheese is melty, 30-35 minutes. Let stand 5 minutes before cutting. Serve warm or at room temperature.

2 cloves garlic, smashed
7 thin asparagus spears
2 ½ cups sliced button mushrooms
¾ cup dry white wine
salt and freshly ground black pepper to taste
1 (16 ounce) package tagliatelle pasta
5 tablespoons grated Parmesan cheese

Steps:

  • Remove the tough ends of the asparagus spears and chop into 1-inch pieces. Reserve the tips.
  • Heat 1 tablespoon oil in a large pot over medium-low heat and cook garlic until light golden, 1 to 2 minutes. Add asparagus pieces and cook over medium heat, stirring often, until softened, about 5 minutes. Stir in mushrooms and coat well with oil. Pour in wine and cook until liquid evaporates, about 4 minutes. Add reserved asparagus tips and cook for 2 minutes. Discard garlic and season sauce with salt and pepper.
  • In the meantime, fill a large pot with lightly salted water and bring to a rolling boil. Cook tagliatelle at a boil until tender yet firm to the bite, about 8 minutes. Drain, reserving some of the cooking water.

1 3/4-ounce package dried chanterelle mushrooms
4 tablespoons (1/2 stick) butter
1/2 cup minced leek (white and pale green parts only)
1 large shallot, chopped
6 ounces portobello mushrooms, stems and gills removed, caps finely chopped
1/2 cup dry white wine
6 tablespoons fresh soft goat cheese (such as Montrachet)
3 tablespoons minced fresh parsley
1 sheet frozen puff pastry (half of 17.3-ounce package), thawed

Steps:

  • Place dried chanterelles in small bowl. Pour enough hot water over to cover chanterelles; let stand until softened, about 30 minutes. Drain. Finely chop.
  • Melt 2 tablespoons butter in large nonstick skillet over medium-high heat. Add leek and shallot; sauté 2 minutes. Add 2 tablespoons butter, then portobellos and chanterelles; sauté until tender, about 5 minutes. Add wine; simmer until liquid is reduced by half, about 2 minutes. Add 2 tablespoons goat cheese; stir until slightly thickened, about 1 minute. Season with salt and pepper. Stir in 2 tablespoons parsley. Remove from heat.
  • Position rack in center of oven; preheat to 375°F. Line baking sheet with parchment paper. Roll out puff pastry sheet on floured surface to 12x12-inch square. Using 4-inch-diameter biscuit cutter or bowl as guide, cut out 4 pastry rounds. Using small cookie cutters, such as those with leaf shape, cut out decorative designs from remaining pastry, if desired. Place rounds on baking sheet, spacing apart. Spread 1 tablespoon goat cheese atop each. Spread mushroom mixture evenly atop each to within 1/2 inch of edge, dividing equally. Turn pastry edges upward slightly to hold topping in place. Place decorative pastry cutouts on baking sheet around galettes.
  • Bake until pastry is puffed and golden, about 15 minutes for decorative cutouts and 30 minutes for galettes.
  • Sprinkle galettes with 1 tablespoon parsley. Top with cutouts, if desired.

Steps:

  • Roll out each pastry sheet on work surface to 10-inch square. Cut each into 4 squares. Using small knife, score 1/2-inch border (do not cut through pastry) around inside edges of each square. Arrange squares on 2 rimmed baking sheets. DO AHEAD: Can be made 1 day ahead. Cover and chill.
  • Melt butter in heavy large skillet over medium-high heat. Add mushrooms; sprinkle with 1/4 teaspoon coarse salt and 1/4 teaspoon pepper. Sauté until tender and lightly browned, about 4 minutes. This combination of oyster mushrooms and asparagus hits the spring vegetable sweet spot. Raleigh, NC chef Ashley Christensen adds cream and finishes with porcini butter, a flavorful compound butter you should make in advance. It's an optional addition, but its earthy punch makes this dish a knockout.

