These are very delicate and the best I have had. My ex was a fanatic when it came to onion rings, and thought this recipe to be the best he ever had. Have also made other veggies in this batter. Can be refrigerated or frozen, then reheated in oven or microwave. Carbonated water can be substituted for beer in this recipe.

1 quart vegetable oil for frying
1 cup all-purpose flour
1 cup beer
1 pinch salt
1 pinch ground black pepper
4 onions, peeled and sliced into rings

Steps:

  • In a large, deep skillet, heat oil to 365 degrees F (180 degrees C).
  • In a medium bowl, combine flour, beer, salt, and pepper. Mix until smooth. Dredge onion slices in the batter, until evenly coated. Deep fry in the hot oil until golden brown. Drain on paper towels.

1 1/4 cups flour
1 teaspoon baking powder
1 teaspoon salt
1 egg
1 cup milk, as needed
3/4 cup breadcrumbs, dry
seasoning salt
oil, for frying approx 1 qt

Steps:

  • Heat the oil in a deep-fryer to 365 degrees F.
  • Separate the onion slices into rings, and set aside.
  • In a small bowl, stir together the flour, baking powder and salt.
  • Dip the onion slices into the flour mixture until they are all coated; set aside.
  • Whisk the egg and milk into the flour mixture using a fork.
  • Dip the floured fings into the batter to coat, then place on a wire rack to drain until the batter stops dripping.
  • The wire rack may be placed over a sheet of aluminum foil for easier clean up.
  • Spread the bread crumbs out on a plate or shallow dish.
  • Place rings one at a time into the crumbs, and scoop the crumbs up over the rings to coat.
  • The coating should cling very well. Repeat with remaining rings.
  • Deep fry the rings a few at time for 2 to 3 minutes, or until golden brown.
  • Remove to paper towels to drain. Seasoning with season salt, and serve.

2 cups all-purpose flour
2 teaspoons smoked paprika
4 teaspoons kosher salt
2 cups buttermilk
4 eggs
3 cups panko breadcrumbs
4 tablespoons olive oil
2 large yellow sweet onions, such as Maui, sliced 1/4-to-1/2-inch thick

Steps:

  • Preheat the oven to 450 degrees F. Place parchment paper onto 2 baking sheets and set aside.
  • In a small bowl, combine the flour, paprika and 2 teaspoons salt. In another bowl or shallow dish, whisk together the buttermilk and eggs. Add half of the flour mixture to the buttermilk and beat until smooth and thickened.
  • In a separate bowl, combine the panko, olive oil and remaining 2 teaspoons salt.
  • Lightly dredge the onion rings in the flour mixture and then drop into the buttermilk. Drain the excess batter and then dredge in the panko mixture.
  • Arrange on the prepared baking sheets in a single layer. You can place smaller rings inside bigger rings if necessary, just make sure there is space between them. Then place in the oven. Cook until golden brown, 14 to 20 minutes. Halfway through the cooking time, flip over each onion ring to ensure even crisping and browning.

This recipe was sent via email from All-recipes with a video showing onion rings that not only fry up crispy but STAY that way. The reason he reported is in the secret ingredient, instant mashed potatoes in the batter and panko crumbs. As an update: Made these and while the taste is good and they certainly stayed crispy, for some reason I had trouble getting the coating to stick when cooking. I think maybe I didn't have the oil hot enough when I started, or maybe I needed a 2nd breading?? Not really sure, but if anyone has an idea please let me know.

  • Heat the oil in a large heavy skillet over medium-high heat, or deep-fryer to 375 degrees F (190 degrees C).
  • Place the flour in a shallow baking pan, and stir in 1 teaspoon of salt and 1 teaspoon of pepper. In a medium bowl, whisk together the egg whites, milk, vinegar, and remaining salt and pepper until frothy.

2 cups buttermilk
1/4 teaspoon hot sauce
1 egg, beaten
1 cup all-purpose flour
1 cup cornmeal

  • Preheat vegetable oil in a deep-fryer to 375 degrees F.
  • Slice the onions into 3/4-inch rings and separate. Add the buttermilk, hot sauce, and egg to a large casserole dish and whisk to combine. Stir in the onion slices and allow to soak for 3 to 5 minutes. Put the flour and cornmeal in a large brown paper bag and season with the season salt and cayenne. Add the onion rings, to the paper bag in batches, and shake until they are covered with the flour mixture. Make sure to get rid of the excess buttermilk before adding to the bag.

Steps:

  • Heat the oil. Add the oil to a heavy-bottomed Dutch oven or deep skilllet and heat to 350°F. Preheat oven to 200° to keep onion rings warm.
  • Make the batter and breading. Add the eggs and evaporated milk to a medium bowl and mix well. Add the flour to another medium bowl and season well with salt and pepper.
