PEACH STUFFED FRENCH TOAST RECIPE



Peach Stuffed French Toast Recipe image

Stuffed french toast filled with fresh peaches cooked with a little brown sugar and cinnamon. Finished with toasted walnuts to add texture to every bite!

3 Large Peaches, sliced
1 tbsp Butter
3 tbsp Brown Sugar
1/8 tsp Cinnamon
1/8 tsp Vanilla
1/2 c Chopped Walnuts, toasted
1 Loaf of Fresh White Bread, cut into 1 1/2" slices
2 large Eggs
1/4 c Milk
Powdered Sugar, for finishing

Steps:

  • Begin by melting butter in a medium pan over medium heat. Add in sliced peaches with the brown sugar, cinnamon, and vanilla. Once it comes together and peaches begin to soften, add in some water (about 1/4c or less) to pick create a syrup.
  • Remove peaches from heat after about 3-4 minutes (you do not want them to be super soft, you are only merging the flavors here)
  • Take your slices of bread and carefully cut a "slot" in the center starting at the top (See photos) Gently pull back to create a pocket for your peaches.
  • In a flat dish or bowl beat eggs with milk
  • Gently stuff your bread with your cooked peaches (try to reserve some of the syrup)
  • Dip both sides of bread in egg mix and place in pan over medium-high heat. Cook for about 3 mins each side (until golden).
  • Remove from pan and serve topped with toasted walnuts, powdered sugar and reserved peach syrup!

I have always liked french toast and peaches together and lost my mothers recipe so I went looking on the internet for a good recipe and found this recipe on Allrecipes. 8 fresh peaches
1/2 cup sugar
4 pinches ground nutmeg
1/2 teaspoon ground cinnamon
4 mexican bolillo rolls
1 cup mascarpone cheese
6 tablespoons confectioners' sugar
6 eggs
3/4th cup of milk
1/2 teaspoon vanilla extract
2 teaspoons butter, or as needed
2 teaspoons vegetable oil, or as needed
1 lemon, zested

Steps:

  • 1. Peel peaches, remove pits, and slice into a heavy saucepan, catching all the juices. Stir in sugar, nutmeg, and cinnamon, and cook over medium heat until bubbly. Continue cooking, stirring occasionally, until the sauce reaches a syrupy consistency, about 10 minutes. Remove from heat.
  • 2. Meanwhile, cut off and discard the ends of the bolillo rolls. Slice the rolls into 1 1/4-inch-thick slices. Lay each slice of bread on a board, and with a sharp knife held parallel to the board, cut a pocket into each slice, leaving three sides intact. Set aside.
  • 3. Stir together the mascarpone, confectioners' sugar, and lemon zest until smooth. Scoop this mixture into a small plastic bag. Cut off one corner of the bag, and pipe as much filling into the pocket in each slice of bread as will fit without overflowing.
  • 4. Whisk together the eggs, milk, and vanilla in a shallow bowl. Melt butter with oil over medium heat in a large nonstick skillet. Dip each stuffed piece of bread into the batter, add to the skillet, and cook until browned on both sides. Serve hot with the warm peach sauce.
  • 5. Tip***** If you can't fine Mexican bolillo rolls, use a loaf of French bread instead.

My friend gave me this recipe to try and I embellished a little and added some spice; but it is SO yummy. It makes its own syrup when it cooks; everyone I have ever made this for LOVED it!

1/2 cup butter
6 eggs
1 cup brown sugar, packed
1 1/2 cups milk
2 tablespoons water
1 teaspoon vanilla
29 ounces canned peach slices (drained)
1 loaf French bread, crusts removed, cubed
1 dash orange zest, add to egg mixture (optional)
1 dash nutmeg, add to egg mixture (optional)
1 dash cinnamon, add to egg mixture (optional)

Steps:

  • Stir butter and brown sugar over medium heat until butter is melted; add water; cook until mixture bubbles. Cool.
  • Spray a 13x9 baking dish with non-stick cooking spray.
  • Pour in syrup mixture, lay peach slices in dish; cover with bread cubes, completely covering the peaches.
  • Mix remaining ingredients and pour over bread.
  • Push the bread down so it soaks up the mixture.
  • Cover; refrigerate overnight.
  • Bake at 350F for 40 minutes.

  • Peel the peaches: Bring a large pot of water deep enough to cover the peaches to a gentle boil. Carefully drop in the peaches, let boil for 1 minute, then remove with a slotted spoon and plunge immediately into an ice batch to stop the cooking. Run each peach under cool water—the skins should slip off easily. Slice, then place in a small bowl with the brown sugar and lemon juice. Stir lightly to coat and set aside.
  • Lightly coat a 9x13-inch baking dish with cooking spray. Arrange the bread slices in a single layer along the bottom of the dish. Try to cover the entire surface of the dish, cutting or tearing slices to fit as necessary.
  • In a large bowl, whisk together the eggs, evaporated milk, non-fat milk, maple syrup, bourbon, vanilla extract, cinnamon, and salt. Pour over the bread. Lightly press down on the bread slices so that the egg mixture runs over the top.
  • Arrange the peach slices over the top of the bread, leaving any excess juices in the bottom of the bowl. Cover the pan tightly with plastic wrap and refrigerate for 8 hours or overnight.
