1-1/2 cups water
1 cup dry red wine or red grape juice
1/2 cup sugar
2 teaspoons vanilla extract
1/4 cup reduced-fat sour cream
2 teaspoons confectioners' sugar
1/2 teaspoon grated orange zest
1/8 teaspoon orange extract
Additional grated orange zest, optional

Steps:

  • Core pears from bottom, leaving stems intact. Peel pears; cut 1/4 in. from bottom to level if necessary. Place pears on their sides in a large saucepan. Add water, wine, sugar and vanilla. Bring to a boil. Reduce heat; simmer, covered, turning once, until pears are almost tender, 35-40 minutes. (For more intense flavor and color, leave fruit in cooking liquid and refrigerate overnight.), Meanwhile, combine sour cream, confectioners' sugar, orange zest and extract. Refrigerate until serving., Remove pears with a slotted spoon; pat dry and, if warm, cool to room temperature. Discard cooking liquid. Place pears on dessert plates. Riesling is a white wine native to Germany, though it's now also being grown as far afield as California, New York and Australia. Rieslings can range from sweet (labeled Spatlese or Auslese) to dry (labeled Kabinett, Qualitatswein or QbA); they're all known for honeyed, floral notes and stony minerality. They're an especially good match for fruit, as they add clean, not cloying, sweetness. Cardamom, a common ingredient in Northern European and Scandinavian baking, adds a smoky counterpoint.

1 (750 ml) bottle Riesling, preferably Spatlese
2 cups sugar
4 ripe pears, such as Bartlett, Bosc, D'Anjou, Fiselle or Seckel
1 cup heavy cream
1 tablespoons superfine sugar
1 teaspoon ground cardamom

Steps:

  • Pour the Riesling into a medium saucepan and whisk in the sugar until it dissolves.
  • Peel the pears, leaving stem intact, if present. Remove bottom stem end with a small melon baller, and continue to scoop up into the pear to remove the core. Place the pears right in the Riesling mixture (poaching liquid) after they are peeled and cored to prevent them from discoloring. (The acidity of the wine keeps them from browning). Add just enough water to cover the pears.
  • To keep the pears submerged in the poaching liquid, cut a circle of parchment paper the size of the pan and lay on the surface of the liquid. Place a small plate on top of the paper to make sure the pears are completely submerged. Cook the pears over medium-high heat, just until the liquid comes to a boil. Reduce the heat to low and poach the pears until they are just soft. The pears should be tender enough to pierce with a knife. This takes about 20 to 25 minutes for ripe medium pears, but this can vary depending on the size, variety and ripeness of the pear.
  • Remove the pan from the heat and cool the fruit completely in the poaching liquid. Refrigerate the fruit in the liquid in a sealed container until ready to serve. (The fruit will hold for 4 to 5 days, the longer the fruit is stored in the poaching liquid, the fuller the flavor).
  • Pour about half of the poaching liquid into a skillet and bring to a boil over high heat. Continue to cook and reduce until the liquid gets syrupy and about the consistency of honey.
  • Meanwhile, whip the cream together with the sugar and cardamom until cream just holds soft peaks. Refrigerate until ready to serve.
  • To serve, place a pear in a bowl or on a plate. Drizzle with reduced Riesling syrup and garnish with a dollop of whipped cream.

2 cups dry white wine, such as Sauvignon Blanc
1/4 cup sugar
1/4 cup fresh orange juice, plus 4 strips peeled zest (from 2 oranges)
1 cinnamon stick
1 pinch saffron, crushed (1/8 teaspoon)
1/2 vanilla bean, split and seeds scraped, or 1 teaspoon pure vanilla extract or paste
1 cup heavy cream

1 to 2 tablespoons confectioners' sugar (or to taste)

Steps:

  • Poached Pears: Core pears from bottoms, using a small melon baller or measuring spoon to scoop out seeds. Cut a round of parchment to fit inside a medium saucepan.
  • Place pears in pan along with wine, sugar, orange juice and zest, cinnamon, saffron, and enough water to mostly cover pears (about 3 cups). Add vanilla seeds, then pod. Cover with prepared parchment round.
  • Bring to a boil, then reduce heat to medium-low and simmer, turning pears occasionally to keep them covered with liquid, until tender (easily pierced with the tip of a knife) but not falling apart, 12 to 15 minutes, depending on ripeness and size. Using a slotted spoon, transfer pears to a large bowl; cover with parchment round from pan.
  • Remove and discard vanilla pod and cinnamon. Bring poaching liquid to a boil and cook until reduced to a thin syrup, 25 to 30 minutes (you should have 1 to 1 1/2 cups). Pour syrup over pears and refrigerate, covered with plastic wrap, until cold, at least 2 hours and up to 3 days.
  • Saffron Whipped Cream: In a small saucepan, heat 1/4 cup cream and saffron over medium until just barely bubbling around edges. Remove from heat and transfer to a large mixing bowl; add remaining 3/4 cup cream. Refrigerate until chilled, about 30 minutes. Add sugar and beat on medium speed until soft peaks form.
  • Serve pears whole or halved in shallow bowls, with syrup and saffron whipped cream.

