RHODE ISLAND STUFFED QUAHOGS



Rhode Island Stuffed Quahogs image

A traditional RI Style stuffed hard shell clam...served with a lemon wedge and tobasco sauce.

Number Of Ingredients 10

8 quahogs - a large hard shell clam
1 c water
1/2 c white wine, dry
2 bay leaves
4 Tbsp olive oil
4 clove garlic minced
1/2 c onion minced
1/4 c celery minced
3 Tbsp parsley fresh and minced
4 c italian bread, crust removed bread cubed

Steps:

  • 1. In a large pot, add the quahogs, water, wine and bay leaf.
  • 2. Cover the pot and bring to a boil. Let simmer until all quahogs are open. Remove the quahogs and quahog meat, strain the broth well and reserve. Chop the quahog meat and set aside.
  • 3. In a sauté pan, heat the oil. Add the garlic, onion and celery. Sauté for 3 to 4 minutes.
  • 4. Add the herbs. Cook 1 minute.
  • 5. In a large bowl, place the diced bread . Add the vegetable mixture. Lightly moisten with quahog broth. Adjust the seasoning.
  • 6. Split the quahogs in half. Divide the stuffing equally stuff into each shell half.
  • 7. Bake in a 350 degree oven until hot. Serve with plenty of hot sauce and lemon wedge

STUFFIES (STUFFED CLAM) A NEW ENGLAND FAVORITE

This is a recipe for ONE. You may double it but be sure to read the *note. We New England natives hate sand in our creations!

1 large quahog (clam), cooked and diced or use canned diced clams 1/4 cup
1 tsp dill, fresh or dried (fresh is always best)
1/2 tsp celery seeds
2 Tbsp lemon juice
4 Tbsp fresh chives, chopped finely
1 Tbsp parsley, dry
1/4 tsp ground pepper
2 c water, in a large dutch oven
1/2 c cooking sherry
2-3 c small diced stuffing (i use stove top plain stuffing) start with 2 cups add more if needed
1/4 c linguica or chorizo sausage (optional) dice finely
smoked paprika (i like smoked)
1 Tbsp blue crab's clam dip spice (optional)

Steps:

  • 1. **Note: I had a mix that was called "Clam Dip Spices" from Blue Crab, which I added instead of the oregano. I've listed oregano to use as a substitute.
  • 2. Start with a broth: BE AWARE THIS SERVES ONE PERSON as a meal. Two sides for one. Double recipe but be sure to watch for sand inside those clams! Since I wanted to use a "fishy" type broth and didn't have one I created my own. I took the whole uncooked clam and scrubbed the outside, under cold water, really well to remove sand. I then put two cups of water in a large Dutch oven (I am doing this to allow the clam to pop and NOT let the sand IN the clam get into the broth. The clam should be able to pop freely and not be completely covered by the broth) To the water add dill, celery seed, lemon juice, chives, parsley, oregano (or BLUE CRAB'S Clam Dip Spice), pepper, and cooking sherry into a pan. I placed the CLEANED clam into the pot and simmered until the clam "popped". You can hear it! Remove clam CAREFULLY as there will be sand in the popped clam. Remove broth mixture from heat.
  • 3. Rub-a-dub: I was surprised at how much sand was still in the shell, so I carefully removed it and proceeded to remove the clam and rinse under water. Take cleaned clam and dice and put in hot water mixture. Reserve Shell for baking.
  • 4. Stuffing Mixture: I took the pan of broth and clam and added stuffing mix. I tossed well and made sure the stuffing was wet enough to shape. It should be quite wet, but not runny. If you add too much water you can always add stuffing. This is the point where I would add any sausage. I like to use the small cubes of Stove Top, so I can get a more uniformed stuffing.
  • 5. Stuff those Puppies!: I then rinsed off the shells, piled the stuffing on and mounded. I then used a nice SMOKED paprika on top. There are spicy smoked paprika's (which I used). There is quite a bit of difference between plain and smoked paprika. Any extra stuffing you can always roll into balls on the baking sheet.
  • 6. Bake and Eat: I put the stuffed shells on a pizza pan, the extra mounded on side. I baked at 350 until it was a bit brown but not overly so. All the ingredients are already cooked so there is no need for a long baking time. I say about 20 minutes should do it. If you do add the sausage, add some time for the sausage to cook a bit, about 8-10 minutes. DO NOT overcook. EAT AND ENJOY!
  • 7. Presentation: This serves ONE person well for a meal. I would add a veggie or a salad. For the appetizer, one side of the clam should be sufficient for each person. Clip a fresh dill to go along side and always have extra lemon on hand.

