MARY'S GRILLED CHEESE SANDWICH WITH PEPPER JACK AND BACON OIL
Steps:
- Brush both sides of both slices of bread with the bacon oil. Place the cheese on top of one slice and top with the other slice of bread.
- Heat a griddle on top of the stove over medium-high heat. Place the sandwich on the griddle and grill for about 1 minute on each side, or until the bread is golden brown and the cheese is melted. Slice the sandwich into 8 small serving pieces.

- Spoon egg product mixture evenly onto 2 of the muffin halves.
- Top each with 1-1/2 tsp. salsa and one 2% Milk Singles. Cover with remaining muffin halves.

- Heat a griddle over medium heat.
- Melt 2 tablespoons of the butter in a nonstick skillet over medium-low heat. Mix the half-and-half, eggs and a good pinch of salt and pepper in a measuring cup. Gently pour the mixture into the skillet. Turn the heat to low, cover and wait until the eggs are set, 4 to 5 minutes.
- While the eggs cook, add the sausage patties to one half of the griddle and cook until heated through, about 2 minutes per side. Grease the other half of the griddle with the remaining 2 tablespoons butter. Add the bagels, cut-side down, and toast until golden, 1 to 2 minutes. Remove the bagels and sausage to a board.
- Roll the eggs into an omelet to fit the width of the bagels and cut into 4 pieces.
- To build, spread 1 tablespoon of chipotle mayonnaise on the bottom half of a bagel. Top with a sausage patty, 1/2 slice of the American and 1/2 slice of the pepper jack cheese. Top with a slice of the rolled omelet, a slice of tomato and a few slices of avocado. Sprinkle some of the everything seasoning over the avocado. Place the other half of the bagel on top. Assemble the other 3 sandwiches, then serve.

- Warm a medium-large skillet over medium heat. Add the butter and when it has melted, use a spatula to coat the pan with it. Add the eggs, keeping them separate if possible. Sprinkle with salt and pepper and cover with lid. Cook for about 2-3 minutes, until the whites are almost cooked. Gently flip them over now* and place a tablespoon of shredded cheese and about a half tablespoon of on top of each egg. Cover again to melt the cheese and finish cooking the eggs for 1-3 minutes, depending on how you like your eggs cooked.
- While the cheese is melting, warm the biscuits and either add the ham slices to the skillet next to the eggs or warm them in the microwave for 10-15 seconds. Place a slice of ham on each biscuit half and then top with the cheesy eggs. Cover with the second half of the biscuit. Enjoy!
- * if you aren't comfortable flipping the eggs, you can add a tablespoon of water to the skillet and cover again with the lid. This will steam the tops of the eggs without the hassle of flipping them. Once the tops are white, add the cheese and chile.
