PINEAPPLE RUM CAKE

This Pineapple Rum Cake is a family favorite. With pineapple, dark rum, instant pudding mix, and a boxed cake mix, it's easy and tastes better the next day.

15.25 ounces yellow cake mix
3.4 ounces instant vanilla pudding
20 ounces pineapple tidbits (drained well with juice reserved)
1/2 cup reserved pineapple juice
4 eggs
1/2 cup canola oil
1/2 cup dark rum
1/2 cup unsalted butter
1/4 cup reserved pineapple juice
1 cup granulated sugar
1/2 cup dark rum

Steps:

  • Preheat oven to 325°F. and prepare a 10-inch bundt pan by generously spraying it with a floured baking spray. You can also generously butter it and sprinkle with flour.
  • Drain pineapple tidbits in a colander placed over a medium bowl to reserve the juice.
  • In a large bowl, whisk together the cake mix and instant vanilla pudding mix.
  • Place the pineapple into a small bowl and toss with two tablespoons of the cake/pudding mixture. Coat completely.
  • Into the cake mix, add the eggs, 1/2 cup pineapple juice, canola oil, and 1/2 cup of rum. Mix completely.
  • With a rubber spatula, fold in the coated pineapple tidbits.
  • Gently pour batter into pan and bake for 55-60 minutes or until a toothpick or cake tester inserted into the middle comes out clean.
  • Into a medium saucepan over medium heat, combine the butter, sugar and pineapple juice. Bring to a boil and cook for 5 minutes, stirring constantly.
  • Remove from heat and add 1/2 cup of dark rum. Mix well.
  • Remove cake from oven and let sit for 5 minutes.
  • While still in the pan, poke holes with a skewer all the way around the bottom of the cake. Using 1/3 of the glaze, gently brush the bottom of the cake, allowing the glaze to soak into it.
  • Let cake sit for 10 minutes before inverting it onto a cooling rack on top of a rimmed baking sheet.
  • Gently brush the remainder of the glaze all over the cake, pausing at times to give the cake time to absorb it. Using two hard spatulas, slowly and gently transfer the cake to a serving plate. Cool completely.
  • If serving the next day, cover top with toothpicks and gently cover with a tent of aluminum foil when completely cooled.
  • Cake can be frozen for up to a month. Cool completely, wrap in plastic wrap and then in aluminum foil.

3 cans (8 oz each) sliced pineapple, drained, 1 cup juice reserved
12 maraschino cherries
1 box Betty Crocker™ Super Moist™ yellow cake mix
1/2 cup vegetable oil

1/2 cup pineapple rum

Steps:

  • Heat oven to 350°F. In 13x9-inch (3-quart) glass baking dish, melt butter in oven. Sprinkle brown sugar evenly over butter. Arrange pineapple slices in 4 rows by 3 rows. Place 1 cherry in center of each pineapple slice.
  • In large bowl, beat cake mix, reserved 1 cup pineapple juice, the oil and eggs with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally. Pour batter over pineapple slices.
  • Bake 28 to 33 minutes or until golden brown and cake springs back when lightly touched in center. Run knife around edges of baking dish to loosen cake. Cool 5 minutes.
  • Place heatproof serving plate upside down on baking dish; turn plate and dish over. Remove dish. Brush or drizzle rum over cake. Cut into 4 rows by 3 rows, so each serving has a slice of pineapple on top. Serve warm.

1 cup chopped pecans or 1 cup chopped walnuts
1 (520 g) package yellow cake mix (You just use the cake mix as is, do not add other ingredients listed on cake box.)
1 (92 g) package vanilla instant pudding mix
4 eggs
1/2 cup cold water
1/2 cup cooking oil
1/2 cup dark rum or rum
1/2 cup butter
1/4 cup water
1 cup sugar
1/2 cup dark rum or rum

Steps:

  • Sprinkle nuts over bottom of greased 10 inch tube pan or 12 cup bundt pan.
  • Stir together cake mix, pudding mix, eggs, water, oil and rum.
  • Pour batter over nuts.
  • Bake at 325 in oven for 1 hour.
  • Cool 10 minutes in pan.
  • Invert onto serving plate and prick top.
  • Glaze-----------------.
  • Melt butter in saucepan.
  • Stir in water and sugar.
  • Boil 5 minutes, stirring constantly.
  • Remove from heat.
  • Stir in rum.
  • Brush glaze evenly over top and sides of cake.
  • Allow cake to absorb glaze.
  • Repeat until glaze is used up.

