SOUTHERN MUSTARD GREENS

6 slices thick-cut applewood-smoked bacon, chopped
1/2 onion, chopped
4 bunches mustard greens, trimmed and chopped
2 cups chicken broth
1 tablespoon cider vinegar
Kosher salt and freshly ground black pepper
Hot sauce, for serving

Steps:

  • Place the bacon in a large, wide pot and cook over medium heat until some of the fat has rendered and the bacon is light golden, about 5 minutes. Add the onions and cook, stirring occasionally, until softened, about 5 minutes more. Add the mustard greens in batches, letting each batch wilt before adding the next. Add the chicken broth, vinegar, 1/2 teaspoon salt and a few grinds of pepper. Bring to a boil over medium-high heat, then reduce the heat to low and cook, covered, until the greens are very tender, 20 to 25 minutes. Season with salt and pepper and serve with hot sauce on the side.

1 tablespoon peanut oil
1 ½ teaspoons bacon bits
1 clove garlic, minced
1 bunch mustard greens, washed and chopped
1 teaspoon onion powder
1 teaspoon fish sauce

Steps:

  • Heat peanut oil in a large skillet over medium heat, and cook and stir the bacon bits and garlic until fragrant, about 1 minute. Stir in 2 or 3 handfuls of mustard greens, allow the greens to wilt, and stir in remaining greens; sprinkle with onion powder. Continue to cook and stir until the greens are bright green, wilted, and starting to become tender, 2 to 3 more minutes. Drizzle greens with fish sauce, stir to combine, and serve.

2 tablespoons vegetable oil
2 cloves garlic, minced
2 bunches mustard greens, stemmed and chopped
Kosher salt and freshly ground black pepper
1/4 cup chicken stock
1 tablespoon stone-ground mustard

Steps:

  • In a large pan with straight sides on medium heat add the oil. Add the garlic to the hot oil. Saute until garlic is softened and fragrant and has infused the oil.
  • Add the mustard greens. Season the greens with salt, and pepper, and saute while tossing to wilt. Once wilted add the chicken stock and stir. Raise heat to a simmer, then lower and cook for about 5 minutes more.
  • Stir in the ground mustard. Serve warm.

1 cup unsweetened coconut flakes
3 lb. mixed hardy greens (such as Tuscan kale, curly kale, Swiss chard, and/or mustard greens; about 4 bunches)
¼ cup virgin coconut oil
6 garlic cloves, lightly crushed
1 large onion, finely chopped
1 red Thai or Fresno chile, thinly sliced
1 (2-inch) piece ginger, peeled, thinly sliced
Kosher salt
2 Tbsp. mustard seeds
2 tsp. ground coriander
½ tsp. ground turmeric
2 cups unsweetened coconut milk
½ cup coarsely chopped cilantro

Steps:

  • Preheat oven to 350°F. Spread out coconut flakes on a parchment-lined rimmed baking sheet and toast, undisturbed, until some are golden brown (some will remain white), 5-7 minutes. Let cool.
  • Meanwhile, remove ribs and stems from greens and discard. Cut leaves into 1"-thick strips; set aside.
  • Heat oil in a large skillet over medium. Add garlic and cook, stirring often, until golden brown, about 3 minutes. Add onion, chile, and ginger; season with salt. Cook, stirring often, until onion is softened, about 5 minutes. Add mustard seeds, coriander, and turmeric and cook, stirring to evenly distribute, until fragrant, about 1 minute.
  • Add coconut milk to skillet and bring to a simmer. Add reserved greens a handful at a time, letting each batch wilt slightly before adding more. Cook, tossing occasionally, until greens are tender and mixture looks creamy, 15-18 minutes. Taste and season with more salt if needed.
  • Transfer greens to a platter or large shallow bowl and top with coconut flakes and cilantro.

I am always looking for fun ways to incorporate vegetables into my recipes these days, so in this recipe I use a mustard green filling along with the smoked mini links as a play on the use of the classic mustard application. The addition of black mustard seeds give a beautiful texture and flavor to elevate this fun holiday classic.

Kosher salt
1 pound mustard greens, cleaned
2 tablespoons unsalted butter
1 tablespoon grapeseed oil
3 shallots, finely chopped
5 cloves garlic, finely chopped
1 jalapeno, seeded, finely chopped
1 tablespoon fine cornmeal
1/4 teaspoon cayenne pepper or 1/2 teaspoon red chile flakes
1 tablespoon Dijon mustard
1 tablespoon Japanese mayonnaise, such as Kewpie
2 cans crescent rolls, such as Pillsbury
48 cocktail-size smoked links
1 stick (8 tablespoons) unsalted butter, melted
Black mustard seeds, for sprinkling
Smoked flaky sea salt, such as Maldon
3/4 cup Dijon mustard
1/4 cup Japanese mayonnaise, such as Kewpie
2 teaspoons freshly ground horseradish
1/2 teaspoon kosher salt
2 tablespoons chopped fresh chives