Classic stuffed quahog recipes used stale bread and lots of seasoning. But my grandmother would have appreciated the pre-seasoned stuffing adaptation in this modernized version.

1 (16 ounce) package Portuguese chourico sausage links
12 quahogs
1 large onion, coarsely chopped
1 (12 ounce) package chicken-flavored bread stuffing mix (such as Kraft® Stove Top®)
½ cup margarine
¼ cup butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring water to a boil over high heat. Add sausage links; reduce heat to medium and simmer for 10 minutes. Remove links from broth; reserve the broth. Remove casings from the sausage.
  • Bring the broth back to a simmer and add the quahogs; cook until they open, 5 to 10 minutes. Remove the quahogs; reserve the broth. Remove the cooked quahogs from the shells. Separate the shell halves. If necessary wash the shells.
  • Place the sausage and quahog meat into the bowl of a food processor; process until chopped, about 12 seconds, depending on your processor. Scrape mixture into a bowl. Add chopped onion to the processor; chop about 5 seconds. Stir in to the meat mixture.
  • Make the full container of stuffing according to package directions, using the margarine, and substituting the sausage/clam broth for water. There may be more broth than you need.
  • Mix together the stuffing and sausage/clam/onion mixture. Spoon filling into empty clam shell halves and top each with a small pat of butter (about a third of a teaspoon).
  • Place the shells on a baking pan; bake in the preheated oven until toasty brown on top, 15 to 20 minutes.

6 large quahog clams
1 tablespoon vegetable oil
2 tablespoons butter
1/4 cup chopped chourico (spicy Portuguese sausage), or chorizo
1/3 cup diced onion
1/3 cup diced green pepper
1/4 cup lemon juice
1 tablespoon Portuguese hot sauce (recommended: Gonzolves)
1/2 loaf Portuguese masa (sweet bread), cubed
2 tablespoons chopped fresh cilantro leaves
1 tablespoon chopped fresh parsley leaves
1 tablespoon masa de pimenta (red pepper paste)
1 1/2 cups white bread crumbs

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat a medium pot over high heat and bring 1 to 2 inches of water to a boil. Add the quahogs and cover the pan. Steam them until they open, at least 6 minutes. Discard any quahogs that do not open. Strain broth and reserve 1/4 cup. Remove the quahogs from the shells (leaving the shells intact; do not snap apart) and chop the meat.
  • In a large skillet, heat the oil and butter over medium-high heat. Add the chourico, onions, and green pepper and cook until the vegetables soften, about 5 to 7 minutes. Add the chopped clam meat, lemon juice, and hot sauce and cook for 2 to 3 minutes more.
  • In a large mixing bowl, pour the chourico mixture over the cubed bread and add the cilantro, parsley, red pepper paste, bread crumbs and clam broth. Mix gently, and then stuff the each clam shell with about 3/4 cup of clam stuffing. Wrap the clam shells in aluminum foil and bake until heated through, about 15 minutes. Serve immediately.

