BRIE AND ONION PUFF

Steps:
- Preheat the oven to 400 degrees F.
- Melt the butter in a large skillet over medium-high heat. Add the onions, season with salt and pepper, to taste, and saute until just brown, about 10 minutes. Add 1/2 cup of water and cook stirring often, until dark golden brown, about 15 minutes. Let the mixture cool to room temperature.
- Roll each sheet of pastry to a 12-inch square on a marble surface or parchment paper to prevent sticking. Divide the caramelized onions in the center of each pastry. Put a brie round on top of the onions and brush edges of both pastry squares with beaten egg. Fold pastry up and over cheese to completely enclose the cheese in the pastry. Press the seams together to completely seal. Arrange each pastry round, seam side down, on a silicone mat or parchment lined baking sheet. Brush the top of each pastry round with beaten egg. Bake until golden brown. 20 to 25 minutes. Let stand 15 to 20 minutes before indulging. Enjoy!
CHEESY ONION AND TOMATO PUFFS

Steps:
- Heat oven to 400°. Spray 2 cookie sheets with cooking spray. Unfold pastry on lightly floured surface. Roll into 12-inch square, trimming edges to make even. Cut into 6 rows by 6 rows to make 36 (2-inch) squares. Place on cookie sheets. Bake 12 to 15 minutes, rearranging cookie sheets after 6 minutes, until puffed and golden brown. Remove from cookie sheets to wire rack. Cool until slightly warm.
- Meanwhile, melt butter in 8-inch skillet over medium heat. Cook onion in butter 15 to 20 minutes, stirring occasionally, until tender. Stir in brown sugar. Cook and stir until onions are coated. Stir in tomatoes. Remove from heat; keep warm.
- Place cooled pastry squares on same cookie sheets. Press cheese piece into center of each pastry square. Fill with about 1 teaspoon onion mixture. Bake about 1 minute or until cheese is melted.

MOM'S POTATO PUFFS
My mother would always cook extra mashed potatoes so us kids could have these delicious puffs the next day. Over the years I have experimented with her basic recipe and sometimes will add grated cheddar cheese, chopped green onions and bacon bits to the mixture. I have also added corn niblets for a really different tasting puff.

- In a medium bowl, stir together the flour, baking powder, and salt. Mix in the mashed potatoes and egg until well blended.
- Heat oil in a deep-fryer or heavy deep skillet to 365 degrees F (180 degrees C). Carefully drop the potato mixture by spoonfuls into the hot oil, and fry until golden brown, about 5 minutes. Remove from oil to drain on paper towels.

EASY AND DELICIOUS ONION PUFFS
This is one of my all-time favorite hors d'oeuvres to serve at get togethers and also for late nite snacks. The onions and the mayo melt together under the broiler and the taste is out of this world!.. they just couldn't be any easier to put together! If you can find Vidalia onion, then use it for this. The recipe can easily be doubled of coarse. If you are a mustard lover then add on a teaspoon of sweet or Dijon mustard on top of the onion, also if you want, sprinkle some grated Parmesan cheese over the mayo before broiling. You can also make these in a larger form.

Steps:
- Preheat the broiler.
- Toast the bread slices and remove all crust from around the edges.
- Cut the slices with a 2-inch round biscuit cutter (can use a glass for for this, but be careful not to break the glass!).
- Spread the toasted rounds lightly with mayo.
- Top with a slice of onion, then spread more mayo on top of the onion.
- Broil until golden brown.
- Serve hot.

- 1. Preheat the broiler.
- 2. Toast the bread lightly in a toaster oven. Remove the crusts. Cut the slices with a 2-inch round biscuit cutter and spread the rounds lightly with mayonnaise. Put a slice of onion on top of each piece and spread with mayonnaise again. Broil until golden brown. Serve hot.
- Ellen's Tips:
- You can add some chopped fresh parsley on top of the puffs after broiling. You can spread some hot and sweet mustard on top of the onion before the mayonnaise for a spicier version of this recipe.

- For the filling: Peel and julienne onions. Heat oil in a saucepan, sauté onions sprinkle with sugar and caramelize, stirring constantly. Deglaze with port wine, vinegar and 30 ml (approximately 1.1 ounces) of water. Stir in broth, and season with salt and pepper. Simmer for 30-40 minutes over low heat. Stir occasionally and add water, as needed.
- For the pastries: Spread pastry onto the work surface. Use a cookie cutter to cut out 8 disks of dough. Cut 4 strips, 1.5 cm (approximately 1/2 inch) wide, from remaining dough. Whisk egg white nd brush onto edges of dough disks, use to attach strips. Bake the puff pastries in an oven preheated to 180°C (approximately 350°F) for 10-15 minutes.
- Remove pastries from oven and add 2 tablespoons of onion mixture to each. Season with coarse pepper and serve garnished with Parmesan.

- Heat oven to 400°F
- Heat water and butter to rolling boil. Stir in flour, salt and garlic powder. Stir vigorously over low heat 1 minute or until mixture forms a ball; remove from heat. Beat in eggs until smooth. Stir in cheese and onion. Drop dough by scant teaspoonfuls 1 inch apart onto lightly greased baking sheet. Bake until puffed and golden, 20 to 25 minutes.
- Tip-Top Puffs: Place pimiento-stuffed olive or 1/2 inch-square cheese slice on each puff. Bake as directed.
- Filled Puffs: Place salted peanut, 1/2 inch ham or bologna cube or half of pimiento-stuffed olive on each puff. Top with enough dough to cover. Bake as directed.

- Stir together cheese, mayonnaise, onion, and cayenne.
- Cut out 4 rounds from each bread slice using cutter and arrange on a baking sheet. Bake toasts until tops are crisp and just golden, 3 to 4 minutes. Cool toasts slightly on baking sheet on a rack. (Leave oven on.)
