JULE KAKE NORWEGIAN CHRISTMAS BREAD

5 cups bread flour, plus additional for dusting
1/2 cup granulated sugar
2 tablespoons ground cardamom
1 teaspoon salt
1 1/4 cups whole milk
1/4 pound (1 stick) salted butter, diced
2 ounces fresh yeast
3 large eggs
2 cups raisins
1 1/2 cups candied citron or other candied fruit

Steps:

  • Fit a stand mixer with the paddle attachment. Combine the flour, sugar, cardamom and salt in the mixer bowl. Combine the milk, butter, yeast and 2 eggs in another bowl, then incorporate into the dry ingredients with the mixer at low speed, 2 minutes. Increase the speed to medium and beat until the dough is sticky but will not stick to your hand, about 12 minutes.
  • Add raisins and citron on slow speed to incorporate, about 1 minute (do not overmix).
  • Let the dough relax in the mixing bowl, covered, for 10 minutes.
  • Mix to knock down, then remove to a flour-dusted table.
  • Divide into four pieces and let rest, covered, 1 1/2 hours.
  • Preheat the oven to 375 degrees F.
  • Form dough into desired shapes, such as round loaves. Beat remaining egg and paint dough with egg wash. Transfer dough to a pan. Let rise again, covered, until doubled, 1 to 2 hours. Paint again with egg wash. Bake until the loaves are deeply brown and sound hollow when tapped, 25 to 30 minutes. Let fully cool.

2 cups scalded milk
1/2 cup margarine
2/3 cup sugar
2 tsp salt
3 tsp ground cardamom
2 cakes yeast
1/4 cup lukewarm water
2 beaten eggs
4 cups flour
1 cup light raisins
1 cup dark raisins
2 8-oz packages S&W candied mixed fruit (also called glace cake mix)
4 cups additional flour

Steps:

  • Pour hot water over the raisins and let them sit to soften. Combine scalded milk, margarine, sugar, salt and cardamom. Cool to lukewarm if milk is still hot from scalding. Soften the yeast in the 1/4 cup lukewarm water, and add to milk mixture. Add eggs and mix well. Add 4 cups flour and beat well. Let rise in a warm place for about 1 hour, until bubbly. Add mixed fruit, raisins and the rest of the flour and knead on a lightly floured work surface. Brush the top of the dough with melted butter and let rise in a warm place until doubled in bulk. Divide into 3 parts, and make 3 round loaves or put into three bread pans. Let rise again until doubled. Bake 45 minutes to 1 hour at 350 degrees. Brush tops with melted butter while hot. To store, wrap in foil and store at room temperature. Will keep for one week.

Bløtkake is a celebratory Norwegian layer cake that's decorated with whipped cream and fresh berries. I first had it at a Syttende Mai (Norwegian Constitution Day) party and have also had it at my husband's family's Christmas parties. This recipe is based on his family's recipe and was transcribed from a scribbley old notecard.

5 large eggs
2 cups (400 grams) sugar
1/2 cup (120 grams) water, at room temperature
2 1/2 cups (325 grams) all-purpose flour
2 heaping teaspoons baking powder
1 teaspoon kosher salt
Whipped Cream (see recipe below)
Sugared Cranberries, for decorating (see recipe below)
Rosemary sprigs, for decorating
3 cups (720 grams) cold heavy cream
1/4 cup powdered sugar
1/2 teaspoon vanilla extract
2 1/2 cups fresh (or frozen and thawed) cranberries
1/4 cup granulated sugar

Steps:

  • Set an oven rack in the middle position. Preheat the oven to 325 degrees F.
  • Grease a 9-inch springform pan and line the bottom with parchment paper.
  • To make the cake: In the bowl of a stand mixer fitted with whisk attachment, beat together the eggs and sugar until pale and fluffy, 3 to 4 minutes. Using a rubber spatula, scrape down the sides and bottom of the bowl, if needed. Beat in the water. Remove the bowl from the mixer. Gradually sift in the flour and baking powder and fold together with a rubber spatula until just combined. Transfer to the cake pan and bake until the center springs back when you poke it; 1 hour to1 hour and15 minutes. Cool in the pan.
  • To assemble the cake: Once the cake is cooled, slice in half crosswise. Place the bottom of the cake cut-side up on a cake round or directly onto a cake stand or serving platter. Spread whipped cream on top and dot with a layer of sugared cranberries. Place the remaining half of the cake on top, cut-side down. Spread the whipped cream on the top and sides of the cake to cover. Decorate the top of the cake with remaining cranberries and a few sprigs of rosemary.
  • In a large mixing bowl with a hand-mixer, or in the bowl of stand mixer fitted with the whisk attachment, beat the heavy cream, sugar, and vanilla to medium-stiff peaks.
  • Just before assembling the cake, combine cranberries and sugar in a bowl and toss to coat.

It is a traditional sweet finish for any festive meal, whether a long, dark winter lunch or a long, sunlit summer dinner. "Scandinavians really value lingering and feasting at the table," said Maren Waxenberg, a Norwegian-American cook who lives in New York City and serves this cake at Thanksgiving. Cloudberries are a protected crop in Norway and are rarely available fresh in the United States, but raspberries are a good substitute.

