1 1/4 pounds thin asparagus spears, washed and dried
1 lemon, juiced
Extra-virgin olive oil, for drizzling
1/4 pound thinly sliced prosciutto di Parma

Steps:

  • For asparagus, snap off tough ends of spears where they naturally give when bent. Place spears into 1-inch of boiling water. Cover the pan and cook asparagus for 3 or 4 minutes, until spears are just tender but remain bright green in color, about 3 to 4 minutes.
  • Drain and cold shock the spears in a colander under cool water. Return cooked asparagus to skillet and coat with lemon juice and a drizzle of extra-virgin olive oil.
  • Remove bundles of several spears at a time from the pan and wrap with sliced prosciutto. Pile assembled bundles on a serving plate.

1 (3-ounce) package prosciutto
2 tablespoons extra-virgin olive oil
1 teaspoon lemon juice

Steps:

  • Preheat oven to 400 degrees F. Line a baking sheet with foil and set aside.
  • Cut prosciutto slices lengthwise into 2 thin strips. Gather 2 to 3 asparagus spears and carefully tie prosciutto into a knot around asparagus bundle. Continue until all ingredients are used.
  • Place asparagus bundles on prepared baking sheet.
  • In small bowl, whisk together olive oil and lemon juice. Drizzle over asparagus. Season, to taste, with salt and pepper.
  • Roast in preheated oven for 8 to 10 minutes.

2 pounds fresh asparagus, ends trimmed
12 slices bacon
1/2 cup light brown sugar
1/2 cup (1 stick) butter
1 tablespoon soy sauce
1/2 teaspoon garlic salt
1/4 teaspoon freshly ground pepper

Steps:

  • Preheat the oven to 400 degrees F. Divide the asparagus spears into 12 bundles. Carefully wrap 1 piece of bacon around each bundle, starting about 1/2 inch from the bottom of the tips. Secure the bacon-wrapped spears with a toothpick. Lay the bundles in a low-sided casserole dish. In a medium saucepan, combine the brown sugar, butter, soy sauce, garlic salt and pepper. Bring the mixture to a boil. Pour the hot sugar mixture over the asparagus bundles. Transfer the dish to the oven and roast until the spears have begun to wilt and the bacon looks fully cooked, about 25 minutes. Remove the toothpicks before serving.

  • Preheat the oven to 400 degrees F.
  • Snap the dry stem ends off of each asparagus and place on a heavy baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss. Roast until the asparagus is tender, about 15 minutes. Cool completely.

18 asparagus spears , woody ends removed
drizzle olive or rapeseed oil
6 slices prosciutto
handful rocket leaf
12 semi-dried tomatoes
100g cream cheese
100g soft rindless goat's cheese
1 tbsp milk
6-8 toasted hazelnuts , chopped

Steps:

  • Heat a griddle pan. Drizzle the asparagus with a little oil, season and cook for 3-4 mins, rolling around the pan until just tender. Leave to cool.
  • Lay a slice of prosciutto on your chopping board. Put 3 asparagus spears on top, with the tips poking out the end, then top with a few rocket leaves and 2 semi-dried tomatoes. Roll up the prosciutto tightly to enclose the filling and put in a sealable container for transporting. Continue until all the ingredients are used up.
  • Mash the cream cheese and goat's cheese together in a bowl with a fork. Season and add enough milk to make a smooth consistency, into which you can dip the bundles. Transfer to a pot for travelling and sprinkle over the hazelnuts.

Steps:

  • Preheat the oven to 450 degrees F (220 degrees C). Line a baking sheet with aluminum foil, and coat with olive oil.
  • Wrap one slice of prosciutto around each asparagus spear, starting at the bottom, and spiraling up to the tip. Place the wrapped spears on the prepared baking sheet.

Steps:

  • Heat oven to 400°F. In small bowl, mix bread crumbs, salt and pepper. Add parsley, lemon peel and cheese; toss well.
  • In 3-quart saucepan, heat 4 cups water and 1 teaspoon salt to boiling. Add asparagus. Heat to boiling; reduce heat. Simmer about 4 minutes or until crisp-tender; drain.
  • Butter shallow baking dish. Toss cooled asparagus with 2 tablespoons olive oil; sprinkle with salt and pepper. Divide asparagus into 4 equal bundles. On work surface, arrange 2 slices of the prosciutto so they slightly overlap each other. Top with 1 asparagus bundle and roll up carefully in prosciutto. Place in baking dish. 1 teaspoon Dijon mustard

Steps:

  • Place asparagus spears in a resealable plastic bag.
  • Whisk olive oil, vinegar, and mustard in a bowl. Pour over asparagus in the bag and distribute evenly. Marinate for 1 hour.

