ROASTED PEAR QUICK BREAD

Roasted Pear Quick Bread image

Roasted pears add juiciness and depth of flavor to this otherwise simple quick bread. You can peel the pears if you want, but they add a sturdiness to the roasted fruit and a nice texture to the finished loaf. The addition of streusel takes this bread over the top, but it is excellent without it, too, if you feel like skipping a step.

Categories     cakes, quick breads, dessert

Time 2h

Yield 8 servings

Number Of Ingredients 21

2 1/2 cups/355 grams chopped pears (from about 2 medium pears, cored and cut into 1/2-inch pieces)
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
Pinch of fine sea salt
1/4 cup/25 grams old-fashioned oats
1/4 cup/55 grams light brown sugar
1/4 cup/30 grams all-purpose flour
Pinch of ground cinnamon
3 tablespoons cold unsalted butter, cut into 1/4-inch cubes
1/3 cup/45 grams coarsely chopped almonds
2 1/2 cups/320 grams all-purpose flour
2 teaspoons ground cinnamon
1 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine sea salt
1/2 cup/120 milliliters vegetable, or other neutral, oil
2 tablespoons unsalted butter, melted, plus more for greasing the pan
1 cup/220 grams light brown sugar
2 large eggs, at room temperature
1/2 teaspoon almond extract (optional)
3/4 cup/180 milliliters buttermilk

Steps:

  • Make the roasted pears: Heat the oven to 400 degrees. On a large baking sheet, toss the pears with the melted butter, vanilla and salt and spread in an even layer on the pan. Transfer to the oven and roast until pears are tender and beginning to brown at the edges, about 15 minutes. Remove from the oven and cool to room temperature.
  • While the pears cool, make the streusel: In a medium bowl, stir together the oats, brown sugar, flour and cinnamon to combine. Add the cubes of cold butter and use a pastry cutter or your hands to work the butter into the other ingredients until the mixture becomes clumpy. Stir in the almonds. Set aside.
  • Make the quick bread: Lightly grease a 9-by-5-inch loaf pan, and lower the oven temperature to 350 degrees. In a medium bowl, whisk together the flour, cinnamon, baking powder, baking soda and salt to combine. Set aside.
  • In a large bowl and using an electric mixer, or in the bowl of a stand mixer fitted with the paddle attachment, beat the oil, butter and brown sugar until well combined, about 1 minute. Add the eggs one at a time and mix well to incorporate after each addition, scraping the bowl as necessary. Beat in the almond extract if using.
  • With the speed on low, gently add in half the flour mixture and mix until incorporated. Add the buttermilk in a slow, steady stream and mix to combine, then add the remainder of the flour mixture and mix until just incorporated. Add the cooled roasted pears and use a rubber spatula to gently fold them into the batter. Pour the batter into the prepared loaf pan and spread in an even layer.
  • Sprinkle the streusel evenly over the loaf. Bake the quick bread until a toothpick inserted into the center comes out clean and the streusel is golden brown, 55 to 65 minutes. If the streusel is getting too dark before the interior is fully baked, tent with foil. Let cool for 20 minutes in the pan, then unmold onto a cooling rack to cool completely before slicing and serving.

Yield Makes 6 shortcakes

Number Of Ingredients 20

Pears
4 firm Anjou or Bosc pears (about 1 3/4 pounds), peeled, halved, cored, each half cut into 6 wedges
1/2 cup strained apricot preserves
6 tablespoons dark brown sugar
2 tablespoons fresh lemon juice
1 1/2 tablespoons water
1/2 teaspoon ground cinnamon
3/4 cup fresh or frozen cranberries
Biscuits

6 tablespoons chilled unsalted butter, cut into 1/2-inch cubes
6 tablespoons chilled buttermilk
1 large egg, beaten to blend (for glaze)
1 1/4 cups chilled whipping cream
1/4 cup powdered sugar

Steps:

  • For pears:
  • Preheat oven to 400°F. Combine first 6 ingredients in 13x9x2-inch glass baking dish; toss to blend. Cover dish with foil and bake until pears are tender, stirring occasionally, about 40 minutes. Uncover. Mix in cranberries and bake until cranberries are tender but still hold shape, about 15 minutes. Cool fruit mixture. Maintain oven temperature.