SPICY STUFFIES (STUFFED QUAHOGS)



Spicy Stuffies (Stuffed Quahogs) image

10 large live quahogs
4 ounces butter
6 ounces ground or diced chourico (Portuguese smoked sausage)
4 ounces diced white onion
3 1/4 ounces hot pepper relish
12 ounces plain croutons
1 ounce chopped fresh parsley
2 to 6 ounces plain breadcrumbs

Steps:

  • Preheat the oven to 400 degrees F.
  • In a medium pot, bring 4 cups water to a boil over high heat. Place the quahogs in the pot and let them steam until they open, 5 to 6 minutes. Remove the quahogs and strain the water from the pot (which is now quahog broth) and reserve it for later use. Then remove the meats from the shells and, when cool, chop into chunky 1/4-inch pieces or use a food processor. (Don't over process, the meats should be chunky.) The shells can be set aside for later use. Make sure to remove any muscles left on the shells and discard any broken shells.
  • In a large skillet over medium-high heat, add the butter, chourico, onions and pepper relish and cook until the onions become translucent. Add the chopped quahog meat and cook for 3 to 4 minutes longer.
  • In a large mixing bowl, add the quahog broth to the croutons and fold together. When the croutons have absorbed the broth, add the hot ingredients to the bowl. Incorporate all of the ingredients, and adding enough plain breadcrumbs until the mixture is stiff. Divide the mixture into 10 even balls, about 5 ounces each or 3 inches in diameter, and place firmly into the shells. Place the shells on a sheet pan into the oven until the outside of the stuffie is toasted brown, 5 to 10 minutes. The stuffies are now ready to be served.

SHUCKERS' STUFFED QUAHOG



Shuckers' Stuffed Quahog image

12 quahogs
1 stick butter, plus melted butter for serving
2 large onions, diced
1 cup jarred hot peppers with juice
3 tablespoons Sriracha
16 cups coarse breadcrumbs

Steps:

  • Wash the quahogs to remove any grit. Heat a large pot over high heat, then add in the quahogs with 2 cups water; cover the pot and steam the quahogs for 5 minutes. Check to see if all of the quahogs are open, and continue to steam until they are all open. Remove from the heat and strain the quahogs, reserving the cooking liquid. Cool the quahogs and shuck the clams from the shells. Reserve the shells for a later use.
  • In a meat grinder or food processor, grind the shucked clams and reserve.
  • Either split the shells or gently twist at the hinge to remove the cartilage. Rinse the shells and reserve.
  • In a 2-quart saucepan set over medium-high heat, melt the butter, and then add the onions. Saute until translucent, then remove the pan from the heat.
  • In a large mixing bowl add the cooked onions and butter, the ground clams, hot peppers and Sriracha. Add the reserved clam broth and mix well. Add the breadcrumbs until the stuffing is firm but wet.
  • Stuff the quahog shells with the filling. At this point cook immediately or refrigerate and cook the stuffed quahogs when ready to serve.
  • Preheat the oven to 375 degrees F.
  • Cook the quahogs until golden brown on top and cooked through, 15 minutes. Serve with melted butter.

HILDA'S STUFFIES (STUFFED QUAHOGS)

8 quahog or chowder clams
6 tablespoons butter, at room temperature
2 tablespoons minced garlic
Kosher salt and freshly ground black pepper
8 ounces chopped chorizo sausage
1/2 cup minced onions
1/4 cup minced celery
1/4 cup minced green peppers
Emeril's Essence, for seasoning, recipe follows
1 cup dried fine bread crumbs
3 tablespoons chopped fresh parsley
1/4 cup reserved steaming liquid
1/2 cup grated Parmigiano-Reggiano
Chopped parsley, for garnish
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Steps:

