GRILLED HASSLEBACK SWEET POTATOES WITH MOLASSES-NUTMEG BUTTER



Grilled Hassleback Sweet Potatoes with Molasses-Nutmeg Butter image

Number Of Ingredients 10

4 large sweet potatoes, scrubbed
Kosher salt
1 1/2 sticks unsalted butter, at room temperature
3 heaping tablespoons molasses
1 tablespoon finely chopped fresh cilantro
1 teaspoon finely grated orange zest
1/8 teaspoon freshly grated nutmeg
Freshly ground black pepper
Canola oil, for brushing
1/2 cup dark rum

Steps:

  • Put the potatoes in a large pot, cover with cold water, add 1 tablespoon kosher salt, bring to a boil and cook until a paring knife inserted into the center of the potatoes meets with some resistance. (Do not cook through.) Drain and let cool slightly.
  • Mix together the butter, molasses, cilantro, orange zest and nutmeg and season with salt and pepper. Cover and refrigerate until ready to use
  • Heat a charcoal or gas grill to medium high for indirect grilling.
  • Cut off a thin slice of each potato lengthwise to create an even base for the potato to rest on. Slice off the ends of each potato. Rest each potato between two chopsticks or wooden spoons placed lengthwise along the potato (to act as a stop for the knife) and carefully cut vertical slits about every 1/8 inch.
  • Brush the potatoes with the canola oil and season with salt and pepper. Place the potatoes on the cooler side of the grill, cover and cook until lightly golden and cooked through, 12 to 15 minutes.
  • Place the potatoes on a platter and immediately smear the tops with the butter mixture, making sure it melts into the cuts. Heat the rum in a small saucepan, flambe and pour over the potatoes. Serve immediately.

4 pounds flat-leaf spinach (about 8 bunches), coarse stems discarded
5 tablespoons unsalted butter
1 1/2 teaspoons grated nutmeg

Steps:

  • Bring 1 cup water to a boil in a wide large pot over high heat, then cook spinach, tossing with tongs, until completely wilted, about 5 minutes. Drain in a colander, pressing with back of a spoon to extract as much liquid as possible.
  • Heat butter in same pot over medium heat until foam subsides, then stir in nutmeg, 1/2 teaspoon salt, 1/4 teaspoon pepper, and spinach. Cook, tossing with tongs, until just heated through.

Hot buttered bourbon is usually made with plain water, and sweetened, but this recipe uses cider instead. From the book, "Drinks to Warm Body & Soul", this drink can also be made with rum or brandy instead of bourbon. Time does not include time used to make Nutmeg Butter.

1 1/2 cups apple cider or 1 1/2 cups water, plus
2 tablespoons brown sugar
2 cinnamon sticks
1 teaspoon allspice berry
1/2 teaspoon whole cloves
1/4 teaspoon ground ginger
3/4 cup Bourbon
8 tablespoons salted butter, at room temperature
1/4 teaspoon freshly grated nutmeg
1/2 teaspoon confectioners' sugar (icing sugar)

Steps:

  • In a small saucepan, combine the cider, cinnamon, allspice, cloves, and ginger and place over low heat.
  • Cook at a simmer for 5 minutes.
  • Stir in the bourbon and bring back to a simmer; immediately remove from the heat.
  • Pour into 2 warmed mugs and top each with a slice of Nutmeg Butter.
  • NUTMEG BUTTER (makes about 16 servings):.
  • Put all ingredients in a small bowl and stir with a rubber spatula to combine.
  • Place the butter mixture on a sheet of wax paper or plastic wrap and shape into a log about the size of the original stick of butter.
  • Chill in the freezer for about 30 minutes, until firm but not frozen hard.
  • Slice into 1/4-inch rounds (about 1/2 teaspoon) to use in buttered drinks.
  • The butter will keep, frozen and tightly wrapped for at least a month; let stand at room temperature for 30 minutes before slicing it. It will keep in the refrigerator for about 2 weeks.

Unsalted butter, for baking sheet
1 cup sugar
1/2 cup vegetable shortening
2 large eggs
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 cup buttermilk

Steps:

  • Preheat oven to 350 degrees. Butter a baking sheet and set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat together sugar and shortening until well combined. Add eggs, mixing until incorporated.
  • In a large bowl, sift together flour, baking soda, nutmeg, and salt. With the mixer running, add flour, alternating with buttermilk and beginning and ending with flour; mix until well combined.
  • Using a tablespoon, drop dough onto prepared baking sheet and transfer to oven. Bake until edges are slightly brown, about 15 minutes.

1/2 cup butter, softened
3/4 cup sugar
1 egg
2 cups all-purpose flour
1-1/4 teaspoons ground nutmeg
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup buttermilk

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg. Combine the flour, nutmeg, baking powder and baking soda; add to creamed mixture alternately with buttermilk. Pour into a 9x5-in. loaf pan that has been coated with cooking spray. , Bake at 350° for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool completely.