  • Position a rack in the middle of the oven and preheat to 350°F.
  • Make the glaze and pineapples:.
  • In a small saucepan over moderate heat, combine the brown sugar and 1 cup rum, and bring to a simmer. Continue simmering, stirring occasionally, until reduced by about 1/3. Whisk in the butter. Add the pineapple slices, gently stirring to coat them in the glaze, then let them sit for about 3 minutes. Transfer the pineapple slices to the bottom of a 9-inch square cake pan, arranging them to cover the bottom. Save the rum glaze for serving.

1 (8 ounce) can sliced pineapple
½ cup buttermilk

½ teaspoon pumpkin pie spice
¼ teaspoon salt
1 cup white sugar
¾ cup packed brown sugar
¾ cup unsalted butter, softened

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt brown sugar, butter, and honey for topping in a small saucepan over medium heat, stirring until smooth.
  • Pour butter mixture into the bottoms of two ungreased 8-inch round cake pans. Drain pineapple slices and reserve 1/4 cup juice for the cake. Layer pineapple slices on top of the butter mixture.

Chef Kris Wessel of Florida Cookery in Miami Beach, Florida, shared this recipe as part of a Palm Tree Christmas menu he created exclusively for Epicurious. At Wessel family Christmases at Grandmother Esther's house in Miami Beach, the main courses were Florida-centric, but the desserts were not. This particular rum cake was often served by one of Wessel's aunts. "I think all the Irish side of our family loved it because it was loaded with rum," he says, joking that they'd often add more to the glaze than the recipe called for. The alcohol will burn off, but you can also omit the rum glaze and just serve with ice cream.

- 1 cup chopped pecans
- 1 duncan hines pineapple upside down cake mix
- 1 jello instant vanilla pudding mix
- 4 eggs
- 1/2 cup milk
- 1/2 cup vegetable oil
- 1 cup bacardi gold rum
- 1 can crushed pineapple
- 1 stick butter, melted
- 1/2 cup packed brown sugar
- 1 cup powdered sugar
- extra pineapple juice, just in case
1 cup(s) sugar

Steps:

  • Preheat oven to 325 degrees F. Grease and flour (or spray) 12-cup Bundt pan. Add the melted butter, nuts, brown sugar, 1/2 of juice from crushed pineapple, and as much of the pineapple as desired (I use about half of the can) to the prepared pan. It will appear to be a lot in the pan, but that's normal. The finished cake will look nice!
  • Combine cake mix, pudding, eggs, milk, oil, 1/2 cup of rum, half can of crushed pineapple and beat for 2 minutes on high with mixer. Pour into prepared pan and bake for 1 hour. (Check at 50 minutes--if toothpick comes out clean--you're done--depends on your oven).
  • Prepare glaze--Add remaining 1/2 of pineapple juice, powered sugar, 1 cup sugar, remaining 1/2 cup rum, and 1/2 stick melted butter to sauce pan and heat on. It's always good to have a little extra pineapple juice to get right flavor. This glaze will be very thin, but will absorb. Any extra that settles around the cake will be fine and will soak into any fruit you use to decorate the outside. You'll know when you taste it.
  • Let cool 5 minutes and invert to serving plate. Let rest 10 minutes. Poke holes using toothpick and drizzle glaze slowly to ensure all is absorbed all over the cake. Garnish with frozen sugared raspberries and mint leaves for a special Holiday look or you can use half pineapple rings to circle around the cake.

1 tsp vanilla extract. Bring milk and sugar to boil in a medium saucepan. Beat the egg yolks in a separate bowl until liquefied. When milk boils, gradually whisk 1/3 of it into the yolks. Return the remaining milk to a boil over a low heat and whisk in the yolk mixture. Cook, whisking constantly, for 1 minute to cool.
