3/4 cup gluten-free plain flour, sifted
1 teaspoon mixed spice
1/2 teaspoon cinnamon
200 g dried figs, chopped
100 g raisins
100 g macadamias
100 g blanched almonds
2/3 cup honey
1/3 cup caster sugar
200 g dairy-free chocolate, broken
icing sugar, sifted, for dusting

Steps:

  • Preheat oven to 180°C or 160°C fan. Grease and line a 20cm square cake pan. Combine dry ingredients in a large bowl.
  • Combine honey and sugar in a medium saucepan and stir over low heat to dissolve sugar. Bring to the boil, reduce heat and simmer for 2 minutes. Remove and stir in chocolate to melt.
  • Quickly stir into dry mixture. Lightly knead ingredients to combine. Press into pan and flatten top. Bake for 25 minutes, or until just firm. Cool in pan. Dust with icing sugar and cut into squares.

She is recognised and works with the Australian Coeliac Society. Be sure to use gluten-free ingredients if required.

3/4 cup golden syrup
1 1/2 cups brown sugar
2 tablespoons orange marmalade
100 g good quality dark chocolate
1 cup blanched almond, chopped
1 1/2 cups pecans, chopped
3/4 cup macadamia nuts, chopped
1 cup dried apricot, finely chopped
1/2 cup glace pineapple, chopped
1/2 cup mixed peel
2 tablespoons finely grated lemon zest
2 tablespoons finely grated orange zest
1/2 cup fine rice flour
1/2 cup cocoa powder
1 teaspoon ground cinnamon
1 teaspoon mixed spice or 1 teaspoon pumpkin spice
icing sugar, for dusting (aka confectioners sugar)

Steps:

  • Preheat oven to 150°C Lightly grease a 24cm square baking tin and line with baking paper.
  • Combine the golden syrup, brown sugar and marmalade in a heavy based saucepan. Using a medium heat, stir constantly until the mixture comes to the boil. Reduce the heat and simmer for 5 minutes. Stir occasionally. The sugar syrup should become quite thick and foamy. Remove from the heat and allow to cool a little. Stir in the chocolate.
  • Place the chopped nuts, fruit and zests in a large bowl and mix well. Sift in the flour, cocoa powder and spices. Mix well.
  • Pour the chocolate syrup over the fruit and nut mixture and then stir until well combined.
  • Spoon the mixture into the prepared tube and press flat with the back of a spoon.
  • Bake 25 minutes or until firm when pressed in the centre.
  • Dust heavily with sifted icing sugar while hot. Cool to room temperature.
  • Cut into slices to serve.
  • this recipe should keep in the refrigerator for up to a month.

1 cup hazelnuts, toasted, husked, coarsely chopped
1 cup pecan halves, toasted, coarsely chopped
3/4 cup pitted Medjool dates, coarsely chopped
1/2 cup coarsely chopped candied orange peel
1/2 cup dried tart cherries
1/2 cup all purpose flour
1/4 cup stemmed dried Mission figs, coarsely chopped
2 tablespoons unsweetened cocoa powder
1 teaspoon finely grated orange peel
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground coriander
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cardamom
Pinch of ground white pepper
3/4 cup honey
3/4 cup sugar
2 tablespoons (1/4 stick) butter
1 9-inch-diameter cardboard cake round

Steps:

  • Position rack in center of oven; preheat to 300°F. Butter 9-inch-diameter springform pan. Line bottom and sides with parchment paper; butter paper.
  • Mix first 16 ingredients in large bowl, tossing to separate fruit pieces. Bring honey, sugar, and butter to boil in small saucepan, stirring frequently. Reduce heat to medium-low. Place candy thermometer in mixture, tilting to submerge bulb, and cook until thermometer registers 242°F to 248°F, stirring occasionally, about 9 minutes. Pour syrup over nut mixture; stir to blend. Immediately transfer mixture to prepared pan; smooth top. Bake until bubbling slightly at edges and top appears dry, about 55 minutes. Cool completely in pan on rack. Cover; let stand overnight at room temperature.
  • Release pan sides. Remove paper from sides and bottom of panforte. Place panforte on cardboard round. (Can be made 3 weeks ahead. Store airtight at room temperature.)

flavourless oil, for greasing
edible rice paper (optional)
300g nuts, toasted and chopped (we used pistachios and hazelnuts)
50g candied peel, finely chopped
250g dried fruit, chopped (we used dates and apricots)
50g plain flour
2 tsp spices (we used 1 tsp cinnamon, ¾ tsp ginger and ¼ tsp cardamom)
125g honey
150g golden caster sugar
3 tbsp fortified wine or liqueur (we used Marsala)
icing sugar, to dust

Steps:

  • Heat oven to 150C/130C fan/gas 2. Grease and line the base of a 20cm springform cake tin with edible rice paper or baking parchment. Tip the nuts, candied peel and dried fruit into a bowl. Sift over the flour and spices, and mix together.
  • Heat the honey, sugar and wine in a medium saucepan over a medium heat. Bubble for 3-4 mins until the sugar has melted. Pour the hot liquid over the fruit and nuts, then mix. Scrape the mixture into the tin and use the back of a wet metal spoon to flatten it. Bake for 35-40 mins until the surface is still soft but not sticky - it will firm up as it cools.
  • Leave to cool in the tin for 10 mins, then remove using a palette knife to release any sticky edges. If using baking parchment, peel it off and discard it; the edible rice paper can be left on. Cool completely on a wire rack, then dust generously with icing sugar, rubbing the sugar gently into the surface. Cut into wedges to serve. Will keep wrapped in baking parchment in an airtight tin for one month.
