RAISIN BREAD I

- Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5x3 inch loaf pan.
- In large bowl measure flour, sugar, baking powder, soda, salt, cinnamon, and raisins. Stir thoroughly. Make a well in center.
- In small bowl beat egg until frothy. Mix in melted butter and milk. Pour into well. Stir just enough to moisten. Scrape into greased 9x5x3 inch loaf pan.
- Bake in 350 degree F (175 degree C) oven for 1 hour. Serve plain or toasted with butter.

CINNAMON RAISIN BREAD I
This was my dad's recipe. A yummy moist bread loaded with raisins and cinnamon. The best raisin cinnamon bread I've ever had! Great plain, toasted, or with a light glaze of buttercream frosting!

- Warm the milk in a small saucepan until it bubbles, then remove from heat. Let cool until lukewarm.
- Dissolve yeast in warm water, and set aside until yeast is frothy. Mix in eggs, sugar, butter or margarine, salt, and raisins. Stir in cooled milk. Add the flour gradually to make a stiff dough.
- Knead dough on a lightly floured surface for a few minutes. Place in a large, greased, mixing bowl, and turn to grease the surface of the dough. Cover with a damp cloth. Allow to rise until doubled.
- Roll out on a lightly floured surface into a large rectangle 1/2 inch thick. Moisten dough with 2 tablespoons milk. Mix together 3/4 cup sugar and 2 tablespoons cinnamon, and sprinkle mixture on top of the moistened dough. Roll up tightly; the roll should be about 3 inches in diameter. Cut into thirds, and tuck under ends. Place loaves into well greased 9 x 5 inch pans. Lightly grease tops of loaves. Let rise again for 1 hour.
- Bake at 350 degrees F (175 degrees C) for 45 minutes, or until loaves are lightly browned and sound hollow when knocked. Remove loaves from pans, and brush with melted butter or margarine. Let cool before slicing.

- Prep time: 10 minutes, mixing time: 10 minutes, rising time: 2 x 1/2 hour, baking time 30 minutes Method: 1 - Combine in large bowl: 8 cups flour, 1/2 cup brown sugar, sea salt, raisins, cinnamon and ground cloves, mix together. 2 - In another bowl, add dry fast rising or traditional yeast with 1 cup warm water and 1/2 tbsp white sugar, let rise for a five minutes. 3 - In another bowl add 1 cup of warm water and 3/4 cup molasses mix together, then melt 1/4 cup butter in a glass bowl. 4 - When yeast is ready pour over flour mixture in bowl then start adding the warm water, butter, molasses and vanilla mixing all ingredients together with a spoon or kitchen aid until it thickens then keep adding flour to work dough together, add more water if need at this stage ONLY" this will be done with your hand. 5 - Knead dough, add more flour if necessary until dough is smooth , elastic and no longer sticky and you can hear cracking sounds of the dough when folding dough inward, keep working dough into a ball. 6 - When completed sprinkle some flour over the top. I always draw the sign of a cross a few times on top then cut the top of the dough like a cross then cover with parchment paper and big towel. "Crossing your bread is optional". 7 - Let rise in a warm place on your counter top until dough rises for 30 minutes then knead it down for a couple of minutes. 8 - Repeat this step letting the dough rise again for another 30 minutes. 9 - After your dough rises " DON'T DEFLATE DOUGH" and cut in pieces forming it inwards into a ball, placing dough in bread pans, place three buns in each pan. 10 - Makes 3 loafs of bread keep covered and in a warm place until bread rises half the size you started with or just 30 minutes. - Soak raisins in hot tap water to cover until plump, about 20 minutes, then drain.
- Meanwhile, stir together warm water, yeast, and a pinch of sugar in a small bowl. Let stand until foamy, about 5 minutes. (If yeast doesn't foam, start over with new yeast.)
- Stir together flour, sugar, cardamom, and salt in a large bowl, then blend in butter with a pastry blender or your fingertips until mixture resembles coarse meal.
- Stir in milk, whole egg, and yeast mixture with a wooden spoon until a soft dough forms. Turn dough out onto a well-floured surface and knead, dusting surface and hands with just enough flour to keep dough from sticking, until dough is smooth and elastic, 8 to 10 minutes.
- Pat dough into a 9-inch square and sprinkle with raisins. Fold dough over to enclose raisins and pinch edges to seal. Knead, dusting surface and hands lightly with flour, until raisins are distributed. (Dough will be lumpy and slightly sticky; if any raisins pop out, just push them back in.) Form dough into a ball.
- Put dough in a buttered large bowl and turn to coat. Cover bowl with plastic wrap and a kitchen towel and let dough rise in a draft-free place at warm room temperature until doubled, 2 to 2 1/2 hours.
- Punch down dough (do not knead), then halve.
- Cut each half into thirds and roll each piece into a 15-inch rope. Braid together 3 ropes to form a loaf, then transfer to a parchment-lined large baking sheet, tucking ends under.
- Make another loaf with remaining 3 ropes, arranging loaves 4 inches apart. Loosely cover with plastic wrap and let rise in a draft-free place at warm room temperature until doubled, 1 to 1 1/2 hours.
- Preheat oven to 350°F with rack in middle.
- Brush loaves with egg wash and bake until golden brown and bottoms sound hollow when tapped, 40 to 45 minutes.
- Transfer to a rack to cool.
- Cooks' note: Bread can be made 2 days ahead and kept, wrapped well, at room temperature or frozen 1 month.

