CREAMY SAUSAGE & ROCKET LINGUINE

Steps:
- Squeeze the sausagemeat out of the skins, breaking into grape-size chunks. Heat the oil in a frying pan. Fry the chunks for about 8 mins until crisp and golden.
- Meanwhile, cook the pasta and chop most of the rocket. Add the chilli to the sausages, fry for 30 secs, then tip in the cream and chopped rocket. Season and heat until the rocket has just wilted.
- Drain the pasta, reserving some of the cooking liquid, then mix the pasta through the sauce with a splash of cooking water. Top with remaining rocket

- Start bringing a large pot of salted water to a boil.
- Meanwhile, heat 3 tablespoons oil on medium-low in a large sauté pan.
- Add garlic and allow to cook 10 minutes, until oil is fragrant but garlic has not browned. Remove garlic (save for another use).
- When water boils, stir in pasta.
- Add tomatoes to oil in sauté pan, increase heat to medium-¬high and, when tomatoes start to shrivel and collapse, reduce heat to low and cook until softened but not shapeless, about 5 minutes. Stir a couple of times. Reserve ½ cup of pasta water.
- Drain pasta and add to tomatoes, folding both together. Add some pasta water if needed for moistening. Fold in arugula and remaining oil. When arugula has just wilted, season dish with salt and pepper. Serve with a dusting of cheese. Or serve in about 30 minutes, just warm.

PENNE WITH ARUGULA AND TOMATOES

- Heat oil in large nonstick skillet over medium heat. Add onion and sauté until tender, about 5 minutes. Add garlic and sauté 1 minute. Add tomatoes, herbs and sugar. Reduce heat and simmer until mixture thickens, stirring frequently, about 20 minutes. Season to taste with salt and pepper. (Sauce can be prepared 1 day ahead. Cover and refrigerate. Bring to simmer before using.)
- Cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Add arugula and cook until wilted, about 1 minute. Drain. Return pasta and arugula to pot. Add sauce and toss to coat. Season to taste with salt and pepper. Divide pasta among plates. Sprinkle with cheese and serve.
PASTA WITH SAUSAGE MEAT AND WILTED ROCKET
This is a quick and easy mid-week meal that is sure to please the taste buds! You can use any type of pasta with this - penne makes a good alternative also i find that for the sausages Cumberland work well if you can get them! Use what ever suits your own taste!

Steps:
- Bring a large saucepan of salted water to the boil.
- While the water is heating, remove the sausage meat from its skin and heat the oil in a frying pan over a medium heat.
- Add the sausage meat and garlic and cook, stirring occasionally, for 5 minutes.
- Break up any lumps with a fork.
- Add the chopped tomatoes and bring to a simmer then reduce the heat a little and simmer gently for 15 minutes.
- Season to taste with salt and freshly ground black pepper - keep the sauce warm until ready to use.
- Add the pasta to the boiling water and cook for 8-10 minutes or until al dente, drain the pasta and return to saucepan.
- Pour over the sauce and stir in the rocket.
- Divide the mixture between plates and serve with Parmesan.
