UKRAINIAN KYIVSKY TORTE
Most tortes are compact and flat as compared to the modern high and fluffy cakes. Eggs add lightness to them and, in place of flour, ground nuts or bread crumbs are used as a thickening. Most of the Ukrainian tortes are rich, and the richer the better, since no one is calorie-conscious in Ukraine. The Kyivsky torte consists of layers of sponge cake containing ground hazelnuts or walnuts separated by buttercream filling.

Steps:
- Beat the 12 egg Yolks until light and beat in the sugar gradually (a tablespoon at a time).
- Beat until lemon colored, light and fluffy.
- Fold in the bread crumbs and the nuts.
- Beat the 12 egg whites until stiff.
- Lighten the nut mixture with a bit of the egg whites and then genly fold into the mixture the rest of the whites.
- Butter 2 deep layer pans 9 or 10 inch springform pans (shallow pans may cause the batter to run over in the oven) with soft butter and sprinkle with fine bread crumbs.
- Regular pans can be used, in this case use parchment paper for the bottom of pan and grease the paper also.
- Bake in a 325 F.
- oven for about 30--35 minutes.
- Test cake with a toothpick in the centre of the cake, if it comes out clean the cake is done.
- Cool for 10 minutes and gently with a knife go around the cake to loosen and gently invert and place on a cake rack.
- Fill and frost the cake with the filling.
- If you wish more layers cut each cake in half and fill so that you will have 4 layers.
- FOR THE BUTTERCREAM FILLING AND ICING: Over simmering water in a double boiler add 1 cup HOT strong coffee and add the chocolate, mixing well to melt.
- In a separate bowl-- Beat the 5 egg yolks until light and set aside.
- Blend 2 1/2 Tablespoons of the flour in the remaining 1/2 cup COLD coffee and blend well until smooth and free of any lumps.
- Add the flour mixture to the whipped egg yolks and mix well.
- Add this mixture whisking quickly to the melted chocolate (in the double boiler) and cook until thickens stirring frequently for about 10 minutes.
- When mixture has thickened set it aside to COOL.
- Beat 1 cup unsalted butter with the 1 cup of sugar until light and fluffy and gradually beat in the cold chocolate pudding mixture little at a time into the butter and beat until fluffy.
DRUMSTICK TORTE
Taste is like that of the ice cream drumstick but with out the ice cream. Very rich. Prep time is not freezing time so allow for that.

Steps:
- Mix wafer crumbs, 1 cup nuts and margarine.
- Press into 13x9 pan.
- Bake 10 minutes at 350.
- Cool.
- Mix powdered sugar, cream cheese and peanut butter until smooth and creamy.
- Fold in by hand 2 cups cool whip.
- Spread over cooled crust.
- Mix pudding with milk and spread over cheese mixture.
- Refrigerate to set about 10 minutes.
- Top with 3 cups cool whip.
- Sprinkle with 1 cup nuts and shaved chocolate.
- Freeze 1-2 hours then refrigerate 1 hour before serving.
- Freezes well.
UKRAINIAN PRUNE TORTE
Great-Grandma used prunes and prune fillings in many goodies of her own creation. Prune torte is one of them. The filling is even more delicious when made with an equal quantity of dates and prunes.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour 5 (8 inch) round pans.
- Grind the blanched almonds in a food processor with 1/4 cup confectioners' sugar. Cream the butter with the remaining 3/4 cup confectioners' sugar until light and fluffy. Beat in the egg. Stir in the almond extract, salt, and ground almond mixture. Add the flour and mix thoroughly. Divide the dough into 5 equal parts. Roll each piece between 2 sheets of waxed paper or parchment paper to fit the pans, or pat each piece of dough into the prepared pans.
- Bake in the preheated oven until the edges begin to brown, about 20 minutes. Remove from the pans while still hot.
- To make the Prune Filling: Place the prunes in a saucepan with the water. Bring to a boil, remove from heat and let stand for 10 minutes. Drain and reserve the liquid. Puree the prunes in a food processor.
- Return the prune puree to the saucepan and add the white sugar, cinnamon, lemon juice and 4 tablespoons reserved prune liquid. Bring the mixture to a boil, then remove from heat. Assemble the torte layers, spreading them with warm prune filling. Let stand for 24 hours before slicing.

- Let eggs stand at room temperature for 30 minutes. Line three greased 9-in. round baking pans with waxed paper; grease the paper and set aside. , In a large bowl, beat egg yolks until slightly thickened. Gradually add sugar, beating until thick and pale yellow. Beat in the water, zests and vanilla. Combine the walnuts, bread crumbs, baking powder, cinnamon, cloves and salt; add to batter. Beat until smooth., In another bowl and with clean beaters, beat egg whites and cream of tartar on medium speed until stiff peaks form. Fold a fourth of egg whites into the batter, then fold in remaining whites., Pour into prepared pans. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks. Carefully peel off waxed paper. , For frosting, in a large bowl, cream shortening and butter. Beat in vanilla. Gradually beat in sugar. Add milk; beat until light and fluffy. Spread frosting between layers and over top and sides of cake. Garnish with toasted walnuts.

