It's best to prepare this the day or night before you want to serve it, but not more than that. This also makes it the perfect dessert for summer entertaining: It's cool, light, refreshing, and impressive.

2 3/4 cups freshly squeezed and strained pink-grapefruit juice, (4 grapefruits)
5 packets powdered unflavored gelatin
1/2 cup sugar
1 1/2 cups water

Steps:

  • Pour 1 cup grapefruit juice into a bowl. Sprinkle gelatin over and let stand to soften, about 5 minutes.
  • Bring sugar and 1 1/2 cups water to a boil over medium-high heat, stirring to dissolve sugar. Pour hot syrup over gelatin mixture; mix well to dissolve completely. Stir in remaining 1 3/4 cups juice.
  • Pour into a 9-by-13-inch Pyrex pan; cover, and refrigerate until set, 4 hours.
  • When ready to serve, cut gelatin into 1-inch cubes, and serve in tall glasses.

1/2 ounce fresh lemon juice
1/2 ounce orange liqueur
2 ounces vodka

Steps:

  • Shake the grapefruit and lemon juice, orange liqueur, vodka and 1 tablespoon crushed ice in a cocktail shaker. Add a touch more fruit juice or vodka to taste. Strain into a chilled martini glass and garnish with grapefruit. Enjoy!

8 oranges
6 pink grapefruits
1 cup/250 ml sweet white wine
1 cup/190 g sugar
4 envelopes gelatin
Fresh mint sprigs or candied orange zest, for garnish

Steps:

  • Peel and section the fruit into a bowl, squeezing out all of the juice. Measure out 3/4 cup/175 ml of juice and put it in a saucepan with the wine. Add the sugar and heat to dissolve. Pour 1/4 cup/60 ml of the liquid into a bowl and soften the gelatin for a minute. Return it to the pan. Stir to dissolve, and boil 2 minutes. Cool completely.
  • Line a 1 quart/1 liter terrine or glass loaf pan with plastic wrap, leaving enough overhang to cover the terrine afterwards. Arrange the fruit sections decoratively in the terrine. Pour the liquid over. Chill the terrine, covered, until firm, at least 4 hours and up to 2 days. Garnish with mint sprigs or candied orange zest.

Number Of Ingredients 10

Vegetable oil for brushing pan
About 1 cup confectioners' sugar for coating pan and marshmallows
1 (1-pound) pink grapefruit
1 1/2 cups granulated sugar
4 (1/4-ounce) envelopes powdered unflavored gelatin
1 cup light corn syrup
1/4 teaspoon salt
1/8 teaspoon (about 15 drops) red food coloring (preferably organic), or more as desired
Special equipment:
Pastry brush; 1 (9-inch) square baking pan; small, fine-mesh sieve; food processor; 4 1/2-quart or larger stand mixer fitted with the whisk attachment; candy thermometer

Steps:

  • Brush the bottom and sides of a 9-inch square baking pan with vegetable oil. Using a small, fine-mesh sieve, dust the pan generously with confectioners' sugar, knocking out any excess.
  • Using a vegetable peeler, remove the zest from the grapefruit in strips then use a small sharp knife to remove any white pith from the undersides of the zest. Reserve the grapefruit. Finely chop the zest then transfer to the bowl of a food processor and add the granulated sugar. Process until the zest is finely ground, 1 to 2 minutes.
  • Squeeze and strain enough juice from the grapefruit to measure 1/2 cup and transfer to the bowl of a stand mixer fitted with the whisk attachment. Add 2 tablespoons water, then sprinkle gelatin into the bowl and stir briefly to make sure all the gelatin is in contact with the grapefruit juice and water. Let soften while you make the sugar syrup.
  • In a heavy 3- to 4-quart saucepan, combine the zest-sugar mixture with the corn syrup, salt, and 1/2 cup water. Place over moderate heat and bring to a boil, stirring until the sugar is dissolved. Put a candy thermometer into the boiling sugar syrup and continue boiling (the mixture may foam up, so turn the heat down slightly if necessary), without stirring, until the thermometer registers 240°F (soft-ball stage). Remove from heat and let stand briefly to let bubbles dissipate slightly.
  • With the mixer on low speed, pour the hot sugar syrup into the softened gelatin in a thin stream down the side of the bowl. Gradually increase the mixer speed to high and beat until the marshmallow is very thick and forms a thick ribbon when the whisk is lifted, about 5 minutes. Beat in the food coloring, adding more for a darker pink color.
  • Scrape the marshmallow into the prepared pan (it will be very sticky) and use wet fingertips to spread it evenly and smooth the top. Let stand, uncovered at room temperature, until the surface is no longer sticky and you can gently pull the marshmallow away from the sides of the pan with your fingertips, at least 4 hours or overnight.
  • Dust a cutting board with confectioners' sugar. Use a rubber spatula to pull the sides of the marshmallow from the edge of the pan (use the spatula to loosen the marshmallow from the bottom of the pan if necessary) and invert onto the cutting board. Dust the top with confectioners' sugar. Brush a long thin knife or a chef's knife with vegetable oil and dust with confectioners' sugar to prevent sticking; continue dusting the knife as necessary. Cut lengthwise into 8 strips, then crosswise into eighths, to form a total of 64 squares. (For larger marshmallows, cut lengthwise into 6 strips, then crosswise into sixths, to form a total of 36 squares.) Coat marshmallows, one at a time, in confectioners' sugar, using a pastry brush to brush off any excess. DO AHEAD: Marshmallows can be stored, layered between sheets of wax paper or parchment in an airtight container in a dry place at cool room temperature, for 1 month.