1 large bunch asparagus, about 1 1/2 pounds, trimmed to even lengths and blanched for 4 minutes in boiling, salted water
Gray salt and freshly ground pepper
Seasoned bread crumbs, recipe follows
8 thin slices prosciutto
2 tablespoons extra-virgin olive oil

Steps:

  • Preheat the oven to 400 degrees F.
  • Butter a shallow baking dish that is long enough to hold the asparagus. Season the asparagus with salt and pepper, to taste.
  • Divide the asparagus into 8 equal bundles. Arrange 2 slices of the prosciutto on a work surface so they slightly overlap each other. Place an asparagus bundle on top and roll up carefully in the prosciutto. Arrange in the prepared baking dish. Flatten the top of each bundle slightly and sprinkle with 1/4 of the seasoned bread crumbs. Drizzle with the olive oil.

Want something that is great for every night but is amazing for dinner parties, holidays or a special event but very very easy. A few slices of prosciutto from your grocer's deli, some store bought crescent rolls and asparagus. Now if you want to get really special, buy a mix of white, green and sometimes you can find the red asparagus. I did this for a Christmas party and it was a hit. But if you can't get other colors, get green, that is just fine.

1 lb asparagus, ends trimmed (not the pencil thin)
crescent roll (1 can rolled out flat and press the cuts together, Pillsbury or any brand name, Pillsbury even makes)
6 slices prosciutto, thin sliced
3 ounces herb cheese spread (Boursin or any herb soft cheese)
2 tablespoons butter, melted
1/3 cup grated parmesan cheese

Steps:

  • Asparagus -- Pre cook the asparagus just 1 1/2 minutes in the microwave just lay flat on a paper towel and cover with a damp paper towel. Just to get a head start.
  • Rolls -- Spread out the crescent rolls and press the pre cut seems together to form one large sheet. Cut in half top to bottom and then cup each half in 3 strips. Spread with some of the boursin or herb cheese. (Thin layer, not heavy).
  • Wrap -- 4-5 asparagus spears with prosciutto. I like to alternate the spears going in different directions to make sure they cook evenly. Then wrap in the strips of crescent rolls a spiral pattern around the asparagus and prosciutto. Make sure you leave the tips and the very ends open (a inch or more) but the rest should be wrapped with the crescent roll.
  • Bake -- Place the wrapped asparagus bundles on a cookie sheet lined with foil or parchment paper. Melt the butter in the microwave and brush with butter. Sprinkle with parmesan and bake in a 400 degree oven for 14-16 minutes until golden brown.

1 cedar plank, soaked in cool water overnight (or a minimum of 1 hour)
18 spears of asparagus
½ lb(s) fontina cheese
6 large slices of proscuitto
Balsamic vinegar

Steps:

  • Trim the asparagus and "blanch" it by dropping it into salted, boiling water for 20 seconds. Remove the asparagus from the water and immediately place it in a bowl of ice water to stop the cooking process.
  • Spread out a slice of proscuitto and place 3 spears of asparagus on it.
  • Add cheese to the asparagus (reserving ½ cup of cheese for topping) and wrap the prosciutto around it. Continue process until you have 6 bundles.
  • Preheat the grill to medium high 375°F/190°C.
  • Place the plank on the grill, close the lid and heat the plank for 4-5 minutes (or until the plank starts smoking).
  • Reduce heat to medium low 325°F/160°C.
  • Place the bundles on the plank and top with cheese, working quickly.
  • Close the lid and cook until the cheese is melted and the prosciutto is starting to crisp around the edges.
  • Remove from grill and drizzle with balsamic vinegar.

ROASTED ASPARAGUS AND PROSCIUTTO

1 pound fresh asparagus (not too thin)
Good olive oil
Kosher salt and freshly ground black pepper
6 large slices prosciutto
1 1/2 tablespoons unsalted butter
3 extra-large eggs
Easy Hollandaise Sauce, recipe follows
2 extra-large egg yolks, at room temperature
1 1/2 tablespoons freshly squeezed lemon juice
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Pinch of cayenne pepper
6 tablespoons (3/4 stick) unsalted butter

Steps:

  • Preheat the oven to 400 degrees.
  • If the asparagus are thick, peel them halfway up the stalks. Cut off and discard the bottom third of the asparagus. Place the asparagus in a single layer on a sheet pan, drizzle with olive oil, and sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper. Roast for 10 minutes, until the stalks are just tender. Meanwhile, place the prosciutto in a single layer on another sheet pan and roast in the same oven for 5 minutes.
  • Melt the butter in a medium (10-inch) saute pan over medium heat and wait until the bubbles almost subside. Crack the eggs into the skillet, keeping them separate, if possible. Sprinkle the eggs generously with salt and pepper and cook over medium heat until the whites are cooked but the yolks are still runny. Don't turn them over!
  • Arrange the asparagus on 3 plates. Place 2 slices of prosciutto on top of each pile, drizzle with hollandaise, and place a fried egg on top of the prosciutto. Serve hot.
  • Place the egg yolks, lemon juice, salt, black pepper, and cayenne pepper in the jar of a blender and process on low for 15 seconds. Melt the butter in a small saucepan until it is sizzling hot. Remove the small clear insert in the top of the blender. With the blender on low, slowly add the hot butter to the egg and lemon mixture and blend for 30 seconds, until the sauce is very thick. Use immediately.