  • Preheat the oven to 400 degrees F, and bring a pot of salted water to a boil.
  • Add the clams to the boiling water, cover, and cook for about 6 to 8 minutes or until the shells open. Discard any shells that do not open. Remove the clams from the pot and place on a parchment-lined sheet pan. When the clams are cool enough to handle, gently pry the shells apart enough to remove the clam, leaving the hinge attached. Loosen the muscle in the lower shell and remove the clam from the shell. Save the 6 nicest shells and place the shells on a parchment-lined baking sheet and set aside. Finely chop the clam meat and set aside.
  • In a mixing bowl, stir the butter and 1 tablespoon of the garlic together. Season the butter with salt and pepper. Spoon the butter onto a piece of plastic wrap. Form the butter into a 1-inch log, cover tightly, and place in the refrigerator. Refrigerate for 1 hour.
  • Heat a saute pan over medium-high heat. Add the chorizo and cook until rendered, about 2 minutes. Add the onions, celery and peppers. Season lightly with Essence. Cook for 2 more minutes. Stir in the remaining garlic, the breadcrumbs, and reserved clam meat and remove from the heat. Stir in the reserved cooking liquid and 2 tablespoons of the parsley. Season with Essence and cool slightly.
  • Pack the stuffing mixture into one side of each shell. Slice the compound butter into 6 equal slices. Place a slice of the butter on top of each stuffing mixture. Using your hands, pat the stuffing firmly into each clam shell. Top each evenly with the cheese and the remaining parsley. Close the shells as tightly as possible and wrap with aluminum foil or tie the shell tightly with butchers twine.
  • Bake for 15 to 20 minutes. Unwrap the clams and place on a serving platter. Garnish with additional parsley and Essence and serve hot.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

BAKED STUFFED QUAHOGS OR CLAMS (RHODE ISLAND STYLE)



Baked Stuffed Quahogs or Clams (Rhode Island Style) image

Quahogs as we call them in RI are actually large chowder clams. These are delicious but take a little time to prepare. You can make these ahead and freeze them until you are ready to bake and eat. I'm Italian and this is a favorite for our Christmas Eve fish dinner - but we also enjoy them during the summer! YUM!

12 large quahogs or 12 large clams, in their shells
1 (16 ounce) bag herb seasoned stuffing mix, Pepperidge Farm
2 stalks celery, diced
1 medium onion, diced
1/2 cup butter
1/2 cup white wine
1 -2 tablespoon Old Bay Seasoning
3 -4 cups clam juice, includes reserved from clams

Steps:

  • Preheat oven 350 degrees.
  • Shuck quahogs/clams. Chop quahog meat into bite size chunks and set aside. Save shells and juice. You should have 24 shells for 24 "stuffies". Scrub the shells clean before stuffing.
  • Melt 1/2 stick of butter and saute celery and onion on medium low heat for about 5 minutes. Add white wine, remaining butter and clam juice and continue to simmer for another 5 minutes to reduce liquid just a bit and butter is melted. Add chopped quahogs and remove from heat. Strain and separate liquid from solids - do not toss anything!
  • In a large bowl add stuffing, pour liquid on stuffing. If stuffing is dry add more of the clam juice. Stuffing should have a sloppy soupy consistency.
  • Add clam and veggie mixture to stuffing. Remember stuffing must be soupy because when it cooks the liquid will dry up.
  • Add 1 T Old Bay at a time, mix and taste - if you need more flavor add a little more. Be careful - Old Bay is salty.
  • Place shells on a large pizza/cookie sheet. Spray each with a little oil spray to prevent stuffing from sticking.
  • Scoop a large amount of stuffing in each of the quahogs - you may be able to use all 24 shells.
  • A few things to remember - do not over cook quahogs in pan w/veggies, stuffing must be soupy - if it's dry add a little more clam juice, be careful with the Old Bay. This a an easy recipe, but it took me a couple of times before I perfected it.
  • I put 35-40 minutes for cooking - but when the stuffing is set and the top is crunchy and brown - they are done!
  • Enjoy!

  • Rinse the clams of any grit then steam clams in around 1in/23cm boiling water until they open up, around 8-10min. Remove them from the water (save some of it), allow the clams to cool then take them off the shell - if a bit gets stuck don't worry about it, that's the 'foot' that's not as tender to eat. Dice up the clam meat relatively small. Split the shells open and keep 8 of the best for stuffing. NB if clams don't open on steaming, don't use them, this means they were already dead.
  • Warm the butter in a skillet/frying pan and soften the onion in the butter for a minute or two. Then add the garlic and pepper and cook another minute before adding the breadcrumbs.
