1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon paprika
¼ teaspoon cayenne pepper
½ teaspoon garlic powder
1 teaspoon salt
1 teaspoon black pepper
½ onion, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
2 tablespoons olive oil
1 cup long grain rice
2 cups chicken broth
1 ½ lb chicken tender
tomato
cilantro
cheese
lime wedge

Steps:

  • Preheat oven to 375°F (190°C).
  • In a medium bowl, combine spices to make fajita seasoning, or use store-bought.
  • In a large bowl, combine, onion, peppers, and chicken.
  • Add oil and seasoning, and mix until seasoning is fully incorporated.
  • In a casserole dish, add rice and chicken broth. Then lay down all veggies and chicken.
  • Cover the dish with foil and bake for 50-55 minutes until rice is fully cooked.
  • Serve with tomatoes, cilantro, and cheese, if desired.
  • Enjoy!

1 box Goya Spanish-Style Yellow Rice
2.25 cups water
2 lbs chicken breast
3 bell peppers
2 onions
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
1 tsp oregano
1 tsp paprika
1 tsp kosher salt
1/4 tsp cayenne pepper
1/4 cup cilantro (fresh, chopped)

Steps:

  • Preheat the oven to 375F.
  • Pour the contents of the rice package into the baking dish.
  • Pour the water over the rice, and stir to combine.
  • Thinly slice the peppers and onions.
  • Slice the chicken breast into pieces (each full chicken breast should be sliced into approximately 4 pieces).
  • Add the peppers, onions, and chicken to a large mixing bowl.
  • Combine all of the spices in a small bowl, and then sprinkle the seasoning over the chicken, peppers and onions.
  • Toss the spices together with the chicken, peppers and onions using your hands.
  • Pour the seasoned chicken, peppers and onions on top of the rice.
  • Cover the baking dish with foil.
  • Cook for 1 hour.
  • After one hour, remove the foil and toss in the fresh cilantro.

1 cup water
3/4 cup uncooked long-grain rice (not quick cooking)
1/2 teaspoon paprika
1/2 teaspoon black pepper
4 boneless skinless chicken breast halves

Steps:

  • Preheat oven to 375°F.
  • Mix soup, water, rice, and 1/4 tsp each of paprika and pepper in ungreased shallow 2-quart casserole.
  • Lay chicken on top and sprinkle with remaining paprika and pepper.

1 (1 1/4 ounce) package fajita seasoning mix
2 boneless skinless chicken breasts
1 red pepper
1 yellow pepper
grated cheddar cheese
2 cups cooked rice
vegetable oil (for frying)

Steps:

  • Chop chicken breast into chunks.
  • Fry chicken quickly until almost cooked through.
  • Remove chicken from pan.
  • Cook peppers for 2-3 minutes.
  • Put chicken back in pan with peppers.
  • Add fajita seasoning and 1/4 cup water.
  • Cook until chicken is done.
  • Put mixture over rice and top with grated cheese.