- Soften yeast in 1/2 cup warm water (add a little sugar to the water). Combine milk, 1/2 cup butter, and sugar in a large mixing bowl and cool to lukewarm. Stir in eggs, vanilla, salt, and the yeast. Gradually add flour, beating well after each addition. Cover and let rise in a warm place until light and doubled in bulk, about 1-1 1/2 hours. Beat down and let rise again until doubled, about 45 minutes.
- Turn batter onto a floured board and knead with your hands. Drain water from raisins and knead them into the dough. If dough is too thin, add a bit more flour. Divide batter into 2 well-greased 9x5x3-inch pans. Let rise in a warm place until light, about 45 minutes.
- Bake in 350 oven for 25-30 minutes or until a deep golden brown. When done, remove from oven and while still warm, brush with melted butter. Bread should be very light and sweet.

GRANDMA'S RAISIN BREAD
My grandmother's famous recipe. She mad it often and we all loved it. I must admit that I do not know why my family calls this raisin bread, because it has always seemed more like a cake to me.

Steps:
- Place raisins and 2 cups water in sauce pan and bring to boil for five minutes.
- Remove from heat and add 1 cup cold water.
- Let cool until it is lukewarm.
- Cream together sugar and shortening, then add the salt, cinnamon, nutmeg, cloves and baking soda. Mix well.
- Add raisins and flour to dry mixture. Mix well.
- Bake in greased and floured cake pan for one hour at 350°F.
- Recipe is great as is or add some cream cheese frosting.

PAGNOTTA BREAD BOWL RECIPE

- To make the dough: Put the flour in a bowl and add yeast to it. Mix. Add the salt after mixing the yeast into the flour. Add your olive oil and 3/4 cup of water. If using a stand mixer, mix on low speed with paddle. Begin adding the remaining water. The water will be your variable, not your flour. Add water until the dough appears quite sticky. If using a mixer, change to the dough hook. If working by hand, begin kneading process. The dough will appear stickier than you are probably used to. Knead by machine for about 4-5 minutes or by hand until dough is elastic. Finish off the mixer kneading by some hand kneading as well. Put the dough in a bowl rubbed with olive oil and cover with plastic wrap. Either let rest in the refrigerator overnight for a long, cool rise or let rise at room temperature for 1 1/2 hours. Punch down the dough, fold and tuck the dough, and let rise another hour. Shaping dough: Divide the dough into 4 equal portions. Make a round loaf by laying the dough smooth side down and pulling the dough toward the middle at 12 o'clock and 6 o'clock. Then pull the dough toward the middle from 3 o'clock and 9 o'clock. Turn the dough round over and tuck the dough tightly to the bottom using your hands to pull the dough to the bottom. Set the round upside down on a floured towel to rise for about 40 minutes, covered. Baking: Preheat the baking stones in the center of oven at 425 degrees. Before slashing the bread, throw 1/4 cup of water into the bottom of the oven for steam. Turn the loaf right side up onto a peel. Slash the top of the bread and put into the oven. Add another splash of water to the bottom of the oven. After 10 minutes, reduce heat to 400°F. Bake for a total of about 20-25 minutes or until internal temperature of the loaf is about 200 degrees. Remove and cool completely. Making soup bowls: When round is completely cooled, using a serrated knife, cut a hold in the top of the loaf. Hollow out much of the internal dough and save for other uses, or to eat! When ready to serve, pour soup into "bowl" and serve immediately. Freezing Bread: Double wrap bread with plastic wrap. Then place into a ziplock bag. When ready to serve. Thaw completely and then pop bread into the oven for 5 minutes at the same temperature you baked it at, until it is crisp. WHOLE WHEAT APRICOT RAISIN BREAD

- Chop apricots into 1/2" pieces and soak them in the milk for 4 hours.
- Place the flour, salt, baking powder, soda and nutmeg in a bowl and cut in butter. Add sugar and raisins.
- Make a well in the center and pour in the beaten egg and the milk and apricots. Mix well to make a soft dough.
- Place mixture in a greased 1-pound loaf pan and bake for 35 minutes or until a toothpick stuck in the center comes out clean.
- Turn the loaf onto a wire rack to cool.
