Steps:

  • Add sliced white mushrooms, chopped onions, butter and minced garlic to a large cast iron skillet.
  • Heat mushrooms over medium heat, stirring ingredients frequently until onions and mushrooms are soft and tender, which takes about 6-8 minutes.
  • Add 1 tablespoon of cooking sherry and 1 tablespoon soy sauce and mix well.
  • Continue to heat mushrooms and onions for 2 minutes, until mushrooms are caramelized and excess liquid is burned off.
  • Season mushrooms and onions with sea salt and cracked pepper.
  • Serve hot either as a side, on a burger, chicken, pork, or even as a savory topping to an omelet.

1 large sweet onion (about 8 oz), thinly sliced (about 3 cups)
2 teaspoons chopped fresh thyme leaves or 1 teaspoon dried thyme
1 tablespoon packed brown sugar
2 tablespoons white wine or chicken broth
1 cup chopped fresh mushrooms
1/3 cup chopped walnuts
1/3 cup shredded Asiago cheese

Steps:

  • Heat oven to 375°F. Unroll dough on work surface (if using crescent rolls, pinch seams to seal); cut into 24 (2-inch) squares. Press 1 square in bottom and up side of each of 24 ungreased mini muffin cups.
  • In 10-inch skillet, heat oil over medium heat. Add onion and thyme; cook 8 to 10 minutes, stirring frequently. Reduce heat to medium-low; cook 6 to 9 minutes, stirring constantly, until onions are caramelized. Stir in brown sugar and wine; cook 2 to 3 minutes, stirring constantly, until liquid is gone. Stir in mushrooms. Spoon about 1 tablespoon onion-mushroom mixture into each cup. Top with walnuts and cheese.
  • Bake 12 to 15 minutes or until golden brown. Remove tartlets from pan immediately. Serve warm.

1 package (8 ounces) cream cheese, softened
1/2 cup butter, softened
1-1/2 cups all-purpose flour
FILLING:
1/2 pound fresh mushrooms, finely chopped
1 medium onion, finely chopped
2 tablespoons butter
3 ounces cream cheese, cubed
1/2 teaspoon salt
1/4 teaspoon dried thyme
1/8 teaspoon pepper
1 large egg, lightly beaten
1 teaspoon water

Steps:

  • In a bowl, beat cream cheese and butter until smooth; stir in flour. Cover and refrigerate dough for at least 1 hour. Meanwhile, in a skillet or saucepan over medium heat, saute mushrooms and onion in butter until tender. Remove from the heat. Add cream cheese, salt, thyme and pepper; stir until cheese is melted. 1 cup sliced baby portobello mushrooms
1 medium onion, halved and sliced
3 garlic cloves, minced
1/3 cup grated Parmesan cheese

1 tube (8 ounces) refrigerated reduced-fat crescent rolls
1/2 cup shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 375°. In a large skillet, heat 2 tablespoons butter over medium-high heat. Add mushrooms and onion; cook and stir 2-3 minutes or until softened. Reduce heat to medium-low; cook and stir 10-12 minutes or until onion is golden. Add garlic; cook 1 minute longer. 4 tablespoons salted butter
2 small onions, thinly sliced
1 teaspoon fresh thyme, chopped
Kosher salt and freshly ground pepper
1 tablespoon apple cider vinegar
2 8-ounce tubes refrigerated crescent roll dough, separated into 16 triangles
4 ounces Swiss cheese, shredded

Steps:

  • Preheat the oven to 375˚ F. Melt the butter in a 12-inch cast-iron skillet over medium heat. Add the onions, thyme, 1 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the onions are very soft and a deep golden brown, 10 to 15 minutes. Stir in the vinegar and cook, scraping up any browned bits, until evaporated, 1 to 2 minutes. Use a slotted spoon to remove the onions to a paper towel-lined plate and wipe the skillet clean.
  • On the wide end of each dough triangle, spoon a scant tablespoonful of caramelized onions and sprinkle with about 1 tablespoon Swiss cheese. Starting at the wide end, gently roll up the dough around the filling; place in the skillet. There will be some space between each roll, but the rolls will puff up and come together when baked.

3 -4 tablespoons fresh parsley, finely chopped

I've been doing it this way for years and never really thought of it as a recipe until today when my husband mentioned that it was the best he'd ever had. If you have leftovers, make an omelet with them with smoked swiss cheese and serve with hot, steaming bowls of tomato soup with basil. Just trust me on that.

1/2 lb sliced mushrooms (I use crimini but white work as well)
1 medium onion, sliced into wedges
2 tablespoons butter
1 tablespoon olive oil
1 teaspoon Worcestershire sauce
1/4 teaspoon garlic salt

Steps:

  • Melt the butter and olive oil together in a frying pan and add the mushrooms and onions; let them cook slowly, over medium heat, until the mushrooms are getting a little brown and the onions are nice and soft, about 20 minutes.
  • While there's still some moisture left from the mushrooms, add the Worcestershire sauce and garlic salt.
  • The mixture will thicken and it's ready to serve.
