Olive oil nonstick cooking spray
2 large eggs, beaten
1 tablespoon Dijon mustard
1 tablespoon honey
1 tablespoon hot sauce
Kosher salt and freshly ground black pepper
2 1/2 cups panko bread crumbs
2 teaspoons salt
1/2 teaspoon ground black pepper
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic powder
1 (3-pound) chicken cut into 8 pieces, skin removed

Steps:

  • Preheat the oven to 400 degrees F. Fit a sheet tray with a wire rack and spray with nonstick cooking spray.
  • In a pie plate or shallow bowl, whisk the eggs, mustard, honey, hot sauce, and salt and pepper, to taste, together until thoroughly combined.
  • Add the panko, salt and pepper, to taste, the paprika, cayenne, and garlic powder to another pie plate and whisk to combine.
  • Dredge the chicken through the wet mixture, then the dry mixture, patting the breading on so it adheres. Arrange on a wire rack lined sheet tray, making sure there is ample space between each piece of chicken. Give the chicken a spritz of the olive cooking spray. This will help brown and crisp up the coating.
  • Put on the upper rack of the oven and bake until the chicken is golden and crisp. The temperature should register 160 degrees F on an instant-read thermometer in the thickest part of the chicken, about 45 minutes. Transfer to a serving platter and serve.

2 tablespoons olive oil
6 chicken thighs, skinless
1 teaspoon salt
1/2 teaspoon pepper
1 medium onion, sliced
1 cup chicken stock
1/2 cup white wine
One 14.5-ounce can crushed tomatoes in thick puree
1 teaspoon dried thyme
1/2 tablespoon dried rosemary
1 tablespoon lemon-pepper
Hot buttered rice
2 tablespoons chopped fresh parsley leaves

Steps:

  • Heat the oil in a 12-inch skillet over medium-high heat.
  • Pat chicken dry with a paper towel and season with salt and pepper. Brown the chicken, meat-side down first, and turning once, about 4 minutes on each side. Transfer to a plate to reserve.
  • Pour off all but 1 tablespoon of oil from the pan.
  • Add onion to the pan and saute until tender, roughly 3 minutes. Add the stock and wine and stir, scrapping any brown bits off the bottom of the pan. Turn heat to high and reduce by half, about 3 minutes. Pour in the crushed tomatoes and add the dried herbs and lemon pepper. Add the chicken thighs back into the pan.Cover and cook on medium-low heat for 40 minutes.
  • Remove chicken from liquid and serve on hot buttered rice. Ladle the sauce on top and garnish with fresh chopped parsley.

2 tablespoons onion powder
1 tablespoon cayenne pepper
1 tablespoon ground cumin
2 teaspoons dried thyme

4 pounds chicken, washed and dried
Vegetable oil
Beer Can Chicken Rub
1 (12-ounce) can beer

Steps:

  • For the chicken rub: In a small bowl mix all the ingredients together and use for the grilled chicken. You can store extra rub mixture in an airtight container for up to 6 months.
  • For the chicken: Preheat your grill to medium-high heat.
  • Rub the chicken and its cavity down with the vegetable oil. Season the chicken with rub mixture, remembering to season the cavity. Pour out 1/4 of the beer and sit the chicken on top of the beer can. Place the chicken in the center of the hot grill and cover. Cook the chicken for 1 to 1 1/2 hours, or until an instant-read thermometer registers 165 degrees F. Once cooked, cover loosely with foil and let rest for 10 minutes before carving.

PAT'S BROCCOLI AND CHICKEN STIR-FRY

2 tablespoons soy sauce
1 tablespoon orange juice
1 tablespoon light brown sugar
1 tablespoon rice wine vinegar
1/2 tablespoon cornstarch
1/2 tablespoon sesame oil
1/2 to 1 teaspoon red pepper flakes, or more if desired
1 tablespoon peanut oil, plus more as needed
1 pound boneless, skinless chicken thighs, cut into 1/2-inch pieces
2 tablespoons peeled and chopped fresh ginger
4 cloves garlic, minced
4 green onions, sliced
4 cups broccoli florets, pre-cooked
Hot cooked rice, for serving

Steps:

  • In a small bowl, whisk together the soy sauce, orange juice, light brown sugar, rice wine vinegar, cornstarch, sesame oil and red pepper flakes. Reserve.
  • Set a wok over medium-high heat and coat with 1 tablespoon of the peanut oil. When the oil shimmers, add about half of the chicken thigh pieces. Stir-fry until the chicken is fully cooked through, 3 to 4 minutes. Transfer to a plate and repeat the process with the remaining chicken thighs.
  • Add enough peanut oil to the hot wok to coat the bottom. Add the ginger, garlic and green onions and stir-fry until fragrant, about 1 minute. Add the chicken back to the wok along with the broccoli florets and stir to warm through. Pour in the reserved sauce and stir until the sauce is thickened and bubbly, about 45 seconds. Transfer to a serving bowl and serve with rice.

