PEACH CRUMB PIE

5 large, ripe but firm peaches, peeled, pitted and sliced (3 pounds)
3/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 cup cornstarch
Juice of 1/2 lemon
1/4 cup all-purpose flour
1/4 cup packed light brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon allspice
Pinch salt
4 tablespoons unsalted butter, cut into small cubes
1/3 cup sliced almonds
1 roll store-bought pie dough (recommended: Pillsbury)
2 tablespoons unsalted butter, thinly sliced

Steps:

  • Heat the oven to 375 degrees F.
  • To make the filling:
  • In a large bowl, combine the peaches, sugar, and cinnamon. Add the cornstarch to a small bowl and whisk in the lemon juice so no lumps remain. Pour the cornstarch mixture over the peaches and toss. Let the peaches sit for 15 minutes while you roll out the pie dough and make the streusel topping.
  • To make the topping:
  • Mix the flour, brown sugar, cinnamon, allspice, and salt in a large bowl. Blend the butter into the mixture with your fingers until it forms pea-size lumps and looks crumbly. Stir in the almonds.
  • To assemble:
  • Roll out the dough an extra inch on a lightly-floured surface. Place the dough in the bottom of a 9-inch pie pan. Crimp edges as desired.
  • Pour the pie filling into the pie shell and sprinkle the streusel topping over the pie. Dot the top with sliced butter. Bake for 45 to 50 minutes. Remove from the oven and let cool before serving.

1 1/4 cups sugar
1 teaspoon grated lemon peel
3 tablespoons lemon juice
1 frozen pie crust (9 inch)
1/2 cup Gold Medal™ all-purpose flour
1 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/4 teaspoon ground mace
1/3 cup cold butter or margarine

Steps:

  • Heat oven to 350°F. In large bowl, gently toss pears, 3/4 cup of the sugar, the lemon peel and lemon juice. Spoon into frozen pie crust.
  • In medium bowl, mix flour, remaining 1/2 cup sugar, the nutmeg, cinnamon and mace. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture looks like coarse meal. Sprinkle evenly over pears. Place pie on cookie sheet.
  • Bake 1 hour or until pears are tender and topping is lightly browned. Cool on cooling rack about 2 hours.

Nonstick cooking spray
4 small ripe pears, such as Anjou or Forelle (about 2 pounds)
36 (6-inch) wooden skewers
1/2 cup granulated sugar
1/2 cup light brown sugar
3/4 cup dark corn syrup
4 tablespoons unsalted butter
1 cup heavy cream, divided
1/2 vanilla bean or 1 teaspoon pure vanilla extract
1/4 teaspoon freshly ground nutmeg
Pinch salt
Black sesame seeds for eyes
Pink or yellow candy buttons, for decoration nose

Steps:

  • Line a sheet pan with parchment paper or foil. Spray with nonstick cooking spray.
  • Just before you make the caramel, core and cut pears into eight wedges, blunting the cut side so that it can lay on a flat surface peel side up. Place a skewer into each wedge, cover with paper towel, and set aside.
  • Combine sugars, corn syrup, butter, 1/2 cup heavy cream, vanilla and nutmeg in a heavy sauce pot. Bring to a boil over medium-high heat, stirring constantly with a wooden spoon. When the mixture has come to a brisk boil, slowly add in the remaining cream, keep the mixture boiling. Be sure to wipe any extra sugar from the side of the pot. Clip a candy thermometer to the side of the pot with the tip immersed. Boil the mixture briskly, stirring gently, until the mixture registers 240 degrees F on the candy thermometer, about 10 minutes. Immediately remove from the heat. Pour the caramel into a medium heat proof bowl using a rubber spatula so that you do not scrape the bottom of the pot. Let caramel rest until it thickens and cools slightly, about 3 minutes.
  • Blot excess moisture from the pears using the paper towels. Dip pears completely into caramel, swirling until it is fully coated, allow excess to drip off slightly. Place on prepared sheet pan. Decorate with black sesame seeds for eyes and candy button noses, while the caramel is still soft. Repeat until all the pears are dipped. Allow to cool until firm about 30 minutes. Serve.

This is one of my family's greatest recipes. It is about 30 times better than apple pie, especially if you use fresh nutmeg. You can certainly substitute the pears for peaches too, if they're in season. Let cool or serve warm with a scoop of vanilla ice cream.

I wanted to make a pear pie with a pecan crumb topping, but sometimes the sweetness of such a topping can make a plain fruit filling seem tart. Inspiration came from a jar of pear cinnamon caramel dessert sauce I had in my fridge. The flavors blend perfectly, and the pecans give a nice crunch to the topping. We also have heart-health issues in my family, so unlike most crumb recipes, this one doesn't use butter.

1 pastry for single-crust pie
1 tablespoon white sugar
6 large pears
1 teaspoon lemon juice
1/4-1/3 cup caramel sauce (like ice cream topping or apple dip)
1/2 cup pecans, finely chopped
1/3 cup brown sugar
1/4 cup plus 1 tablespoon flour
1/4 teaspoon salt
1 teaspoon cinnamon, divided

Steps:

  • Preheat oven to 375 F for 9-inch or 10-inch pie (350 F if using smaller or dark metal pan).
  • Prepare pie crust, crimping edges. Sprinkle with sugar, gently shaking pan if necessary to get sugar up sides of crust. Sprinkle lightly with 1/4 teaspoon cinnamon. Set aside.
  • Peel, core and chop pears. Sprinkle with lemon juice and 1 tablespoon flour and toss to distribute. Dump into crust and smooth with spatula.

  • Let cool completely before slicing as filling will be very juicy.
