1 (1 lb) can pickled beet, sliced and diced small drain and reserve liquid
2 pickled herring, pieces 6 oz jars wine-flavored drained and diced small
1 green apple, cored and diced small (unpeeled)
1/2 lb new potato, cooked and diced small (unpeeled)
1/2 cup finely diced cooked beef or 1/2 cup veal
2 tablespoons yellow onions, peeled and diced small
1/3 cup finely chopped dill pickle
6 tablespoons reserved beet liquid
2 tablespoons distilled white vinegar
1 -2 tablespoon sugar
1 pinch fresh ground black pepper
salt
1/2 cup heavy cream
2 hard-boiled egg yolks, chopped or grated

Steps:

  • Mix all of the ingredients for the salad in a salad bowl. Blend all of the dressing ingredients except the whipping cream. Stir the dressing into the salt. Whip the cream and gently fold into the salad. Garnish with the chopped or grated egg yolk.

6 or 8 herring fillets pickled in dill sauce, diced
1/4 cup vinegar
1/2 teaspoon white pepper
1 to 2 tablespoons sugar
1 cup cooked beef, veal, lamb or pork, diced
1 cup cooked beets, diced
1 cup cooked potatoes, diced
2 sweet gherkins, diced
2 peeled, cored apples, diced
1 cup unsweetened, lightly salted whipped cream or 1 cup mayonnaise delicately colored with beet juice
2 or 3 hard-cooked eggs, sliced
6 or more cherry tomatoes, halved
Parsley for garnish

Steps:

  • Mix first nine ingredients thoroughly, pack into 6-cup fishshaped mold (or other suitable mold) that has been rinsed with cold water and refrigerate.
  • Unmold salad onto platter, cover completely with whipped cream or mayonnaise and decorate with sliced eggs, tomatoes and parsley.

This is an easy way of achieving my mom's yummy Herring Salad. She still serves this for breaking the fast after Yom Kippur even though she is 94 and would kill me if she knew I posted it on the internet. Cook time is refrigerator time.

1 (12 ounce) jar herring in wine sauce
1 medium bermuda onion, thinly sliced
1 large granny smith apple, peeled,cored and coarsely chopped
1 medium dill pickle, chopped
1 cup sour cream
1/2 teaspoon sugar
1/8 cup distilled white vinegar
1 sprig fresh dill or 1 sprig parsley (to garnish)

Steps:

  • Remove herring from jar.
  • Drain and reserve sauce.
  • Scrape off any black areas, skin and or membrane from each piece and cut into small pieces.
  • In a medium bowl, combine herring, onion, apple, pickle, sour cream, sugar and vinegar.
  • Add remaining sauce and stir to coat all ingredients.
  • Cover.
  • Refrigerate for at least 24 hours.
  • Garnish with dill or parsley sprig.
  • Serve with a good pumpernickel or rye bread and steamed potatoes.