1/2 tomatoes, diced finely
2 tablespoons extra virgin olive oil
4 teaspoons red wine vinegar
1 garlic clove, minced

1/4 teaspoon dried basil (or 1 tbsp fresh)

Steps:

  • Bring a pot of water to a boil; boil asparagus for 2 min max.
  • Spread one slice of proscitto out and place approx 6 asparagus in the middle; roll proscitto slice around asparagus spears tightly.
  • Repeat with remaining asparagus and proscitto.
  • In a bowl combine tomatoes, olive oil, red wine vinegar, garlic, salt, pepper and basil.
  • Place bundles seam side down on greased baking sheet and broil 6 inch from heat, turning halfway through until hot and prosciutto is crisp - about 6 minutes.
  • Serve while hot with a couple of spoonful dressing on top.

  • Cut stalks from asparagus, leaving 2-inch-long tips. (Reserve asparagus stalks for another use; see note in recipe introduction.) Cook asparagus tips in large pot of boiling salted water until just crisp-tender, about 1 minute. Drain. Transfer asparagus to paper towels and drain well.
  • Mix goat cheese, basil, pine nuts, water and orange peel in small bowl to blend. Season with salt and pepper. Spread scant 1 teaspoon filling over each prosciutto strip.   • Preheat the oven to 350 degrees F (175 degrees C). Spray a baking dish with cooking spray.
  • Bend asparagus spears and snap off tough ends. Wrap 3 to 4 spears with a slice of prosciutto and secure with a toothpick. Place bundles in the prepared baking dish. Drizzle some lemon juice and olive oil over the top.

Planked Asparagus Bundles With Cheese and Prosciutto image

I was watching Food Network Canada's show "Road Grill" today and this looked so good that I had to post it! They used several small asparagus spears, not just 3 as listed, so I'm assuming you would need to use bigger spears. Enjoy!

1 cedar plank, soaked in cool water overnight (or a minimum of 1 hour)
18 asparagus spears
1/2 lb Fontina cheese, grated
6 slices prosciutto
balsamic vinegar

Steps:

  • Trim the asparagus and "blanch" it by dropping it into salted, boiling water for 20 seconds. Remove the asparagus from the water and immediately place it in a bowl of ice water to stop the cooking process.
  • Spread out a slice of prosciutto and place 3 spears of asparagus on it.
  • Add cheese to the asparagus (reserving ½ cup of cheese for topping) and wrap the prosciutto around it. Continue process until you have 6 bundles.
  • Preheat the grill to medium high 375°F/190°C.
  • Place the plank on the grill, close the lid and heat the plank for 4-5 minutes (or until the plank starts smoking).
  • Reduce heat to medium low 325°F/160°C.
  • Place the bundles on the plank and top with cheese, working quickly.
  • Close the lid and cook until the cheese is melted and the prosciutto is starting to crisp around the edges.
  • Remove from grill and drizzle with balsamic vinegar.

1 cup ricotta cheese
2 cups shredded mozzarella cheese
1 (9 ounce) package frozen cut asparagus, chopped and cooked
1 ½ cups chopped prosciutto
½ cup freshly grated Parmigiano-Reggiano cheese
1 teaspoon salt
1 teaspoon garlic powder
⅛ teaspoon freshly ground black pepper
1 (24 ounce) jar Barilla® Three Cheese Sauce

Steps:

  • Cook shells according to package directions. Rinse cooked shells under cold water and drain. Cover and set aside.
  • Preheat oven to 350 degrees F.
  • Mix together ricotta cheese, mozzarella cheese, asparagus, prosciutto, Parmigiano Reggiano cheese, salt, garlic powder, and black pepper in medium bowl.
  • Pour 1 cup of Barilla Three Cheese Sauce into 9x13-inch baking dish.
  • Fill each shell with one heaping tablespoon of filling; place in baking dish.
  • Pour remaining sauce over shells. Cover with foil.
  • Bake for 45 minutes or until thoroughly heated. Let stand 5 minutes before serving.

This is a fantastic and simple way to prepare asparagus! I don't think I will ever go back to just plain steamed asparagus. Prociutto is expensive, but this recipe doesn't use very much. And its TOTALLY worth the expense. This could be a fantastic first course or a side dish

1 lb asparagus spear, washed and dried
5 slices prosciutto, di parma sliced paper thin
1 teaspoon olive oil
1 teaspoon lemon juice
salt and pepper

Steps:

  • Preheat oven to 375.
  • Line a baking sheet will aluminum foil and coat with cooking spray.
  • In a dish, coat asparagus with olive oil, lemon juice salt and pepper.
  • Cut each slice of prociutto in half lengthwise.
  • Gather bunches of 5 asparagus (if they are the small ones, other wise use 3 at a time) spears and wrap them in the prociutto and place on the baking sheet.
  • Bake at 375 for 15 minutes.