4 pink grapefruit
½ cup white sugar
1 tablespoon cornstarch
¾ cup grapefruit juice
1 (3 ounce) package strawberry flavored Jell-O®

Steps:

  • Peel grapefruit, removing all pith. Cut up into bite-size pieces. Drain in a strainer for 4 or more hours, collecting the juice. (This can be done the day before.)
  • Combine the sugar, cornstarch, and 3/4 cup juice in a small saucepan; if the collected juice does not measure 3/4 cup, top it off with water. Bring to a boil. Stir in strawberry gelatin. Cool slightly.
  • Spread grapefruit in the bottom of the baked shell, and pour gelatin over the fruit. Chill several hours or overnight.

1 envelope unflavored gelatin
2 tablespoons cold water
1/3 cup sugar
1/3 cup water
1/2 cup grapefruit juice
3 tablespoons orange juice
4 teaspoons lemon juice

Steps:

  • In a small bowl, sprinkle gelatin over cold water; let stand for 1 minute. In a saucepan, combine sugar and water; bring to a boil. Reduce heat; stir in gelatin until dissolved. Stir in juices; pour into three 1/2-cup or one 2-cup mold coated with cooking spray. Refrigerate for 4-5 hours or until set.

QUICK GRAPEFRUIT MARMALADE



Quick Grapefruit Marmalade image

A quick recipe for one bottle of marmelade, I use it to avoid canning - just put it in any bottle and refrigerate after making. It's best when it's first made though, and still warm. I like my marmelade tart - if you find it's too sour for your tastes, just use more sugar. Note: you don't need any gelatin, there's plenty of natural gelatin in the peel of all citrus fruits.

1 large pink grapefruit
3 cups sugar
6 cups water
2 tablespoons lemon juice

Steps:

  • Slice the grapefruit very very thinly with a sharp knife, into flat slices. then cut these into strips, and cut the strips into smaller bits. Keep all the juice that flows out, if it's a juicy grapefruit.
  • Bring 6 cups of water to a boil, and then add the grapefruit slices and juice.
  • Keep at a low boil, adding the sugar. Continue boiling for quite some time (20-30 minutes), until it begins getting thicker.
  • The tricky part is knowing when to stop boiling. If you wait too long, it will become too thick when it cools. The important thing to know is it thickens a bit when cooling, so you have to stop it before it reaches the desired consistency. I put a porcelain dish in the fridge, then pour a little onto the dish - if it congeals a little, then it's ready.
  • Before you bottle it, eat it with bread while it's still warm - it's delicious!
  • Pour in any clean bottle, and refrigerate.

1 3/4 cups cold water
1 1/2 cups sugar
2 tablespoons pink peppercorns, crushed (optional)
1/4 cup Campari
1/4 teaspoon coarse salt
3 3/4 cups strained pink-grapefruit juice (from 5 grapefruits), or use unsweetened store-bought juice
2 tablespoons plus 1 1/2 teaspoons unflavored gelatin (from four 1/4-ounce envelopes)
1 cup orange segments (from 3 seedless oranges)

Steps:

  • Bring water and sugar to a boil in a medium saucepan, stirring until sugar dissolves. Add peppercorns if desired. Refrigerate for 2 hours and strain through a fine sieve.
  • Prepare an ice-water bath. Stir syrup, Campari, and salt into grapefruit juice (you should have about 6 cups liquid).
  • Sprinkle gelatin over 1 cup juice mixture in a small saucepan, and let stand until softened, about 5 minutes. Bring to a simmer over medium-high heat, stirring until gelatin dissolves. Strain gelatin mixture through a fine sieve into remaining juice mixture in a bowl set in ice-water bath. Let stand, stirring occasionally, until mixture begins to gel, about 30 minutes.
  • Remove from ice water bath and pour half the gelatin mixture into a 7-cup bowl. Arrange orange segments around perimeter, pressing them into the gelatin. Refrigerate 30 minutes. (Remaining gelatin can sit at room temperature.) Pour remaining gelatin on top. Refrigerate for at least 3 hours or up to overnight.
