6 -8 pollock fillets
2 beaten eggs
4 tablespoons milk
3/4 cup parmesan cheese
1/4 cup flour
1/2 teaspoon salt
1/2 teaspoon Mrs. Dash seasoning mix
1/4 teaspoon rubbed sage
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon coarse black pepper
olive oil (for frying)

Steps:

  • Mix in pie plate the egg and milk.
  • Mix in pie plate the dry ingredients.
  • Heat oil for frying.
  • Coat fillets with egg wash letting excess drip off end.
  • Coat both sides well with the breading mixture.
  • Fry until rich brown on one side in hot olive oil.
  • Flip and cook other side until rich brown.
  • Drain on paper towels.

1 tbsp olive oil
3 tbsp butter
4 garlic cloves, minced
2 tbsp finely chopped parsley

Steps:

  • 1. Drizzle fillets with 2 tbsp lemon juice, season with salt and pepper to taste 2. For the sauce, in a large skillet heat oil over med heat until hot. Add butter to melt. Add garlic; cook and stir 1 min. 3. Add fillets to skillet; cook covered, 3-4 mins per side or until fish flakes easily with fork. Transfer to a platter. 4. Stir remaining 1 tbsp lemon juice into skillet. Drizzle sauce over fillets. Sprinkle with parsley.

1 ½ cups instant mashed potato flakes
¼ cup oil for frying
4 (6 ounce) fillets sole

Steps:

  • In a shallow dish, whisk together the egg, mustard, and salt; set aside. Place the potato flakes in another shallow dish.
  • Heat oil in a large heavy skillet over medium-high heat.
  • Dip fish fillets in the egg mixture. Dredge the fillets in the potato flakes, making sure to completely coat the fish. For extra crispy, dip into egg and potato flakes again.
