SYRNIKI (Сырники / FARMER'S CHEESE PANCAKES)
Classic Russian syrniki have a tangy-sweet flavor that goes well with a dollop of jam or sour cream on the side.

Steps:
- In a medium bowl, beat the egg yolks into the farmer's cheese, then stir in the sugar. Mix together 1⁄2 cup of the flour, the baking powder, and the salt and add to the cheese mixture. If the mixture seems dry, add a little heavy cream.
- Place the butter and oil over medium-low heat in a large nonstick skillet and melt the butter.
- Sprinkle the remaining 1⁄4 cup flour onto a plate and dust your hands with some flour, too. With your hands or a spoon, scoop out about 2 tablespoons of the batter and set the mound on the floured plate. Use your hands to gently shape it into a round patty about 2 inches in diameter and coat it lightly on all sides with flour. Repeat with the remaining batter.
- Carefully transfer the patties to the pan and cook them slowly until the undersides are browned, about 3 minutes. Turn with a spatula and cook until the other sides are browned, 3 to 4 minutes more. Serve immediately, with sour cream.
PANCAKES MADE WITH FARMER'S CHEESE
Baked farmer's cheese cakes are similar to the Russian syrniki, but are made in the oven for an easier morning.

Steps:
- Preheat oven to 350ºF.
- Mix all ingredients in a mixing bowl until you get thick cookie dough consistency. The mixture will stay grainy because of the cheese.
- Scoop one tablespoon of dough in your hand, shape to the form of a pancake. Continue until all the dough is gone.
- Bake for about 25 minutes, turning the pancakes once half way through, until both sides are nicely brown.
- Brush with melted butter or ghee before serving.
RUSSIAN CHEESE PANCAKES (SYRNIKI)
Syrniki are traditional pancakes from Russia and usually served for breakfast with jam or sour cream. The cheese used to make them is called tvorog, the closest in the US would be farmer's cheese or quark.

- Beat egg and white sugar together in a bowl until smooth. Whisk in quark cheese, flour, vanilla sugar, and salt. Mix well until dough is thick and sticky.
- Divide dough into 5 to 6 portions. Form into balls and coat with some flour. Flatten slightly to form into discs (syrniki).
- Heat oil in skillet over medium-low heat. Add the syrniki; fry until browned, 5 minutes per side.

HOME MADE FARMER'S CHEESE
My Polish friend's mother gave me this recipe years ago. She has been making this cheese forever in her house and also ate it while growing up in Poland. This is an easy home made farmer's cheese. It doesn't age well, so be sure you eat it within a week after it's made - well, if you can let it last that long. If you bake with it, it melts very beautifully. It makes a perfect soft cheese for snacking.

Steps:
- Pour the milk into a large pot, and stir in a pinch of salt. Bring to a boil over medium heat, stirring occasionally to prevent the milk from scorching on the bottom of the pot.
- When the milk begins to boil (small bubbles will first appear at the edges), turn off the heat. Stir lemon juice into the milk, and the milk will curdle. You may need to wait 5 or 10 minutes.
- Line a sieve or colander with a cheesecloth, and pour the milk through the cloth to catch the curds. What is left in the cheesecloth is the Farmer's Cheese. The liquid is the whey. Some people keep the whey and drink it, but I throw it away. Gather the cloth around the cheese, and squeeze out as much of the whey as you can. Wrap in plastic, or place in an airtight container. Store in the refrigerator.
