Poached Salmon with Champagne Cream Sauce image

Number Of Ingredients 8

2 6 to 8 ounce salmon fillets (each cut into the shape of a heart)
salt and white pepper
2 cups dry champagne
1/2 cup water
1/4 cup lemon juice
1 shallot (minced (or substitute the white part of 2 green onions))
1/2 cup heavy cream
3 tablespoons chilled butter

Steps:

  • In a large skillet over medium heat, combine champagne, water, lemon juice and shallot. Bring to a boil and then simmer for 5 minutes. With a spatula, carefully place salmon fillets into skillet. If necessary, add enough additional champagne so that liquid just rises to the top edge of the fish, but does not cover it. Cover with a lid or foil and simmer for 10 minutes or until fish is firm, but not overcooked.
  • Carefully pour 1/2 cup of liquid from skillet into a saucepan and add cream. Bring to a boil and reduce liquid to about 1/3 cup. Whisk in chilled butter until melted. To serve, place salmon on vegetables, rice or pasta and spoon sauce around fish. Go put on your smoking jacket, put on some jazz and turn the lights down low.

I was served this memorable dish at the house of a Champagne producer in Rheims, and this is my version.

6 middle-cut skinless fillets salmon (6-7 oz/175-200g each)
9fl oz(250 ml) champagne
3/4 oz (20g) butter, plus a little extra for greasing
2 medium shallots, finely chopped
3/4 oz (20g) plain flour
7 fl oz(200ml) double cream
6 teaspoons keta (salmon caviar), to garish
a few sprigs of fresh dill, to garnish
salt and freshly milled black pepper

Steps:

  • First of all, smear a little butter over the base of the frying pan, then arrange the fillets in it. Now slowly pour the Champagne over the salmon (it will foam quite a lot, but not to worry), then bring it to a simmer over a medium heat. Now spoon the Champagne over the top of the fillets before putting the lid on. Then gently poach the salmon for about 8-10 minutes. The tip of a knife inserted into the thickest part will show if it is cooked when you just ease the flesh back. While the salmon is poaching, melt the butter in a medium saucepan and cook the shallots in it over a gentle heat for 5-6 minutes, until softened and golden but not browned. When the salmon is cooked, carefully lift the fillets on to a warmed dish, cover them with foil and keep warm. Next, add the flour to the buttery shallot juices, stir it in and cook for 1-2 minutes more. Now gradually add the salmon poaching liquid to the pan, a little at a time, then blend in the double cream, whisking until the sauce is smooth. Let it come to a simmer and cook for 1-2 minutes, then taste and add some seasoning. Serve the salmon fillets on warmed plates with a little of the sauce spooned over and a teaspoon of keta and a sprig of dill on top, and hand the rest of the sauce round in a warmed jug. I think steamed Anya potatoes tossed in butter and chives are a nice accompaniment, perhaps with fresh, shelled peas, or a green salad with plenty of cucumber and a lemony dressing.

1 large salmon or trout
1 cup mushrooms, cut into slivers
1 onion, cut into rings
1 bunch parsley and thyme
1 cup butter
3 Tbs. fresh cream
6 egg yolks
1/4 cup lobster butter
salt and pepper
edible flower petals
2 bottles of champagne

Steps:

  • FISH: Remove the skin from the fish and pierce the flesh of the fish with a fork. Put fish in a deep dish, season with salt and pepper, add 1/2 cup of mushroom slivers. Marinate for a few hours in champagne.
  • Heat the oven to 350 degrees. Cook in a well-buttered pan in the oven for 40-50 minutes, adding onions, thyme and parsley, and the rest of the sliced mushrooms and drizzling the mixture with melted butter. After 20 minutes, add the marinade. Once cooked, keep the salmon warm on a heated platter.
  • SAUCE: Pour the strained cooking liquid in a saucepan, reduce to one-fifth, add cream and reduce until smooth. Meanwhile, prepare a Hollandaise sauce, blending egg yolks, melted butter and the lobster butter, and carefully add to the other sauce. Cover the fish with the sauce and the garnish the serving plate with flower petals. Serve hot.

Here's my recipe for poached salmon bathed in a classic hollandaise sauce. I serve this dish with boiled, cubed sweet potatoes and broccoli.

3 tablespoons fresh lemon juice
1 tablespoon olive oil
Salt and pepper to taste
2 (6 ounce) skinless, boneless salmon fillets
3 egg yolks
1 tablespoon hot water
1 cup butter, cut into small pieces
2 tablespoons fresh lemon juice
Salt and pepper to taste
2 tablespoons chopped fresh chives

Steps:

