SWEET AND SALTY PEPITAS

Steps:
- Preheat the oven to 400 degrees F. Line a rimmed baking sheet with foil and lightly oil the foil.
- Melt the butter in a saute pan over medium heat. Add the pepitas, toss to coat in the butter and then add the sugar, cinnamon, ginger, allspice, cloves and 1 teaspoon salt. Spread the pepitas on the prepared baking sheet in 1 layer and bake, stirring once or twice, until golden brown all over, 12 to 15 minutes. Let cool completely.
PINA ASADA
Sometimes you can get this as street food in Latin America. Sometimes it is combined with Recipe #170308 for a very elegant dessert--with the custard filling the center of the pineapple ring and fresh mint garnishing the plate.

Steps:
- Pre-heat the broiler (this can also be made on an outdoor grill).
- Using a large, sharp knife, cut off the leaves of the pineapple; slice a bit off the base so as to make it steady; and then, slicing from top to bottom on the bias, remove as much of the 'eyes' as possible.
- Turn the pineapple on its side and slice it into 1/2" rounds.
- Using a paring knife or a biscuit cutter, core the slices.
- Arrange the pineapple rings on a sheetpan covered with foil.
- Or, drain a can of pineapple rings and place them on the sheet pan lined with foil--but it won't be as much fun.
- In a small bowl, mix the remaining ingredients together.
- Brush the pineapple with half the mixture and broil it for about two minutes.
- Carefully turn the slices, coat the second side with the glaze and broil that side until carmelized and bubbly.
- Enjoy!

- Prepare grill.
- Trim roots and ends from spring onions or scallions, leaving about 8 inches of stalk. Onions or scallions may be prepared up to this point 6 hours ahead and chilled in a sealed plastic bag.
- In a sealable plastic bag or large bowl toss onions or scallions with oil and salt. Grill onions or scallions on a rack set 5 to 6 inches over glowing coals, turning them with tongs 3 or 4 times, 5 to 7 minutes, or until softened and lightly charred. (Alternatively, onions or scallions may be broiled on rack of a broiler pan about 3 inches from heat, turning them with tongs 2 or 3 times, 10 to 12 minutes.)
- Transfer onions or scallions to a platter and squeeze 4 lime wedges over them. Garnish platter with additional lime wedges.
CITRUS ASADA FAJITAS
This is a perfect way to cook during the week; low prep time and no mess to clean up. Serve on homemade tortillas and all your fixins.

- Whisk orange juice, cumin, chile pepper, and sea salt together in a bowl and pour into a resealable plastic bag. Add the steak, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 24 hours.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate. Remove steak from marinade and discard marinade.
- Cook the steak until it starts to firm and is reddish-pink and juicy in the center, 3 to 4 minutes per side. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C).

DELICIOUS CARNE ASADA
I got this carne asada recipe from my friend's mother in Phoenix. This recipe will marinate 5-6 pounds of meat and can be halved or doubled. Serve this with flour tortillas and salsa.

- Place beef in a large resealable plastic bag.
- Combine water, orange slices, orange juice, lime juice, vinegar, lime slices, cilantro, oil, salt, garlic, white pepper, black pepper, oregano, cumin, chili powder, and cloves in a large bowl. Whisk to combine. Pour marinade on top of the beef and seal the bag.
- Marinate beef in the refrigerator, 2 hours to overnight.
- Preheat an outdoor grill for medium heat and lightly oil the grate. Grill beef over direct heat until firm and slightly pink in the center, 2 to 3 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C) for medium.

- Add 2 cups of hulled pepitas to a mixing bowl along with 2 teaspoons New Mexican chili powder, 1/2 teaspoon Chipotle powder, 1/8 teaspoon Ancho powder, 1/8 teaspoon garlic powder, and 1 teaspoon salt. Combine well and then add 1 tablespoon of oil (I used olive oil). Mix well.
- Form a single layer of pepitas on a baking sheet. I typically use parchment paper for easier clean-up.
- Bake at 350F for 12-15 minutes or until the pepitas have turned golden brown. I usually give them a stir halfway through the baking period.

- Toss pepitas, olive oil and salt together so well coated. Layer out your pepitas flat on a lined baking sheet (just so easy for cleanup).
- Bake for 12-15 minutes. Set your timer for 5 minutes and toss so all sides of the pepitas get toasty.
- Allow Pepitas to Cool and enjoy. Store in a sealed container or zipper bag at room temperature for up to couple of days at room temperature. For storage up to a week, place in the refrigerator. You may also freeze the easy roasted pepitas. (However, we have never had these last more than a couple of days)