Pat out dough on floured surface to scant 3/4-inch thickness. Using 2 3/4-inch-diameter cutter, cut out 4 biscuits. Gather scraps; pat out to scant 3/4-inch thickness. Cut out 2 more biscuits.
  • Arrange biscuits on prepared sheet; brush with beaten egg. Bake until golden brown and tester inserted into center comes out clean, about 15 minutes.
  • Beat cream and powdered sugar in medium bowl to stiff peaks. Cut biscuits horizontally in half. Place bottoms on plates. Top each with pear mixture, whipped cream, then biscuit tops.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cake Recipes

Time 1h

Number Of Ingredients 12

1 1/2 cups all-purpose flour (spooned and leveled), plus more for dusting
1/2 cup yellow cornmeal
2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon fine salt
2 tablespoons granulated sugar, plus more for sprinkling
1/2 cup (1 stick) cold unsalted butter
1 cup buttermilk, plus more for brushing
1 cup cold heavy cream
2 tablespoons confectioners' sugar
1 1/2 pounds peaches, halved, pitted, and cut into 1/4-inch slices (5 cups)
5 ounces blueberries (3/4 cup)

Steps:

  • Preheat oven to 400 degrees. In a medium bowl, whisk together flour, cornmeal, baking powder, baking soda, salt, and granulated sugar. Using the large holes on a box grater, grate butter into flour mixture. Using your fingers, incorporate butter into flour mixture, breaking it into even smaller pieces. With a fork, stir in buttermilk until dough just comes together. Lightly flour a rolling pin and work surface and roll out dough to a 3/4-inch-thick rectangle. Cut into 6 squares (or rectangles).
  • Place dough squares, 3 inches apart, on a parchment-lined baking sheet. Brush tops with buttermilk and sprinkle with granulated sugar. Bake until shortcakes are golden and puffed, 17 to 20 minutes. Let cool completely on a wire rack.
  • In a medium bowl, using an electric mixer, beat cream and confectioners' sugar on high until stiff peaks form, about 3 minutes. Cut shortcakes in half horizontally. Divide peaches among bottom halves, top with whipped cream and blueberries, and sandwich with top halves.

ROASTED PEARS WITH FRESH CRANBERRIES

Roasted Pears With Fresh Cranberries image

Oven baked pears with slightly sweet/spiced pink syrup and whole cranberries. I found this recipe years ago in a news paper and clipped it out. Took me a while to make it, but once I did, I knew it was a keeper. I then washed the jeans I was wearing when cooking and melted the news paper. I did a search on the net, but could not find it there. So I had to quickly write down the recipe before I forgot it. So hear it is for me to always have. Hope you enjoy it as well.

ROASTED PEARS WITH CARAMEL SAUCE

Roasted Pears with Caramel Sauce image

This golden, glossy delight could not be easier to make. All major varieties of pears - Bartlett, Bosc, red, Anjou - work equally well. However, Bosc roasts up slightly firmer than the others.

Provided by USA WEEKEND columnist Pam Anderson

1 cup packed dark brown sugar
4 pears, halved and cored
½ cup sour cream
¼ cup coarsely chopped toasted pistachios (or your favorite nuts)

  • Remove pan from oven, turn pears over and baste with pan sauce. Return to oven; bake until golden and glossy, about 10 minutes longer.

ROASTED AND CARAMELIZED PEARS

Roasted and Caramelized Pears image

Provided by Florence Fabricant

Categories     dessert, side dish

Time 1h30m

Yield 6 servings

Number Of Ingredients 7

1 lemon
6 Bosc pears
1 1/2 cups sugar
1 tablespoon cider vinegar
1/2 cup water
1/4 cup heavy cream
Vanilla ice cream or frozen yogurt

Steps:

  • Fill a large bowl with water and squeeze a lemon into it. Peel each pear, leaving a small crown of skin around the stem. Carefully core each, keeping pear intact. As the pears are peeled, place in the water.
  • Preheat oven to 450 degrees.
  • In large nonreactive ovenproof skillet, combine sugar, vinegar and 1/2 cup of water. Cook, without stirring, over medium heat until mixture is lightly caramelized. Remove from heat.
  • While caramel is cooking, remove pears from water, draining them well. When caramel is done, roll pears in caramel, turning them with 2 wooden spoons. Do not touch caramel. Stand pears up in the pan, place pan in oven, and roast pears about 45 minutes, basting them frequently with caramel in the pan, until they are tender and golden brown. Keep the basting spoon in a dish of warm water to prevent it from getting sticky.
  • Using wooden spoons, carefully transfer pears to a rack placed over a sheet of foil, and allow them to drain. Return skillet to top of stove, whisk in the cream and bring to a simmer. Set aside until ready to serve.
  • Serve pears with warm sauce and vanilla ice cream or frozen yogurt on the side.
