Categories     Afternoon tea, Drink

Time 15m

Number Of Ingredients 3

200g granulated sugar
5 ripe peaches , 4 stoned and chopped, 1 sliced to serve
4 teabags

Steps:

Time 25m

Yield 9 servings

Number Of Ingredients 4

6 medium peaches (2 pounds)
3 tablespoons fresh lemon juice
2 cups sugar
2 cups water

Steps:

  • Fill a medium saucepan with water and bring to a boil. Place peaches in water for about 15 seconds. Remove with slotted spoon.
  • Place lemon juice in a bowl. Slip skin off peaches with a paring knife. Cut peaches in half and remove pits. Reserve skin and pits. As you work, add peaches to the bowl and coat with lemon juice.
  • Stir together sugar, water, peach skin and pits in a 2 1/2-quart souffle dish. Cook, uncovered, at 100 percent in a high-power oven for 3 minutes. Stir thoroughly, making sure there are no grains on the bottom of the dish. Cover with a lid or microwave plastic wrap. Cook for 6 minutes. Prick plastic, if used, to release steam.
  • Remove from oven and uncover. Let cool. Strain and refrigerate until cold, several hours or overnight.
  • While syrup is cooking, place peach flesh and lemon juice in a blender. Blend until very smooth, stopping several times to scrape down sides of jar. Refrigerate until cold.

PEACH ICED TEA SORBET

Yield Makes about 1 quart

Number Of Ingredients 5

3 cups peeled, pitted, and chopped peaches
2 cups sweetened peach iced tea (bottled or freshly brewed)
1/2 cup sugar (increase to 1 cup if the tea is unsweetened)
1 tablespoon vodka, preferably sweet tea vodka
1 tablespoon light corn syrup

Steps:

  • 1. Purée the peaches in a blender and strain through a fine-mesh sieve into a medium glass or metal bowl, pressing on the solids with a rubber spatula to remove as much liquid as possible. Discard the solids. You should have about 2 cups of purée. Add the tea, sugar, vodka, and corn syrup and stir until the sugar dissolves. Cover and refrigerate until the mixture is very cold (under 40°F), at least 4 hours, then mix well.
  • 2. Churn the sorbet in an ice cream maker according to the manufacturer's instructions. When finished, the sorbet will be thick and soft and can be served as a slushy. To make the sorbet firm enough to scoop, transfer into an airtight container, press plastic wrap directly onto the surface of the sorbet, and freeze until firm.

HOMEMADE PEACH ICED TEA

Homemade Peach Iced Tea image

Categories     beverage

Time 2h40m

Yield 4 to 6 servings

Number Of Ingredients 5

2 cups/500ml sugar
6 peaches, halved and pitted
1 vanilla bean, split lengthwise and seeds scraped
1 tablespoon/15ml loose green or black tea leaves or 4 tea bags
Split vanilla beans, for garnish

Steps:

  • Bring 3 cups (750ml) water and the sugar to a boil in a pot. Add the peaches and vanilla bean (including the seeds). Simmer over medium heat for about 30 minutes.
  • Discard the vanilla bean. Pour the peaches and syrup into a blender and puree until smooth. Strain the peach puree through a sieve into a pitcher.
  • Bring 4 cups (1 liter) water to a boil in a small saucepan. Remove from the heat, add the tea and steep according to the package directions. Strain to remove the tea leaves, then add the tea to the pitcher with the peach puree. Stir to combine. Refrigerate until cold.
  • The pulp from the fruit may have separated from the tea during chilling, so be sure to stir it before serving. Pour over ice cubes in tall glasses and garnish with vanilla beans.
  • Cook's Note: When blending hot liquids, remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.