My husband lived on a street where a neighborhood chef would create dishes, then call the neighbors at all hours. They would stumble over in PJs and tast the latest creation. Then he would throw them all out and go to bed. He was famous for this chicken recipe. I found stuffed it in a cookbook, got the story, tried the dish, got the rave reviews, and am sharing because a relative said "FINALLY, a new Chicken recipe!" Don't be afraid to make this for the family dinner for a trial. Great served with steamed rice and roasted brocolli. If you make chafing pans of this, double the recipe here. You can wing the rest to accomodate any size crowd. The muenster holds up well, and if you are not a mushroom fan, just leave them out!

2 -3 lbs boneless skinless chicken breasts
1 cup seasoned bread crumbs
1 -2 egg, lightly scrambled
1/2 lb fresh sliced mushrooms
2 -3 tablespoons butter
1/2 lb fresh muenster cheese
4 -6 tablespoons butter
4 beef bouillon cubes or 4 equivalent granular bouillon
1 1/2 cups boiling water

Steps:

  • Cut chicken breasts in half lengthwise, and pound slightly with a meat mallet (having chicken in a durable zipper bag.).
  • Place pounded chicken in a bowl, pour scrambled egg over the chicken, stirring to coat chicken. Cover and place bowl in the refrigerator for a 2 or more hours.
  • Slice mushrooms. Saute for just a few minutes in melted butter. set aside.
  • Dredge chicken pieces in seasoned (or plain) bread crumbs, and place on a platter.
  • In an electric skillet, melt enough butter to coat bottom of pan, on med hi heat.
  • Fry chicken pieces just until lightly browned, turning to fry other side, and adding butter to the pan as needed. Chicken WILL NOT be DONE at this point.
  • Place browned chicken in a 13x9 pan, (or the size to fit your party!).
  • Cover chicken with sliced muenster cheese.
  • Place sauteed mushrooms over muenster cheese. .
  • ** *If desired, you can stop here, cover with foil and refrigerate***.
  • AT Cooking time Preheat oven to 350.
  • Mix bouillon with boiling water, set aside until dissolved.
  • Pour dissolved bullion mixture over the top of the chicken.
  • Cover pan with foil.
  • Bake 45 minutes with foil on.
  • Remove foil and bake 15 additional minutes to brown cheese. (you can also carefully broil for a few minutes here instead, but watch it carefully!).
  • Serve with a spoon handy for the wonderful sauce.

PAT'S SOUTHERN FRIED CHICKEN

This is a "no-fail" recipe for people who have trouble making good fried chicken. It averts the problem of the coating falling off, it's very tender, and it's big on flavor. There are three "tricks" here that make this recipe so successful: "dusting" the chicken ahead of time, using Crisco, and not "crowding" the chicken in the skillet. If there are certain herbs or spices that suit you better than the ones listed, go ahead and make changes but remember that not all of it gets on the chicken as you dredge it so you'll usually add more (about twice as much) than if you were putting it directly on the chicken as it cooks. 1 large frying chicken
1 cup flour (for dusting)
1 cup buttermilk
2 large eggs
1 teaspoon baking soda
2 cups flour (for dredging)
1 tablespoon ground black pepper
1 tablespoon kosher salt
1 tablespoon dried basil
1 teaspoon dried oregano (optional)
1 teaspoon Old Bay Seasoning
Crisco shortening (3 cups for frying)

Steps:

