Chicken with pesto wrapped in bacon. My husband and even my 2-year-old daughter love this chicken! Easy to make, yet tastes like you've spent hours in the kitchen. Simply delicious!

6 skinless, boneless chicken breast halves - pounded flat
salt and ground black pepper to taste
6 tablespoons prepared basil pesto
6 slices bacon
½ cup vegetable oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Lay a chicken breast out flat, and sprinkle with salt and black pepper. Spread pesto sauce over the chicken breast, and roll the chicken breast in a slice of bacon, securing the roll with toothpicks. Lay the rolled chicken breast into a 9x9-inch baking dish. Repeat with remaining chicken breasts. Pour the vegetable oil over the chicken breasts.
  • Bake in the preheated oven until the chicken is no longer pink inside and the bacon is crisp, about 30 minutes. An instant-read thermometer inserted into the center of a roll should read at least 160 degrees F (70 degrees C).

12 sheets phyllo dough (14x 9-inch size)
1/2 cup butter, melted, divided
6 boneless skinless chicken breast halves (7 ounces each)
Pepper to taste
1 jar (10 ounces) basil pesto
6 slices Monterey Jack cheese

Steps:

  • Brush two phyllo sheets with butter; stack one sheet on the other. Brush top with butter. Form five additional stacks. , Flatten chicken; place one piece of chicken on each phyllo stack, with the long side of chicken 1 in. from the long side of the phyllo. Sprinkle with pepper. Place 2 tablespoons pesto on each; top each with a slice of cheese. Fold bottom edge of phyllo over chicken; fold in short sides and roll up. , Place seam side down in a greased 15x10x1-in. baking pan. Brush with remaining butter. Bake, uncovered, at 375° for 45-50 minutes or until chicken juices run clear and pastry is golden brown.

  • For pesto: Char peppers over gas flame or in broiler until blackened on all sides. Wrap in a paper bag and let stand 10 minutes. Peel and seed peppers. Grind roasted peppers, spinach, cheese, pine nuts, garlic and chipotle chilies in a food processor. With processor running, add oil; process until blended. Season with salt and pepper. For garlic sauce: Bring broth and whipping cream to a boil in a small saucepan. Add garlic and basil; simmer until sauce thickens slightly, about 20 minutes. Season with salt and pepper. ( Pesto and garlic sauce can be made 1 day ahead. Press plastic onto surface of presto; refrigerate. Cover sauce; refrigerate.) For chicken: Preheat oven to 400. Place 1 phyllo sheet on work surface so that 1 long side is parallel to edge of work surface (cover remaining phyllo with plastic wrap and damp towel.) Brush phyllo lightly with melted butter. Fold in half crosswise like a book. Brush with melted butter. Place 1 chicken breast so that 1 long side is 2 & quot; from bottom of phyllo, centering between sides of phyllo. Season chicken with salt and pepper. Spoon 1generous tablespoon of pesto over chicken. Sprinkle with ¼ cup cheese. Fold bottom of phyllo over chicken. Fold short sides of phyllo over chicken. Roll up jelly roll style. Place seam side down on large baking sheet. Brush with melted butter. Repeat with remaining phyllo, chicken, pesto & cheese; refrigerate remaining pesto for another use. Bake until chicken is cooked through and phyllo is golden, about 25 minutes. Transfer to plates. Bring garlic sauce to a simmer. Spoon sauce onto each dinner plate, reserving some for a gravy boat type dish. Place chicken in center of garlic sauce. Garnish with fresh whole basil leaves.

1/4 cup butter
1 large onion, chopped
1 (4 ounce) can sliced mushrooms, drained
2 tablespoons parsley flakes
1 1/2 tablespoons finely chopped fresh dill
1 garlic clove, minced
1 (10 ounce) package frozen chopped spinach, cooked & drained well
1 1/2 tablespoons all-purpose flour
1/3 cup vermouth or 1/3 cup dry white wine
1 cup ricotta cheese
1/2 cup feta cheese
salt & pepper
1/2 cup melted butter
12 sheets phyllo dough
dry breadcrumbs

Steps:

  • Pound chicken breasts between 2 pieces of plastic wrap to 1/4 inch thickness.
  • Heat oil in large skillet over medium heat; add chicken; cook until brown on both sides; remove & drain on paper towels then set aside.
  • Wipe out skillet, then melt 1/4 cup butter in same skillet over medium heat.
  • Add onion; cook and stir until golden; add mushrooms, parsley flakes, dill, garlic and spinach; cook and stir about 2 minutes.
  • Stir in flour, mixing well. Gradually stir in vermouth; cook, stirring constantly, until thickened; stir in ricotta, feta, salt and pepper; remove from heat.
  • Preheat oven to 350°F
  • Brush melted butter on 1 phyllo sheet; sprinkle with bread crumbs; cover with another sheet; brush with butter.
  • Place chicken breast in center of phyllo; spoon 1/6 of the spinach/cheese mixture on top.
  • Fold phyllo over chicken, turning ends under; repeat for each chicken breast.
  • Place in a single layer in well greased baking pan & brush tops with butter. Bake for 45 minutes or until brown.

Steps:

  • Preheat oven to 375°F. Place 1 phyllo sheet on work surface. (Keep remaining phyllo covered with plastic wrap and damp towel.) Brush phyllo lightly with butter. Top with second phyllo sheet. 3/4 cup mayonnaise
3 tablespoons lemon juice
1-1/2 teaspoons minced garlic, divided
1/2 teaspoon dried tarragon
2/3 cup butter, melted
12 sheets sheets phyllo dough (14 inches x 9 inches)
6 boneless skinless chicken breast halves (4 ounces each)
Salt and pepper to taste
2 tablespoons grated Parmesan cheese

Steps:

  • In a small bowl, combine the onions, mayonnaise, lemon juice, 2 garlic cloves and tarragon; set aside. in another small bowl, combine the butter and remaining garlic., Place one sheet of phyllo dough on a work surface with a short edge facing you. Brush with 2 teaspoons butter mixture; brush to distribute evenly. Repeat with one more sheet of phyllo, brushing with another 2 teaspoons of butter mixture (Keep remaining phyllo dough covered with plastic wrap to avoid drying out)., Lightly sprinkle chicken breasts with salt and pepper.
