PISTACHIO STARS

8 ounces (227 grams) unsalted raw shelled pistachios
1/4 cup (30 grams) confectioners' sugar, plus more for rolling
1/4 teaspoon (large pinch) orange zest
2 large egg whites
Generous pinch salt
1 cup (227 grams) superfine (baker's) granulated sugar
Nonstick cooking spray, for your hands

Steps:

  • In a food processor, grind together the pistachios with the confectioner's sugar and zest until the pistachios are very finely ground. Set aside.
  • Combine the egg whites and salt in the bowl of a very clean and dry mixing bowl. Whisk with an electric mixer until the egg whites become foamy. Slowly add the superfine granulated sugar and beat on high until you get stiff, white peaks (this can take a few minutes). Set aside about one-quarter of the meringue mixture (just eyeball it). Fold the remaining meringue into the ground nut mixture until you've created a thick paste.
  • Preheat the oven to 300 degrees F.
  • Sift a generous layer of confectioners' sugar onto a piece of parchment. Flatten the paste onto the parchment with your hands (spray your hands with nonstick cooking spray to keep the paste from sticking to your hands). Sift a generous layer of confectioners' sugar on top of the paste and top with another piece of parchment. Roll to about 1/4 inch thick.
  • Using a 2-inch star-shaped cookie cutter (dipped in confectioners' sugar to keep the cutter from sticking), stamp out the stars and place on a parchment-lined cookie sheet an inch or so apart (the cookies don't spread, so there's not much worry). Using a small offset spatula, smear the tops of each star with a light layer of the reserved meringue. Continue with the rest of the cookies and a second parchment-lined cookie sheet.
  • Bake until the meringue just begins to brown, about 15 minutes. The cookies should be light and chewy, not hard and crunchy.

2 1/4 cups coconut powder
1 stick (8 tablespoons) unsalted butter
One 14-ounce can sweetened condensed milk
8 teaspoons pistachio powder, plus 1/4 cup for rolling

Steps:

  • Add the coconut powder, butter, condensed milk and 8 teaspoons of the pistachio powder to a large nonstick skillet set over medium-low heat and stir until the mixture forms a ball, 7 to 10 minutes. Remove from the heat and let rest until cool enough to handle, about 5 minutes.
  • Put the remaining 1/4 cup pistachio powder on a small plate. Form the coconut mixture into quarter-size balls. Roll each ball in the pistachio powder to coat.

Flatbreads have always been a staple for Chopped judge and chef Maneet Chauhan. Every Sunday when she was growing up in Ranchi, India, her mom made parathas for brunch alongside homemade butter, pickles and yogurt, and her family also packed the whole-wheat flatbreads on train trips. "There's a joke in my family that my sister fed me a bite of aloo paratha before I even started on solids," says Maneet. "That's how my love story with food really began." Maneet has continued the tradition of making paratha, plus naan and poori, at home with her husband, Vivek Deora, and children Shagun, 10, and Karma, 6. "The kids get involved - the dough is like Play-Doh to them," she says. "The versatility of paratha is amazing - I love it with a hearty goat curry, and my kids even eat it with ketchup."

2 cups atta (Indian whole-wheat flour), plus more for dusting
3/4 teaspoon kosher salt, plus more for sprinkling
1 tablespoon ground fenugreek
1 teaspoon vegetable oil, plus more for brushing
1/2 cup whole milk, warmed

Steps:

  • Combine the flour, salt, fenugreek and vegetable oil in a large bowl. Mix with your fingers until crumbly. Mix in the milk with your fingers. Knead the dough, adding water as needed, 1 tablespoon at a time, to make a smooth, soft ball. Cover the bowl with a damp cloth; let rest, 30 minutes.
  • Divide the dough into 6 equal pieces. Roll each piece into a 1 1/2-inch ball on a lightly floured surface. Working with 1 ball at a time, flatten the dough with a rolling pin, then dust with flour and roll out into a thin 6-inch round.
  • Brush the dough with vegetable oil and sprinkle with more flour. Fold the dough with your fingers to make 3/4-inch pleats.
  • Stretch the pleated dough as much as possible into a rope (it may only stretch 1 inch longer or so), keeping the pleats intact. Spiral the pleated dough around itself like a cinnamon bun. Pinch the end of the dough together to secure. Dust the spiral with more flour. Roll out the dough into a 6-inch round with a rolling pin. Repeat with the remaining balls of dough.
  • Cook the parathas: Preheat a tawa or large nonstick skillet over medium heat. Place a paratha in the hot pan and cook until golden brown spots appear on the bottom, about 1 minute. Flip the paratha with a spatula and cook until golden brown spots appear on the other side, about 1 more minute. Remove from the pan to a clean surface and brush both sides with vegetable oil. Return the paratha to the hot pan and cook until golden brown all over, about 1 more minute per side. Season with salt. Repeat with the remaining parathas. Bend the parathas gently in your palms to expose the spiral layers and make them more defined.

2 ¼ cup unsweetened desiccated coconut
¾ cup pistachio ( divided) ( ½ cup for ladoo + ¼ cup for rolling)
14 oz sweetened condensed milk
3 tablespoons butter or substitute with ghee
3 cardamom pods, finely crushed

Steps:

  • Add ¾ th cup of pistachio in a small blender and make a fine powder. In that reserve ¼ th cup of pistachio powder, we will be using that to coat the ladoo at the end.
  • To a wide skillet add the butter and melt it. You can also replace butter with ghee. Now add the condensed milk and mix both the ingredients.
  • Now add the desiccated coconut and ½ cup pistachio powder.
  • Mix it well, scrape the sides and cook the mixture till it thickens and comes together.
  • Add the cardamom and mix it well. Take a small portion of the mixture, if you can make a ladoo with out it sticking its ready.
  • Make round ladoo and coat it with powdered pistachio.
