1-2/3 cups shelled fava beans
3 cups shelled peas
4 small slices ciabatta bread
A little olive oil
4 generous handfuls salad leaves
A good handful fresh mint leaves
3 oz. pecorino sardo cheese, thinly shaved
Juice of 1 lemon
Salt and freshly ground pepper, to taste
4 Tbs. fruity, peppery olive oil
1 tsp. balsamic vinegar

Steps:

  • Bring a pan of water to a boil, then salt it lightly. Cook the beans in this, drain them, then rinse in cold water. Put more water on and cook the peas. Drain them and mix with the beans. Both peas and beans will need barely more than a couple of minutes if they are small and sweet. Make the dressing by dissolving a good pinch of salt in the juice of the lemon, then using a fork to beat in the olive oil, balsamic vinegar, and a grinding of black pepper (alternatively put all the ingredients in a screw-top jar and shake). Toast the slices of bread on both sides and tear them into short pieces. Drizzle a little olive oil onto each one, then shake over a light dusting of sea salt. Toss the salad leaves and mint in the dressing, then add the peas, beans, and pecorino shavings. Tuck in the toasted ciabatta and serve.

Kosher salt
1 pound sugar snap peas, trimmed, strings removed
Extra-virgin olive oil
1 clove garlic, smashed
Pinch of crushed red pepper
1/4 pound thinly sliced prosciutto, cut into thin strips
1/4 cup red wine vinegar
2 cups lightly packed baby arugula
1/2 small red onion, thinly sliced
1/4 cup shaved pecorino cheese (shaved with a veggie peeler)
8 to 10 fresh mint leaves, cut into a chiffonade

Steps:

  • To blanch the peas, bring a large pot of well-salted water to a boil and set up a large bowl of well-salted ice water. Toss the peas into the boiling water, let the water return to a boil and cook for 2 more minutes. Drain the peas and immediately plunge them into the ice water. When the peas are cold, drain them and lay on paper towels to dry. Cut in half lengthwise and reserve.
  • Coat a medium saute pan with olive oil and add the garlic and red pepper; bring the pan to medium heat and cook for 2 to 3 minutes. Remove the garlic and ditch it - it has fulfilled its garlic destiny! Add the prosciutto to the pan and cook for 3 to 4 minutes or until crispy, then add the vinegar. Turn off the heat.
  • In a large bowl, combine the arugula, snap peas and onion along with the prosciutto and any juices from the pan; toss well. Add the pecorino and mint and taste it. Season with salt if needed and serve.

Sugar Snap Pea Salad With Calabrian Pepper and Fennel image

Whitney Otawka, whom you may remember from "Top Chef" or Hugh Acheson's Five & Ten restaurant in Athens, Ga., cooks at the Greyfield Inn. It's the only place to stay on Cumberland Island, the largest barrier island off Georgia's coast. The farmers who live there grow sugar snap peas, which she welcomes as one of the early tastes of spring. She is also a fan of Calabrian peppers packed in oil, which she started eating at Antico Pizza in Atlanta. She uses them to make a dressing base that enlivens the peas. The fennel, which needs to be sliced very finely, adds crunch and depth. Buy baby fennel, if you can find it. This is a great salad on its own, or use it as a kind of relish on grilled meat or braised lamb. There will be extra chile dressing, which is a fine condiment for grilled chicken. It will also add character to a pasta dish or even a slice of takeout pizza.

1 teaspoon minced garlic
2 teaspoons minced shallot
1 teaspoon deseeded and minced Calabrian peppers packed in oil

1/4 cup fresh lemon juice

1 pound sugar snap peas
1/2 cup thinly shaved fennel, preferably baby fennel

1/2 cup shaved pecorino Romano

Steps:

  • Make the dressing: Heat the grapeseed or other oil in a small sauté pan over low heat. When oil begins to shimmer add the garlic, shallot, Calabrian peppers, lemon zest and thyme. Gently cook for 1 minute, stirring. Remove from heat and transfer to a small mixing bowl. Add the olive oil, lemon juice, salt and pepper. Whisk thoroughly to combine.
  • Make the salad: Wash the snap peas and remove the tough string that runs along the interior curve of the pea. Julienne the peas lengthwise, about 1/4-inch thick. Put the peas, fennel, 2 tablespoons of the dressing and the salt in a bowl and mix to coat the peas. To serve, sprinkle the mint over the top, drizzle on 1 tablespoon of the dressing and sprinkle the shaved pecorino.

1 cup fresh lima beans or 1 cup frozen lima beans
1 cup fresh green peas or 1 cup frozen green pea
1 small lemon, juice and zest of (1 teaspoon zest, 2 1/2 tablespoons juice)
3 tablespoons white wine vinegar
2 green onions, minced
2 tablespoons of fresh mint, chopped plus more for garnish
1 tablespoon fresh chives, chopped

This salad can be made with raw fava beans, as long as they're especially fresh. But blanching them quickly makes them much easier to peel.

3 cups shelled fresh fava beans (from about 3 pounds pods ) or frozen fava beans, thawed
Kosher salt
1/4 cup extra-virgin olive oil
2 tablespoons white wine vinegar
1 ounce Pecorino, shaved or coarsely grated
Freshly ground black pepper

Steps:

  • If using fresh fava beans, cook in a large saucepan of boiling salted water until just tender, about 2 minutes. Drain; transfer to a colander set in a bowl of ice water (do not cook frozen beans). Drain and peel beans.
  • Toss beans, oil, vinegar, and Pecorino in a medium bowl; season with salt and pepper.

  • Whisk garlic, oil, and lemon juice in a large bowl to combine; season dressing with salt and pepper. Add farro, peas, and lettuce to bowl, season with salt and pepper, and toss to coat. Add pea shoots and toss just until coated. Serve topped with Pecorino.