TORTE COUNTESS KRASINSKA ( POLISH DESSERT )
This won Best of Show in ethnic foods at the 1990 State Fair of Texas. I'm not really sure what it has to do with Countess Krasinska or what makes it a Polish dessert but a cook in Carrolton, Texas apparently knows something I don't. It appealed to me for an entirely different reason; a chance to use a gadget I picked up, new in the box, at a garage sale. The instructions on said gadget are German but the pictures tell me that this 9" round plastic disk with equally spaced teeth is for punching holes in cake tops. Pretty neat, huh?

- Preheat oven to 350ºF. Grease & flour a 9 inch springform pan.
- Cream butter, shortening & 1 cup sugar until light and fluffy. Add eggs & beat well.
- Stir sour cream & water together.
- Sift dry ingredients together & add to butter mixture alternately with sour cream/water dilution, beating well after each addition.
- Stir in dates, nuts & orange peel.
- Pour into prepared pan & bake for 1 hour. Cool 15 minutes.
- While cake is cooling, simmer orange juice with 1 cup sugar until sugar dissolves.
- Remove cake from pan & place on a round serving plate.
- Pierce cake top all over with a handy gadget like mine or use a cake tester or toothpick.
- Pour orange syrup all over the top of the cake, artfully dripping it down sides.
- Serve with unsweetened whipped cream dolloped in the center & piped around edges.

- Preheat oven to 350 degrees F (175 degrees C). Grease an 11x17 inch jelly roll pan. Mix together the walnuts, ground cinnamon, and 3/4 cup of sugar in a medium bowl and set aside.
- In a small bowl, dissolve the yeast and 1 teaspoon sugar in warm water. Let stand until creamy, about 10 minutes. In a large bowl, stir together the yeast mixture, egg yolks, sour cream, and butter. Gradually stir in the flour until the dough becomes too stiff to use a spoon. Use your hand to knead the dough in the bowl until it becomes smooth, about 5 minutes. Divide the dough into three equal parts, form into balls, cover, and set aside to rest for about 15 minutes.
- Roll one of the balls of dough between 2 sheets of waxed paper to fit the pan. Place the dough in the bottom of the prepared baking pan and spread with 3/4 of the nut mixture. Roll out another ball of dough in the same way, place this over the nut layer in the pan and spread the apricot preserves evenly over the dough. Roll the third ball in the same way and place on top of the layer of preserves.
- Place the torte in the preheated oven and set the timer for 40 minutes. When the timer goes off, the top of the torte should be golden brown, if not then wait a few minutes. Place the egg whites into a clean glass or metal bowl. Whip the egg whites to soft peaks, then gradually add 2/3 cup sugar while beating the egg whites to stiff peaks. Spread the meringue evenly over the top of the torte and sprinkle with the remaining nut mixture.
- Bake the meringue-covered torte for an additional 15 minutes. Cool the torte in the pan set on a wire rack. Trim the edges for a cleaner presentation. Serve at room temperature.

This recipe for an authentic Austrian Linzertorte is from my mother who grew up in Linz and still lives there. She always bakes the torte 3 days ahead because it develops its real flavor over a few days.

- Place flour, ground almonds, sugar, baking powder, cinnamon, and cloves on a clean work surface. Add butter and 2 egg yolks; knead quickly to form a smooth dough. Wrap dough in plastic wrap and refrigerate for 1 hour.
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 10-inch springform pan with remaining 1 tablespoon butter.
- Press 2/3 of the dough evenly in the pan so that the entire bottom is covered. Spread red currant jam on top. Divide remaining dough into several pieces and roll into 1/3-inch strands between your fingertips. Arrange the strips over the jam in a neat lattice pattern. Place the last strip along the sides of the pan to form a rim.
- Beat remaining 2 egg yolks and brush over the lattice and rim, taking care not to splash onto the jam.
- Bake in the preheated oven until golden brown, about 45 minutes. Watch carefully towards the end of the baking time to make sure the torte does not turn too dark. Let cool and remove gently from the pan. Store for at least 3 days in a cool place before serving.

- Preheat oven to 325 degrees.
- Place potatoes in a large pot, and add enough cold water to cover, bring to boil and lower heat.
- Simmer until tender but firm, about 5-7 minutes, drain and return to hot pan to dry out.
- Melt butter in a cast iron skillet over medium heat.
- Saute shallot in butter for about 5 minutes.
- Season with salt and pepper and turn off heat, set aside to cool.
- In a bowl, beat the eggs.
- Add the shallots mozzarella and 3/4°C Parmigiano, mix to combine.
- Make sure your Cast Iron Pan is buttered all around and on the sides.
- Place 1 layer potatoes in the bottom of the pan, Top with 1/4 of the egg mixture, add another layer of potatoes and 1/4 of the eggs, repeating until all of the ingredients are used.
- Be sure to end with a layer of potatoes.
- Top with remaining Parmigiano and bake 40-50 minutes until tender and knife inserted in center comes out clean.