1 tablespoon vanilla extract

  • In a large saucepan over medium heat, mix together the orange juice, brown and white sugar, vanilla extract, and cinnamon. Bring the mixture to a boil, stirring to dissolve the sugar. 1 orange, juice of
1 large tangerine (mandarin)
1 sprig mint (optional)

Steps:

  • Peel pear, halve it lengthways and remove the seeds with a melon baller. Use a small, sharp knife to neatly remove the hard core leading to the stem.
  • Put the pear, cut side down, in a small saucepan with the orange juice, cover and bring to simmering point then cook gently for 8-10 minutes, just until tender, turning the halves over after 5 mins and spooning some of the juice over them.
  • Leave to cool in the juice. Peel the mandarin, divide into segments and remove the membrane covering each segment.
  • Put pear half in each bowl and spoon pan juices over. arrange mandarin segments around and decorate with a mint sprig.
  • Serve chilled or at room temperature.

1 750-ml. bottle sweet muscat wine, like muscat de Beaumes-de-Venise
1 cup freshly squeezed orange juice
6 pears, ripe but not soft
Slivered zest of one orange
1 tablespoon honey
Pear or orange sorbet, or both, or vanilla ice cream (optional)

Steps:

  • Preheat the oven to 350 degrees.
  • Select a deep, ovenproof, nonreactive saucepan that will hold the pears snugly when they are placed in it upright. Pour the wine and orange juice into the pan.
  • Peel the pears, taking care to leave the stems intact. If desired, remove the cores, digging them out with the point of a vegetable peeler or knife. As the pears are peeled, place them upright in the saucepan, coating them with the wine mixture so they do not discolor.
  • Place the saucepan in the oven and bake the pears for 3 hours, basting occasionally, until they are very tender.
  • Remove the pears from the oven and carefully transfer them to a dish that will still hold them upright.
  • Add the orange zest and honey to the saucepan and boil the remaining liquid until it is reduced to about 1/3 cup, turns a caramel color and becomes very syrupy. Toward the end of the cooking, the syrup will start to boil up in the pan; remove it from the heat and allow it to settle to determine whether it needs additional boiling. Do not allow the syrup to scorch. Pour it over the pears. Refrigerate them until serving time.
  • Serve the pears in chilled goblets or dishes, with sorbet or ice cream on the side, if desired.

5 tablespoons granulated sugar
2 oranges
1/4 cup mascarpone cheese, softened
1/2 cup whipping cream

Steps:

  • Place quartered pears in 2-quart saucepan. Add pomegranate juice and granulated sugar (if pears are not completely submerged, add more juice and sugar). Heat to boiling. Cover with lid slightly ajar. Reduce heat; simmer 20 minutes or until pears are soft when pierced with fork.
  • Meanwhile, grate peel from oranges; set aside. In large bowl, place mascarpone cheese. Cut oranges in half; squeeze juice over mascarpone in bowl.   • Peel 4 firm, ripe Bosc pears, and core from the bottom using a melon baler, leaving stems intact. In a 2-qart microwave-safe dish with a lid, place 2 tablespoons light-brown sugar and 1 tablespoon unsalted butter, and add pears. Cover, and microwave on high until the pears are tender enough to pierce with a knife, 10 to 12 minutes (timing will vary depending upon ripeness of pears). Don't be concerned if pears fall over on their sides as they cook. Carefully uncover, as dish lid will release steam.

1 teaspoon cornstarch
1/2 teaspoon cinnamon
1/2 teaspoon clove

Steps:

  • Core and halve the pears.
  • Place them face down in a greased baking dish.
  • Whisk together the orange juice, cornstarch, cinnamon, cloves, sugar and water.

  • Cover the baking dish with aluminium foil and bake in a 425 F or 220 C oven for 25 minutes.
  • This is the time needed to bake fairly hard pears, so if yours are soft you may be able to take them out after 10-15 minutes.
  • Take the dish out of the oven.
  • Using a spoon, scoop up any juice on the bottom of the pan and drizzle it over the pears.
  • Sprinkle over the brown sugar.
  • Turn on the top element of the oven and put the pears back in the oven for a couple minutes until they start to brown on top.
  • Remove from the oven.
  • Divide between two bowls and serve topped with a scoop of vanilla ice cream.