Steps:

  • Preheat the oven to 350 degrees F.
  • For the pigs and mustard greens: In a large pot of boiling salted water, blanch the mustard greens for about 1 minute. Remove the greens from the pot by pouring the contents into a colander. Then plunge the greens into an ice water bath. Pull the greens out of the ice water, squeeze the excess water from the greens by placing them in a clean, dry cloth and applying pressure. Once most of the water has been drained, give them a rough chop and set aside.
  • Heat the butter and oil in a large cast-iron pan over medium heat. Add the shallots, garlic, and jalapeno. Sprinkle in 2 teaspoons kosher salt and sweat over low heat until translucent, about 5 minutes. Then add the mustard greens to the pan, turn up the heat to high and stir to fully combine. Remove from the heat and pour into a bowl. Sprinkle in 1 teaspoon kosher salt, the cornmeal, cayenne pepper or red chile flakes, mustard and mayonnaise. Let the mixture cool in the bowl over an ice bath, rotating the bowl until cool, about 5 minutes.
  • To assemble, place 2 teaspoons of the mustard greens mixture onto the widest part of a crescent dough triangle. Place a smoked link on top of the mustard greens. Tuck in the sides of the roll over the smoked link and roll away from you, towards the tip of the dough. Repeat with the remaining dough and links. Brush all the tops with melted butter, sprinkle with mustard seeds and smoked sea salt and bake until golden brown, 12 to 15 minutes, rotating halfway through.
  • For the chive Dijonaise: Whisk the mustard, mayonnaise, horseradish, kosher salt and chives in a medium bowl. Taste and adjust seasoning as needed.
  • Plate the pigs in a blanket and serve with the chive Dijonaise.

2 medium onions, sliced
¾ pound turnip greens, chopped
¾ pound collard greens, chopped
¾ pound mustard greens, chopped
2 (32 ounce) containers chicken broth
½ cup water, or as needed
1 ½ tablespoons white sugar
1 tablespoon salt
1 tablespoon garlic powder

Steps:

  • Saute bacon in a large stockpot over high heat for 5 minutes. Add onions and saute, stirring often, until transparent, about 5 minutes.
  • Add turnip, collard, and mustard greens, then pour in chicken broth. Add water, if needed, to cover. Stir in sugar, salt, and garlic powder. Bring to a boil.
  • Reduce heat and simmer until greens are tender, about 3 hours.

1 1/2 cups short-grain brown rice
1 3/4 teaspoons kosher salt, plus more for sprinkling
1 small celery root, peeled and cut into 1/4-inch pieces
1/4 teaspoon freshly ground black pepper, plus more for sprinkling
1 1/2 tablespoons extra-virgin olive oil
24 mustard green leaves (2 to 3 bunches mustard greens)
8 ounces semihard sheep's-milk cheese, diced (1 1/2 cups)
8 green onions (white and green parts), chopped
1/4 red bell pepper, diced
2 teaspoons chopped fresh rosemary
2 teaspoons chopped fresh thyme
2 tablespoons apple cider vinegar

Steps:

  • Cook the rice according to package instructions with 1/2 teaspoon of the salt. Set aside.
  • Preheat the oven to 400°F.
  • In a medium bowl, combine the celery root, 1/4 teaspoon of the salt, the pepper, and the olive oil. Pour the mixture onto a baking sheet. Roast for 12 to 15 minutes, or until the cubes are golden brown, stirring once.
  • While the celery root is roasting, blanch the mustard greens in a pot of salted boiling water for 2 minutes. Rinse the greens in cold water, drain well, and towel dry. Set aside.
  • In a large bowl, combine the rice, celery root, cheese, green onions, bell pepper, rosemary, thyme, vinegar, and 1 teaspoon salt.
  • To assemble the rolls, lay one leaf flat on a cutting board or other smooth surface. Using a sharp knife, slice the stem at the bottom of the leaf straight up the middle about 1 to 2 inches. (This helps the leaf fold more easily over the stuffing.) Sprinkle a pinch of salt and pepper over each leaf. In the middle of the leaf, place 2 tablespoons of the filling. Using your hands, shape the filling into a 1 1/2 × 1/2-inch log lying alongside the stem of the leaf. Fold the short ends of the leaf over the filling. Fold one long side over the filling and then roll up the other side of the leaf, creating a small cylindrical package. Repeat with the remaining leaves and filling.
  • Serve at room temperature.

  • The stuffed mustard greens taste best the day they are prepared, but you can assemble them 1 day ahead, cover, and refrigerate.

  • Heat oil in a skillet over medium heat. Add onions to the hot oil and saute for 3 minutes. Carefully add mustard greens, garlic, and water; cover immediately and steam until greens are slightly wilted, about 4 minutes.
  • Remove cover and mix greens. Stir in sesame oil and soy sauce. When greens are at desired texture, add sesame seeds and season with salt and pepper.
