- Heat the oven to 425 degrees. Bake the eggplant on a baking sheet in the center of the oven, turning it over once or twice, until it is soft and its skin is charred and blistered, about 1 hour.
- Meanwhile, in a skillet, cook the onions in 4 tablespoons oil over medium heat until they are soft but not brown, 6 to 8 minutes. Stir in the green pepper and garlic and cook, stirring occasionally, for 5 minutes longer. With a rubber spatula, scrape the contents of the skillet into a mixing bowl.
- Remove the skin from the baked eggplant with a small, sharp knife, then chop the eggplant pulp finely, almost to a pure. Add it to the mixing bowl and stir in the tomatoes, sugar, salt and a few grindings of black pepper. Mix together thoroughly. Heat the remaining 2 tablespoons oil in the skillet over moderate heat and pour in the eggplant mixture. Bring to a boil, stirring constantly, then turn the heat to low, cover the skillet, and simmer for 1 hour.
- Uncover and cook 30 minutes, stirring from time to time, until all the moisture in the pan has evaporated and the mixture is thick enough to hold its shape in a spoon. Stir in 2 tablespoons lemon juice and taste for seasoning, adding salt, pepper and lemon juice to taste. Transfer the “caviar" to a mixing bowl and chill, covered with plastic wrap, until ready to serve. Serve on squares of bread or on sesame-seed crackers.

POOR MAN'S CAVIAR
This recipe, which originates from the Balkans, is posted by request. It is called by this name because the eggplant seeds bear a resemblance to caviar! Although it tastes nothing at all like caviar, we like it very much.

- For an authentic smoky flavor, roast each unpeeled eggplant by laying it directly over a low, open, gas flame, and turn every minute with a pair of tongs until the skin is completely charred and the eggplant is very soft and limp (about 20 to 30 minutes).
- Alternatively, prick the eggplants all over and roast on a baking tray in the middle of a preheated 400 degree Farhenheit oven, for 45 minutes, or until until the insides are very soft and the outsides are dry and almost crisp.
- Let the eggplants cool briefly, then peel (the skin should come off easily) or scrape out the flesh.
- Puree eggplant pulp in a blender.
- Heat a little olive oil in a fry pan or skillet, and fry the onion until it becomes pink-brown.
- Add the tomato, green bell pepper and salt and pepper, and cook over low to moderate heat for several minutes until soft (also add 1 to 2 cloves garlic, chopped, at this stage if desired).
- Rub as much of this mixture, as possible, through a sieve and mix with the eggplant puree.
- Check the seasonings and stir in the lemon juice, adding a teaspoon more at a time, to taste, if desired.
- The consistency should be that of thick mayonnaise.
- Garnish with freshly chopped parsley and serve, as an appetiser, with chunks of Turkish bread.

- Preheat oven to 350 degrees F.
- Brush eggplant with olive oil and roast eggplants at 350 degrees for 30 minutes or until soft.
- Saute the garlic and shallots in 2 ounces olive oil over low heat until they are translucent and aromatic.
- After the eggplant has cooled, remove the pulp from the skins, and place in a food processor and process until smooth.
- Place mixture in a bowl and add remaining ingredients along with garlic and shallots. Season, to taste, with salt and pepper, and serve with pita wedges

SMOKY EGGPLANT SPREAD
Essentially a delightful eggplant schmear to eat with warm pita triangles, this spread gets its pleasant smoky flavor from a deliberate charring of the eggplant skin. Whether over hot coals or under the broiler, the eggplant must be mercilessly blackened (the inner sweet flesh gets steamed to softness in the process). Tahini, olive oil, cumin, lemon and hot pepper take care of the rest.

- Prepare a charcoal fire or heat the broiler. Pierce eggplants here and there with the point of a paring knife. Place eggplants 2 inches from heat source. Allow skins to blister and char, turning with tongs until entire surface is blackened and eggplants are completely soft, about 10 to 12 minutes. Set aside until cool enough to handle.
- Slice eggplants in half lengthwise and lay skin side down on a cutting board. Carefully scrape away flesh with a knife and put it in a colander. Discard burned skins. Do not rinse eggplant flesh - a few bits of remaining char is fine. Salt flesh lightly and leave for 5 to 10 minutes, then squeeze into a ball to remove liquid.
- Blitz eggplant, 1/2 teaspoon salt, tahini, lemon juice, garlic and cayenne in a food processor or blender to obtain a creamy purée. (For a more rustic spread, beat with a whisk instead.) Taste and adjust salt and lemon juice if necessary. Transfer mixture to a shallow serving bowl.
- Just before serving, stir together cumin and olive oil, and spoon over the mixture's surface. Sprinkle with paprika, parsley and mint. Serve with warm pita cut into triangles if desired.

- Roast eggplants: Using a wooden skewer, pierce eggplants all over. Turn two gas burners or a gas grill to high flame; place one eggplant on each. Cook, turning with tongs as each side blackens and softens, until skins are completely black and flesh is falling-apart tender, about 10 minutes. Remove from flame; transfer to a nonreactive baking dish. Place one end of dish on a slant so that the juices can run from the eggplants. When cool enough to handle, peel away all blackened skin.
- Place eggplant flesh in the bowl of a food processor; pulse until pureed. Transfer to a large bowl; stir in the onion, tomatoes, parsley, olive oil, lemon juice, salt, and pepper. Serve warm or at room temperature with pita or rye bread.
POOR MANS CAVIAR

- Chop eggplant. Saute chopped onions and tomato. Add all else EXCEPT bell pepper and black pepper. Simmer for 10 minutes. Remove from heat, add bell pepper and black pepper. Chill overnight and enjoy. This is particularily good on toast quarter with melted cheddar cheese on them.

- Split and mash the potatoes in a mixing bowl; set aside. The potato skins may be left on if desired.
- Melt the butter in a saucepan over medium-high heat; cook and stir the bell pepper, onion, and celery in the melted butter until they begin to soften, 5 to 7 minutes. Remove from heat and stir the milk into the mixture; pour the mixture over the mashed potatoes and stir to combine. The consistency should not be too runny. Allow the mixture to cool completely.
- Preheat an oven to 350 degrees F (175 degrees C).
- Add the crabmeat, Cheddar cheese, and dill to the potato mixture; season with salt. Lightly mix. Pour the beaten eggs into the mixture and stir to combine. If the mixture is too thin, bread crumbs or flour can be added to make more firm. Form the mixture into 24 small patties.
- Heat the olive oil in a large skillet over medium heat; cook the patties in small batches in the skillet until completely browned and crisp, 3 to 5 minutes per side. Do not flip until bottom is fully browned and crisp; this ensures the patties will not break. Transfer to a baking dish in the oven to keep hot until all are cooked. Serve hot.

- In a Medium skillet, heat 2-3 Tbsp oil over medium high heat. Add onion and carrot and saute until soft (7 min), stirring often. Add pressed garlic and saute another 1-2 minutes stirring constantly. Remove from heat and set aside.
- In a second, large skillet, heat 4-5 Tbsp oil over medium/high heat. Add finely diced eggplant (you could make bigger dice but it's more spreadable this way). Sprinkle in 1 tsp salt, 1/4 tsp pepper, stir, and cook uncovered for 10 minutes stirring often until eggplant is very soft (7 minutes). Add more oil if the eggplant is sticking to the pan.
- Once it's soft, stir in 3/4 to 1 cup salsa and your onion/carrot mix. Mix well and heat for another minute until the spread is hot. Serve with toasted bread or your favorite crackers.
