1 cup sugar
2 tablespoons cornstarch
2 tablespoons Pillsbury BEST® all-purpose flour
1 cup water
2 egg yolks, beaten
1 tablespoon butter or margarine
1/2 teaspoon grated lemon peel
1/4 cup lemon juice
1 cup white vanilla baking chips or chopped white chocolate baking bar (6 oz)
1 package (8 oz) 1/3-less-fat cream cheese (Neufchâtel), softened
1/2 cup whipping cream
1 tablespoon sliced almonds, toasted*

Steps:

  • Heat oven to 450°F. Make pie crust as directed on box for One-Crust Baked Shell using 9-inch glass pie pan. Bake 9 to 11 minutes or until light golden brown. Cool completely, about 30 minutes.
  • In 2-quart saucepan, mix sugar, cornstarch and flour. Gradually stir in water until smooth. Cook over medium heat, stirring constantly, until mixture boils. Reduce heat to low; cook 2 minutes, stirring constantly.
  • Remove from heat. Stir about 1/4 cup hot mixture into egg yolks until well blended. Stir egg yolk mixture into mixture in saucepan. Cook over low heat, stirring constantly, until mixture boils. Cook 2 minutes, stirring constantly.
  • Remove from heat. Stir in butter, lemon peel and lemon juice. Place 1/3 cup hot filling in 1-quart saucepan; cool remaining lemon mixture 15 minutes. Stir vanilla chips into hot filling in 1-quart saucepan; cook and stir over low heat just until chips are melted.
  • In small bowl with electric mixer, beat cream cheese on medium speed until fluffy. Beat in melted vanilla chip mixture until well blended. Spread in bottom of cooled baked shell. Spoon lemon mixture evenly over cream cheese layer. Refrigerate until set, 2 to 3 hours.
  • In another small bowl with electric mixer, beat whipping cream on high speed until stiff peaks form. Pipe or spoon whipped cream over pie. Garnish with toasted almonds. Store in refrigerator.

2 teaspoons grated lemon peel
1/2 cup fresh lemon juice (from 2 to 3 medium lemons)
3 cups whipping cream, divided
4 drops yellow food color, if desired

Steps:

  • Heat oven to 450°F. Make pie crust as directed on box for One-Crust Baked Shell using 9-inch glass pie plate. Bake 9 to 11 minutes or until lightly browned. Cool completely, about 15 minutes.
  • In medium bowl, mix condensed milk, lemon peel and lemon juice; set aside. In large bowl, beat 2 cups of the whipping cream and the food color with electric mixer on high speed until stiff.
  • Fold lemon mixture into whipped cream just until blended. Spoon into crust. Cover; refrigerate at least 3 hours until set.
  • In medium bowl, beat remaining 1 cup whipping cream with electric mixer on high speed until stiff. Spoon dollops on pie or slices of pie when serving. Store covered in refrigerator.

2 tablespoons Fisher® Chef's Naturals® finely chopped pecans
1/2 cup granulated sugar
2 tablespoons cornstarch
1/2 cup water
2 tablespoons LAND O LAKES® Butter
1 egg yolk, beaten
1/4 to 1/3 cup lemon juice
2 package (3 oz) cream cheese, softened
1/4 cup powdered sugar
1/2 teaspoon lemon extract
1 container (8 oz) frozen whipped topping, thawed
1 tablespoon milk
3 cups fresh raspberries, or frozen (thawed) raspberries without syrup, dried on paper towels
Mint sprigs, if desired

Steps:

  • Heat oven to 450°F. Make pie crust as directed on box for One-Crust Baked Shell, using 9-inch glass pie plate--except press pecans in bottom of crust. Generously prick crust with fork. Bake 9 to 11 minutes or until light golden brown. Cool 15 minutes.
  • Meanwhile, in 1-quart saucepan, mix granulated sugar and cornstarch. Stir in water, butter and egg yolk. Cook over medium heat, stirring constantly, until mixture boils and thickens. Boil 1 minute. Remove from heat. Stir in lemon juice. Pour into cooled baked shell. Refrigerate 1 hour.
  • In small bowl with electric mixer, beat cream cheese, powdered sugar and lemon extract on medium speed until smooth. On low speed, beat in whipped topping until well blended. Beat in milk until topping mixture is smooth and spreading consistency. Spread thin layer of topping around edge of crust over cooled filling.
  • Reserve 8 whole raspberries for garnish. Arrange remaining raspberries over top of filling. Spoon and gently spread remaining topping over raspberries. Garnish with mint sprigs and reserved raspberries. Refrigerate 2 hours before serving. Cover and refrigerate any remaining pie.

1 (18 ounce) roll Pillsbury sugar cookie dough (3 inches )
1 medium lemon
3/4 cup sugar
6 tablespoons butter or 6 tablespoons margarine
2 eggs, beaten

Steps:

  • Heat oven to 350°F
  • Lightly grease 24 small tart pans or miniature muffin cups.
  • Remove cookie dough from wrapper.
  • Place 1 rounded teaspoon of dough in each tart pan; gently press in bottom and up side.
  • Place tart pans on cookie sheet.
  • Bake at 350°F for 7 to 9 minutes or until light golden brown.
  • Cool 1 minute; carefully remove cookie tart shells from tart pans and place on wire racks.
  • Grate peel from lemon (about 4 to 5 teaspoons); set aside.
  • Squeeze juice from lemon, adding water if necessary to equal 1/4 cup; place in 2-quart saucepan.
  • Stir in sugar and butter.
  • Heat over medium heat until butter is melted.
  • Remove from heat; stir in beaten eggs. Cook over low heat, stirring constantly, until mixture thickens.
  • Stir in lemon peel. Cool slightly, about 15 minutes. (Lemon filling can be refrigerated at this point until ready to serve).
  • To serve, spoon about 1 tablespoon lemon filling into each cookie tart; place on serving plate.* Garnish as desired.

2 tablespoons margarine or butter
1 tablespoon grated lemon peel
1/2 cup fresh lemon juice
MERINGUE
3 egg whites
1/4 teaspoon cream of tartar
1/2 teaspoon vanilla extract
1/4 cup sugar

Steps:

  • 1. Heat oven to 450°F. Prepare pie crust for one-crust baked shell using 9-inch pie pan. Bake at 450°F. for 9 to 11 minutes or until light golden brown. Cool 30 minutes or until completely cooled.2. Meanwhile, in medium saucepan, combine 1 1/4 cups sugar, cornstarch and salt mix well. Gradually stir in cold water until smooth. Cook over medium heat until mixture boils, stirring constantly. Boil 1 minute, stirring constantly. Remove from heat.3. In small bowl, beat egg yolks. Stir about 1/4 cup of hot mixture into egg yolks. Gradually stir yolk mixture into hot mixture in saucepan. Cook over low heat until mixture boils, stirring constantly.