  • Cut up the chicken, setting aside the back, neck, and organ meat to make stock for other recipes. Cut the last joint off the wing tips too and add to chicken parts for stock. (Obviously, you can buy a whole fryer already cut up if you wish. You can trim excessive skin and some fat but leave the main part of the skin on each piece of chicken!
  • Carefully dry each piece of chicken with a paper towel. Pour 1 cup of flour into a paper bag and dust each piece of chicken, one at a time, by shaking it in the bag. Set all this chicken aside on a tray and let it sit until the "whiteness" fades (about 30 minutes).
  • Beat the eggs with a fork or whisk in a wide shallow bowl. Add the buttermilk to the eggs and beat for another few seconds and set aside.
  • On a large platter or plate, mix together the two cups of flour, baking soda, pepper, salt, basil, Old Bay and oregano; set aside.
  • Preheat the oven to 375°F.
  • On the stovetop, in a large skillet, heat the Crisco until it is very hot, about 375° (Your chicken should really crackle and sizzle when it goes into the oil -- if not, then the oil is too cold!).
  • "Drench" each piece of chicken in the buttermilk/egg mix, allow it to mostly drip off, and then "dredge" it in the flour mix until it is evenly coated. As each piece is coated, place it into the hot oil. DO NOT CROWD THE CHICKEN! You may have to make two or three batches, depending upon your skillet size, so don't drench and dredge until you are ready to fry each piece.
  • Fry the chicken to a golden brown on each side, turning it once. As the chicken comes out of the skillet, place each piece on a baking sheet (make sure that it has sides -- some grease will drain off the chicken as it bakes).
  • When all the chicken has been fried up and placed on the baking sheet, place it into the pre-heated 375° oven UNCOVERED for 40 minutes.
  • After the chicken comes out of the oven, allow it to "rest" for 10-15 minutes and then serve.

2 boneless skinless chicken breast halves
2/3 cup dry white wine (I used Chardonnay)
1/3 cup Dijon mustard
1/3 cup wheat germ
1/3 cup grated parmesan cheese (do NOT use the stuff that comes in the green box)
favorite season salt or salt and pepper, to taste. i use herbamare

Steps:

  • Salt and pepper the chicken breast halves to taste, (I use a season salt called Herbamare-available in health food stores or on line).
  • Marinate the chicken breast halves in the mixture of white wine and Dijon mustard.
  • Marinate for 6-8 hours, the longer the better.
  • Discard the marinate.
  • Combine the wheat germ and parmesan cheese.
  • Coat all sides of the chicken with the wheat germ and parmesan cheese mixture.
  • Put on a sheet pan lined with parchment paper.
  • Bake at 425º for 15-20 minutes.
  • Enjoy!

Steps:

  • Soak rice noodles in a bowl of water for 15 minutes.

Leg quarters yield two or three extra bites, and they are visually very satisfying. Bonus: cooking with the bones included gives a lot of flavor. A simple, tasty seasoning blend makes prep a breeze.

2 teaspoons smoked paprika
2 teaspoons granulated garlic
½ teaspoon onion powder
1 teaspoon salt
1 teaspoon freshly ground black pepper
5 (8 ounce) chicken leg quarters
⅓ cup melted unsalted butter

Steps:

  • Preheat the oven to 425 degrees F (218 degrees C). Line a sheet pan with aluminum foil.
  • Stir together smoked paprika, granulated garlic, onion powder, salt, and pepper in a small bowl.
  • Pat chicken leg quarters dry with paper towels. Gently lift the skin and sprinkle in 1/4 to 1/2 teaspoon of the seasoning blend, using a fingertip to spread the seasoning around under the skin. Brush both sides of each leg quarter with melted butter.
  • Evenly sprinkle remaining spice mixture on both sides of each quarter and set cut side up onto the prepared sheet pan.
  • Bake in the center of the preheated oven for 20 minutes. An instant-read thermometer inserted near the bone should read 160 degrees F (71 degrees C).
  • Turn on the broiler and broil each side of the chicken leg quarters until skin is nicely browned, 3 to 4 minutes per side. Test for a final internal temperature with an instant-read thermometer of 165 degrees F (74 degrees C).
  • Transfer chicken leg quarters to a serving plate. Tent with foil and let rest for 5 minutes before serving.

2 whole chicken breasts with skin and bones (about 2 pounds total), halved
1 tablespoon olive oil
3 firm-ripe peaches, quartered
3 medium onions, quartered lengthwise
6 jalapeño chilies, quartered lengthwise and seeded (wear rubber gloves)
6 large garlic cloves
1 lemon, quartered
Accompaniment: basmati rice

Steps:

  • Preheat oven to 450° F.
  • Season chicken breasts with salt and pepper and arrange, skin sides up, in an 18- by 11 1/2-inch roasting pan. Drizzle chicken with oil and roast 20 minutes. Scatter peaches, onions, jalapeños, garlic, and lemon over and around chicken.
  • Reduce temperature to 375° F. and roast chicken, covered with foil, 30 minutes more. Remove foil and roast chicken, basting occasionally with pan juices, until peaches and onions are soft, about 30 minutes more. Transfer chicken mixture to a platter, spooning any pan juices over it.
