0.25 tsp(s) Black pepper
1 tsp(s) Olive oil
2 oz Shredded fat free mozzarella cheese (1/3 cup)
1 tbsp(s) Fresh basil thinly sliced

Steps:

  • Pat roasted pepper dry with paper towels. Beat eggs, egg whites, milk, salt, and black pepper in medium bowl until frothy.
  • Heat oil in medium nonstick skillet over medium heat. Pour in egg mixture. Cover and cook until almost set, about 2 minutes.
  • Sprinkle mozzarella, roasted peppers, and basil evenly over half of omelette. With spatula, fold other half of omelet over filling and continue to cook until filling is heated through and eggs are set, about 1 minute longer.
  • Sprinkle mozzarella, roasted pepper, and basil evenly over half of omelette. With heatproof rubber spatula, fold other half of omelette over filling and continue to cook until filling is heated through and eggs are set, about 1 minute longer.
  • Cut omelette in half and slide each half onto plate.

1 tablespoon balsamic vinegar
2 teaspoons minced fresh oregano, or 1 teaspoon dried
1 teaspoon minced garlic
Kosher salt and freshly ground pepper
8 1/2-inch-thick slices ciabatta or other rustic Italian white bread
4 ounces thinly sliced mozzarella cheese
4 ounces thinly sliced prosciutto
6 ounces jarred roasted red peppers,drained and torn into 1-inch-wide pieces

Steps:

  • Whisk the olive oil, vinegar, oregano, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl to blend.
  • Arrange the slices of bread on a flat work surface and spread the vinaigrette on one side of each slice. Divide the mozzarella equally among 4 of the bread slices. Top with the prosciutto and roasted red peppers, then place the remaining 4 slices of bread on top, vinaigrette-side down, to form 4 sandwiches.
  • Heat a grill pan over medium heat. Add the sandwiches and cook, pressing them occasionally with a large spatula or the bottom of a small heavy saucepan, until the bread is golden brown and the cheese has melted, about 4 minutes per side.

Got this off of 30 Minute Meals. This is my new favorite sandwich. I got a Panini maker a couple of months ago and this is made quite frequently on it!

1/3 lb thinly sliced prosciutto di Parma
8 slices chewy crust Italian bread, from a large loaf (I use Turano brand)
1 (16 ounce) jar roasted red peppers, drained well
1 lb fresh mozzarella cheese, sliced
olive oil, for drizzling

Steps:

  • Preheat a grill pan or large nonstick griddle over medium to medium high heat.
  • Build your sandwiches: place 2 or 3 slices of prosciutto on 1 piece of bread.
  • Top with an even layer of roasted red pepper and an even layer of mozzarella.
  • Top with another slice of bread.
  • Drizzle the tops of the assembled sandwiches with olive oil.
  • Place the olive oil coated bread face down on the grill or griddle and drizzle the opposite side with addition olive oil.
  • Weight the sandwiches down with a tin foil covered brick or a heavy skillet filled with a sack of flour (If using a panini maker-- just close the lid-- no need to flip).
  • Press the sandwiches for 2 or 3 minutes on each side, then serve immediately.

12 large fresh basil leaves
1 16-ounce ciabatta bread (13x6 1/2x1 1/2 inches), halved horizontally

Steps:

  • Whisk olive oil, vinegar, and garlic in small bowl to blend; season dressing to taste with salt and pepper. Layer prosciutto, mozzarella, tomatoes, and basil over bottom of bread. Drizzle lightly with dressing, then sprinkle with salt and pepper. Press top of bread over. Cut bread equally into 4 sandwiches.

8 slices prosciutto, halved lengthwise (thin slices, preferably imported)
8 large basil leaves, torn in half
8 small fresh mozzarella balls, halved (about 1-inch in diameter)
8 grape tomatoes or 8 cherry tomatoes, halved
kosher salt
fresh ground black pepper
2 tablespoons extra virgin olive oil

Steps:

  • Arrange 8 slices of prosciutto flat on a cutting board and put a piece of basil on one end of each slice. Top each piece of basil with a piece of mozzarella and a tomato half, matching the cut sides to make a ball.
  • Season very lightly with salt and generously with pepper and then roll up the balls in the prosciutto. Secure each with a toothpick and set on a platter.
  • Repeat with the remaining ingredients. Drizzle with the olive oil and serve. These keep at room temperature for up to 1 hour before serving.

  • Place 6 Sister Schuberts Mini Baguettes on a baking sheet and bake rolls according to directions on package. Cool baguettes.
