PEROGIES CASSEROLE - MEAL IN ONE
This is a meal-in-one easy casserole to make. Make ahead and keep it in the fridge until 1 hour before serving. Allow 15 minutes to let the cassserole dish get to room temperature before popping it into the oven. Add more or less veggies; vary the veggies. I like these veggies because it make a very attractive casserole.

Steps:
- Pop the perogies into boiling salted water; stir so they do not stick to the bottom of the pot; bring back to a boil and when they float to the top, add the carrots to the pot. Allow to cook for 5 minutes longer Drain carrots and perogies.
- Meanwhile heat a skillet, add 1 tsp oil and saute the onions and mushrooms until the onions are translucent. Add the peppers and saute another two minutes.
- Mix the perogies and onion mixture together.
- Pour into a lightly oiled large casserole dish (9"x14"x3").
- Arrange the tomatoes, broccoli, and cauliflower artistically on top of the perogies.
- Sprinkle evenly with the cheese.
- Cover and bake in a 350 degree fahrenheit oven for 30 minutes.
- Uncover and bake a further 15 minutes, allowing the cheese to slightly brown.
- Serve with salsa, sour cream and, if you wish, bacon bits. Just let everyone add their own at the table.

EASY PEROGIE CASSEROLE
This recipe came from the back of a Permo (TM) Perogie bag. I've modified it to work for me. I love it because it tastes delicious, and tastes great.

Steps:
- Preheat oven to 350°F.
- Place perogies at the bottom of a pie plate or casserole dish.
- Cover with pasta sauce.
- Chop the meat slices into little bits and cover the pasta sauce.
- Spread Parmesan cheese on top, followed by the cheddar.
- Place in oven and bake for 20 minutes.
- Take out and let cool for a couple minutes than enjoy!

- Prepare perogies as per package directions for boiled perogies.
- Drain.
- In a large skillet, heat oil.
- Add onions and mushrooms.
- Cook until soft and golden.

- Saute butter, onion, and pepper in a skillet for five minutes.
- In a medium casserole dish, combine perogies, onion, pepper and ham.
- Mix milk and soup in a separate dish.

LAZY PEROGIES CASSEROLE
This is a big hit at my house and the first time I made it, my son asked me why I hid this from them and why didn't I ever make it before. It's extremely filling though so watch out! One tip is to make sure you start with thawed perogies. Usually when I start making it, I throw the bag into cold water before hand. Also you can substitute real bacon or ham instead of turkey bacon. I don't use the pepper but that's due to my kids' preference so it might be really good!

Steps:
- In a small skillet melt butter or margarine and sauté onion, garlic, turkey bacon and green pepper for 5 minutes.
- In a medium size casserole dish, combine thawed perogies, onion, turkey bacon and green pepper.
- Combine milk, mushroom soup and sour cream in a bowl.
- Pour over perogie mixture.
- Top with cheddar cheese.
- Bake covered for 35 minutes at 175ºC (350ºF), then the last 10 minutes, bake uncovered. Or microwave until heated through.