  • Find a high-sided pan large enough to accommodate both salmon fillets side-by-side, without too much excess room; a small skillet or medium-sized saucepan should do. Pour lemon juice and olive oil into the pan, along with enough water to bring the water level up to 3/4-inch. Season the water to taste with salt and pepper, then add the salmon. Pour in enough water to just cover the salmon.
  • Place the salmon over medium-high heat, and heat until the water is hot and steaming, but not simmering (165 degrees F (75 degrees C)); reduce heat if needed to keep the water at the proper temperature. Poach until the salmon turns opaque, and is firm to the touch; or to an internal temperature of 140 degrees F (60 degrees C). Proceed making the Hollandaise sauce while the salmon is poaching.
  • Pour a few inches of water into a saucepan, and bring to a boil over high heat, then turn heat to medium-high and maintain water at a gentle boil. Place the egg yolks in a metal bowl, and whisk in hot water. Place the bowl over, but not touching, the boiling water. Whisk constantly until the yolks thicken, turn a light, opaque yellow, and double in volume. You may need to remove the bowl from the boiling water from time to time in order to keep from scrambling the yolks.
  • When the yolks have thickened and increased in volume, begin whisking in the butter, a cube at a time until it melts and incorporates into the hollandaise sauce. Wait for each cube to melt and incorporate before adding the next. Once all of the butter has been incorporated, remove from heat, whisk in the lemon juice, and season to taste with salt and pepper.
  • To serve, drain the poached salmon and place each piece onto a dinner plate. Generously ladle with the warm hollandaise sauce, and sprinkle with chives.

¼ cup Dijon mustard
1 tablespoon honey
¼ cup fresh lemon juice
3 tablespoons chopped fresh dill
1 pound salmon
1 cup white wine
½ cup water
¼ cup chopped shallots

Steps:

  • In a small bowl, blend the plain yogurt, Dijon mustard, honey, lemon juice, and dill. Cover, and refrigerate until serving.
  • In a medium saucepan over medium heat, place the salmon in the white wine and water. Adjust the amount of water as necessary to just cover the fish. Sprinkle with shallots. Cover the saucepan, and cook 10 to 12 minutes, until salmon is easily flaked with a fork. Drain, and serve with the yogurt sauce.

1/2 lb salmon fillet, about 1-inch inch thick
olive oil
salt and pepper
2 tablespoons chopped shallots
1/2 cup champagne
1/2 tablespoon Dijon mustard
1/4 teaspoon dried tarragon
3 tablespoons sour cream
extra tarragon

Steps:

  • Heat grill to medium heat.
  • Paint each fillet on both sides with olive oil; salt and pepper.
  • Place on grill and cook for approximately 3-7 minutes on each side, depending on your choice of doneness.
  • Remove to heated platter and cover.
  • Heat 1 teas. olive oil in saute pan over medim heat; add shallots.
  • Saute about 1 1/2 minutes to soften.
  • Reduce heat to med-low.
  • Stir in Champagne, mustard, salt(if desired) and tarragon.
  • Blend well.
  • Remove from heat, stir in sour cream.
  • Place half of sauce on heated serving plate; top with salmon fillet and garnish with very light sprinkle of tarragon.
  • Serve.

1 tablespoon unsalted butter
4 cups Brut Champagne
1/4 cup shallots
6 sprigs fresh dill
2 tablespoons minced fresh dill
3 tablespoons salt
1 teaspoon freshly-ground black pepper
4 salmon fillets - (6 oz ea) skin removed
Champagne Vanilla Sauce (see recipe)

Steps:

  • Grease a 2-quart straight-sided saute pan with the butter. Add the Champagne, shallots, dill sprigs, chopped dill, and salt and pepper and bring to a boil. Reduce the heat to medium-low. Gently simmer for 5 minutes. Add the fish to the pan and spoon the poaching liquid over them. Cook uncovered until the salmon is firm and cooked through, about 10 minutes. (If the poaching liquid does not cover the fish, spoon the liquid over the fillets as they cook.) Using a slotted spatula, remove the fillets from the pan and blot excess liquid with a paper towel. Serve with the Champagne-Vanilla Sauce. This recipe yields 4 servings.

1/2 cup (1 stick) unsalted butter, softened
1 tablespoon fresh tarragon, chopped
Salt and black pepper
2 teaspoons fresh lemon juice
1 thick-cut salmon fillet, about 1 1/4 pounds
1 pound frozen puff pastry, thawed enough to be rolled easily
1 egg, lightly beaten
1 cup fish stock
1/2 cup Champagne
1/4 cup minced shallots
1/4 cup sliced mushrooms
3/4 cup heavy cream
1 tablespoon fines herbes (parsley, tarragon, chives, dill)

Steps:

  • In a small, deep bowl, blend together the butter, tarragon, a half teaspoon of salt, four grinds of the pepper mill and the lemon juice.
  • Cut the salmon into four serving pieces. Using a sharp knife, cut a pocket into the side of each piece, trying to make the cut as deep as possible without cutting through the other side. Divide the tarragon butter into four portions and stuff into the fish.
  • Roll out the puff pastry to a thickness of about an eighth of an inch. Divide into four squares and brush lightly with cold water. Lay each piece of fish on top and roll the pastry over to cover, pressing down to seal, then trim away the excess. Arrange on an ungreased baking sheet with a rim and brush the pastry with the beaten egg. Chill at least half an hour.
  • Heat the oven to 400 degrees.
  • Start the sauce by combining the stock, Champagne, shallots and mushrooms in a saucepan. Cook until the liquid is reduced by half. Add a half cup of the cream and cook until it thickens enough to coat the back of a spoon. Strain, then keep warm. Whisk the remaining cream in a deep bowl until it starts to thicken.
  • Bake the salmon for 12 minutes or until the pastry is lightly browned. Transfer each packet to a warm serving plate and slice into four or five pieces on a slight diagonal. Add the fines herbes to the sauce, whisk in the whipped cream and spoon alongside the packets.
