PINEAPPLE SWEET TEA

Steps:
- Drain the pineapple chunks and reserve the juice. Place the pineapple chunks in 2 silicone ice cube trays and fill the trays with cold water (it's ok if the pineapple floats up). Freeze overnight.
- Pour 2 cups boiling water over the tea bags in a heat-safe measuring cup and let the tea stand for 10 minutes. Into a large pitcher, add the reserved pineapple juice, sugar and 1 cup cold water. Stir to mix slightly. Remove the tea bags from the tea mixture. Pour the hot tea into the sugar mixture and stir until the sugar is dissolved. Add 8 cups water to the pitcher and refrigerate until serving.
- When ready to serve, drop the pineapple ice cubes into the tea

- Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5x3 inch loaf pan.
- Beat eggs slightly. Add butter and sugar. Beat smooth. Stir in pineapple and vanilla.
- In separate bowl put flour, baking powder, soda, salt, and walnuts. Stir well and pour into pineapple mixture. Stir to moisten. Pour into greased 9x5x3 inch loaf pan.
- Bake in 350 degree F (175 degree C) oven for 1 hour. Test with toothpick. Let stand 10 minutes. Remove from pan. Cool and wrap.

- Preheat oven to 350F. Grease a 9 inch loaf pan and set aside.
- Stir together flour, sugar, baking powder, baking soda and salt in a large bowl. Add in crushed pineapple with the juices, egg and oil. Stir. Add cheddar cheese and walnuts and stir. Pour into loaf pan. Let rest for 20 minutes.
- Bake for 60 minutes or until a toothpick comes out of the centre clean. Let cool before cutting into slices. Makes 1 loaf.

SWEET BREAD WITH PINEAPPLE JAM
Sweet bread is a dessert my grandmother often had growing up. Back then they didn't have much, so meals and desserts were made with what they had on hand. I like to top the sweet bread with pineapple jam as a nod to Charleston, since the pineapple is the symbol of hospitality and is associated with the city.

- Make the jam. Combine the pineapple, any pineapple juice, brown sugar, raisins, lemon juice, cinnamon stick and 1/3 cup water in a medium saucepan. Bring to a boil; reduce the heat to low and simmer, stirring frequently, until thickened, 30 to 45 minutes. Remove from the heat. Remove and discard the cinnamon stick, and let the jam cool slightly or to room temperature. (Jam can be made ahead and refrigerated.)
- Meanwhile, make the sweet bread. Preheat the oven to 350 degrees F.
- Pour the melted butter into an 8-inch square baking pan (cast-iron can be used too). Combine the cornmeal, granulated sugar, baking powder and salt in a large bowl. Pour the boiling water over the cornmeal. Add the milk and eggs and whisk until combined. Pour into the prepared pan. Bake until a toothpick inserted in the center comes out clean, 40 to 45 minutes. Cut into squares and serve warm or at room temperature with the jam.

- In a large bowl, dissolve yeast in warm water. Add the milk, sugar, shortening, eggs, salt and 4-1/2 cups flour. Beat until smooth. Stir in enough remaining flour to form a stiff dough. , Turn onto a lightly floured surface; knead until smooth and elastic, about 5-6 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Meanwhile, combine brown sugar and cinnamon; set aside. In a small saucepan, combine the pineapple, sugar and cornstarch. Cook, uncovered, over medium heat until thickened. Stir in raisins; cool., Punch dough down; turn onto a lightly floured surface. Divide in half. Roll one portion into a 20x12-in. rectangle. Brush with 2 tablespoons melted butter. Spread with 1 cup filling to within 1-in. of edges. Sprinkle with 3 tablespoons brown sugar mixture. Roll up jelly-roll style, starting with a long side. - Place butter into a microwave-safe bowl, and microwave until butter is melted, about 1 minute. Pour melted butter into a small microwave-safe casserole dish and mix grits, pineapple, and Cheddar cheese into melted butter.
- Microwave grits mixture on full power until mixture boils and grits are tender, about 4 minutes. Sprinkle top with sugar and cracker crumbs.
- Bake in the preheated oven until crumbs are lightly toasted, 15 to 20 minutes.

- Preheat oven to 350ºF In a large bowl, mix together flour, sugar, baking powder, baking soda and salt.
- In a separate bowl, mix together crushed pineapple, melted butter and the egg.
- Add pineapple mixture to flour mixture.
- Mix together by hand.
- Add pineapple juice, as necessary, to moisten.
- Add cheese and nuts.
- Mix well.
- Pour mixture into a greased loaf pan.
- Bake 1 hour at 350 degrees F.
- To make glaze: Whisk together the sugar and lemon juice over low heat just until sugar is disolved.
- Poke holes in the still warm bread and slowly pour the glaze over the bread allowing it to seap into the holes.
- Let bread rest at least several hours or overnight to set before cutting.
