- For the shrimp sauce:.
- Place the shrimp heads in a food processor and add enough water to come up to two-thirds the level of the shrimp. Blend until smooth. Strain the shrimp head mixture through a fine mesh strainer, using your hands to squeeze out all of the liquid, and then discard the solids. Return the strained liquid to the food processor. Add the shrimp bodies and puree into a smooth paste. Set aside.
- Heat a large wok or large deep skillet over medium-high heat until hot. Add the oil and saute the garlic, stirring often, until golden brown. Add the annatto seeds with some of their soaking liquid and the blended shrimp paste. Sprinkle in the salt. Simmer for 10 to 15 minutes, and then add more salt to taste.
- For the palabok:.
- Toast the flour in a saucepan until light chestnut in color. Whisk in the salt and 3 cups water until smooth. Saute the garlic in oil in a work or large skillet until golden brown. Do not overcook. Add the annatto to the flour mixture and then strain the garlic oil into the pan. Simmer over medium heat, stirring constantly, until thickened.
- For the noodles:.
- Cook the noodles in a pot of boiling water for 7 to 10 seconds. Drain.
- To assemble:.
- Divide the noodles among 4 to 6 plates. Spoon the palabok and shrimp sauce over the noodles. Garnish with chicharron, green onions and eggs. Serve with lemon wedges.

- Blanch the pork mask twice to remove the impurities. In a pot, put 12 cups water (or more), pork mask, peppercorns and salt. Boil the pork until almost tender. Separate the pork rind and fat from meat and cut into cubes. Set aside the pork broth for later use.
- To make the annatto oil, heat the half cup of cooking oil with the annatto seeds for a few minutes. Remove the seeds from the pan and soak the seeds in 1 cup warm water with a drop of lihia. Set aside for later use.
- In a medium size wok, in a low fire, saute the pork rind and fat. Saute until the fat is rendered then put the minced garlic and minced onion. Saute until the onions are soft. Then add the meat and stir for a few minutes. Add 3 tablespoons of vinegar and 1 tablespoon of fish sauce.
- Cook the bihon noodles by boiling it in water. You can also use the package directions as a guide. Drain the noodles and set aside.

- Cook Pancit Luglug noodles as per package instruction. You may also soak the noodles a few minutes before boiling to fasten the process.
- In a pot or large skillet, heat oil over medium heat. Add the prawn and cook for a minute or until the color turns opaque and pink. Remove from oil and cut each piece into half, lengthwise and set aside.
- In the same oil, saute the garlic and onion until limp and aromatic. Add the ground pork and season with fish sauce and pepper. Cook until no longer pink while stirring and pressing to break up the lumps.
- While pork is cooking, take a bowl and dissolve the flour and achuete powder in 1 cup of water. Set aside.

- Remove the shells and heads of the shrimp. Pound the shrimp heads using a mortar and mash in 3 cups of water. Strain the shrimp liquid and set aside.
- In a large casserole, bring 10 cups of water to a boil. Cook the noodles according to package instructions or until soft .
- Heat oil in a pan. Add the garlic and onion, sauté for a few minutes. Add shrimp, tofu, and season with salt and pepper, sauté until shrimps are done. Set aside.
- In another sauce pan, put 3 cups of water, add annatto water, ground pepper, fish sauce and flour dissolved in water. Simmer over medium-low heat, stir constantly for about 3 minutes or until liquid starts to thicken.
