New Year's Day Good Luck Dish image

We live in Texas,and eating black eyed peas are to bring luck in the New Year when eaten on New Years Day. Can't say how lucky we've been because we've eaten it, but it sure is a family favorite!

16 oz pork sausage
1 clove garlic , pressed
1 onion, chopped
2 can(s) black eyed peas, 14 oz each
1 can(s) stewed tomatoes
1/4 c rotel
1 tsp chili powder
1/4 tsp black pepper
salt to taste

Steps:

  • 1. Brown sausage in a skillet over medium heat, cook until done, drain well. Stir in onion and garlic saute' 3-5 minutes. Stir in remaining ingredients and simmer for an hour, stirring occasionally.
  • 2. Great with Cornbread!