1 ounce dried porcini mushrooms
2 sticks unsalted butter, room temperature, make ahead of time; see step 2 for cooking instructions
1 1/2 tablespoons extra-virgin olive oil, divided
1/2 pound oyster mushrooms, torn into bite-sized pieces
Sea salt
2 tablespoons minced shallots, about 1 medium shallot
2 sprigs thyme
1 pound asparagus, ends trimmed, cut into 1-inch pieces
1/2 cup amontillado sherry (or white wine), preferably Lustau brand
1/3 cup heavy cream
1 tablespoon unsalted butter, cold, (use 2 tablespoons if not using porcini butter)
1 tablespoon porcini butter, cold (optional)
1 tablespoon fresh lemon juice

Steps:

  • In a large skillet, heat 1 tablespoon oil over medium heat until shimmering. Add mushrooms to the pan in an even layer. Sear, stirring a few times, until the moisture from the mushrooms has evaporated and the edges begin to crisp, 1-2 minutes. (If the pan seems dry as the mushrooms cook, add remaining ½ tablespoon oil.) Add the shallots and thyme; stir to coat and cook, 1 minute. Add asparagus and a pinch of salt, and continue cooking until the asparagus are bright green and slightly soft, 1-2 minutes depending on asparagus size.
  • Add sherry and swirl the pan until the liquid has reduced by ¾. Add heavy cream and let it reduce until it has thickened slightly, 2 minutes. Stir in one tablespoon of butter and one tablespoon of porcini butter, and continue sautéing until the sauce coats the vegetables, 1 more minute. Turn off heat. Taste and adjust seasoning with salt if necessary, and finish with lemon juice. Serve immediately. Porcini Butter: In a small saucepan combine mushrooms with just enough water to cover them. Bring to a boil; reduce to a simmer and cook on low heat for 45 minutes. Mushrooms should be soft, with a bit of liquid in the pan. Purée mushrooms and remaining liquid with butter until smooth. Transfer to a lidded container and refrigerate until ready to use. Porcini butter can be stored in the refrigerator up to 2 weeks and in the freezer up to 3 months.

This frittata combines two of my favourites vegetables, asparagus and mushrooms. You can serve it for brunch or for a light dinner with a salad.

2 tablespoons butter
2 tablespoons olive oil
3 cups sliced mushrooms
1 garlic clove, minced
8 eggs
1/3 cup chopped fresh parsley
1/4 teaspoon black pepper
12 ounces cooked asparagus
1 cup shredded mozzarella cheese
1/4 cup freshly grated parmesan cheese

Steps:

  • In a large skillet with an ovenproof handle, heat 1 tablespoons each of the butter and olive oil over high heat; cook the mushrooms and garlic, stirring often, for about 2 minutes or until the mushrooms are softened.
  • With a slotted spoon, remove to a bowl and set aside.
  • Drain the liquid from the skillet; heat the remaining butter and olive oil over medium heat, swirling to coat the pan.
  • Combine the eggs, parsley and pepper; pour into the skillet.
  • Cover and cook over medium-low heat for 5 to 7 minutes or until the top is almost set.
  • Sprinkle with the mushroom mixture; arrange the asparagus like wheel spokes on top.
  • Sprinkle with the mozzarella, then with the Parmesan.
  • Broil until the cheese melts and is lightly browned.

  • Cut the asparagus into 7.5cm/3in lengths. Very finely chop the garlic. Slice the mushrooms. Finely grate the cheese.
  • Cook pasta according to instructions on the pack.
  • Meanwhile cook the asparagus stems in boiling water for 2mins. Add the asparagus tips and cook for a further minute. Drain.
  • Heat the oil and cook the garlic and mushrooms for one minute, stirring.
  • Add vegetable stock, black pepper and thyme. Cover and cook for 2 minutes.
  • Add asparagus and heat gently. Fold in the cooked, drained pasta and most of the cheese.
  • Serve immediately with the remaining cheese sprinkled on top.