4 large eggs
1 cup/200 grams granulated sugar
1 teaspoon vanilla sugar or 1 teaspoon vanilla extract
1 cup/120 grams cake flour
1 teaspoon baking powder
3 cups/720 milliliters whipping cream
1 teaspoon vanilla extract
2 tablespoons confectioners' sugar
3 tablespoons cloudberry, raspberry or blackberry preserves
1/3 cup cloudberry or raspberry liqueur (such as Chambord), or berry juice of your choice
12 ounces/340 grams fresh raspberries or blackberries, for decorating (optional)

Steps:

  • Bake the cake: Heat oven to 350 degrees and mist a 9-inch springform pan with cooking spray. Combine eggs, sugar and vanilla in a large bowl and beat with an electric mixer (or the whisk attachment of a stand mixer) until light and fluffy, 3 to 4 minutes.
  • Sift cake flour and baking powder into a separate bowl, then fold into the egg mixture in 2 additions.
  • Pour batter into pan and bake on the middle rack of the oven for 25 to 30 minutes, or until a cake tester inserted into the middle comes out clean. Let cool completely before removing from pan.
  • Make the frosting and filling: Beat whipping cream, vanilla and confectioners' sugar with an electric mixer until stiff peaks form. Transfer 1/3 of the whipped cream to a separate bowl and stir in preserves.
  • Use a serrated knife to slice cake horizontally into 3 equal layers. Arrange top layer of the cake cut-side-up on a platter. Poke a few holes in the cake layer with a toothpick, then sprinkle with 1/3 of the liqueur or juice.
  • Spread half the whipped cream and preserves mixture over the cake layer, then arrange middle layer on top. Poke holes in the middle layer with a toothpick and sprinkle with another 1/3 of the liqueur or juice. Top with remaining whipped cream and preserves mixture.
  • Arrange the bottom cake layer on top of the stack, cut-side-down. Poke more holes and sprinkle with remaining liqueur or juice. Frost top and sides of cake with the whipped cream, using a pastry bag to pipe on stars or other designs, if you'd like. Decorate with fresh berries.

This is basically a wonderfully light and eggy sponge cake that absorbs the juices of fresh strawberries and the rather thin custard in its filling. Literally translated the name means "wet cake." Although it is called "Norwegian,: it is popular throughout Scandinavia with custard, jam, and berries. Whipped cream is pile on top in a cloudlike drift. Scandinavian cooks sink a few beautiful fresh strawberries into the topping for a final garnish.

3/4 cup cake flour (not self rising flour)
1 teaspoon baking powder
6 eggs, separated (at room temperature)
1 cup sugar
3 egg yolks
2 tablespoons butter
2 tablespoons cornstarch
1 1/2 cups half-and-half cream (half milk, half cream)
1/4 cup sugar
2 teaspoons vanilla extract
1/2 cup strawberry jam or 1/2 cup apricot jam, warmed and strained
1 pint fresh strawberries
1 1/2 cups whipping cream
2 tablespoons powdered sugar (sometimes called icing sugar or confectioners')
1 teaspoon vanilla

Steps:

  • FOR THE CAKE; Blend flour with baking powder; set aside.
  • In large bowl, whip egg whites until fluffy; gradually add sugar, and beat until stiff and meringuelike.
  • In small bowl, beat egg yolks until frothy. Fold egg yolks and flour mixture into the egg whites gently.
  • Butter two 9 inch round cake pans and dust with flour. Divide batter between the pans.
  • Preheat oven to 350°F Bake layers 30 minutes or until centers spring back when touched with finger. Cool in pans. (Centers of cakes may sink slightly.).
  • To prepare the custard filling, in small saucepan, mix egg yolks, butter, cornstarch, half and half cream, and sugar. Cook, stirring, over medium heat until mixture is smooth and thick. Remove from heat, cover, and cool. Stir in vanilla.
  • To assemble the cake, cut layers horizontally into 2 layers each. Place bottom layer on cake plate and spread with half of the custard. Top with next layer. Spread with the strawberry or apricot jam. Reserve a few of the nicest strawberries for garnish on top of the cake. Slice the rest of the strawberries and place on top of jam layer. Top with a third layer of cake. Spread with remaining custard. Top with remaining layer of cake.
  • No more than 1 hour before serving, whip cream and flavor with the powdered sugar and vanilla. Pile whipped cream on top of the cake and garnish with the reserved strawberries.

1 cup warm water (110° to 115°)
1/2 cup sugar
1 egg
1/4 cup butter, softened

3-3/4 to 4 cups all-purpose flour
1/2 cup raisins
1/2 cup diced citron or mixed candied fruit

Steps:

  • In a bowl, dissolve yeast in warm water. Add sugar, egg, butter, salt, cardamom and 2 cups flour; mix well. Stir in raisins, citron and enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to greased top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down; divide in half. Shape each portion into a flattened ball.
