THE PIE THAT'LL MAKE YOU CRY

Steps:
- First, whip up your pie crust using "Sylvia's Perfect Pie Crust" found on Tasty Kitchen.Next, mix sugar, brown sugar, salt, corn syrup, butter, eggs, and vanilla together in a bowl. Pour chopped pecans in the bottom of the unbaked pie shell. Pour syrup mixture over the top. Cover top and crust lightly/gently with foil. Bake pie at 350º for 30 minutes. Remove foil, then continue baking for 20 minutes, being careful not to burn the crust or pecans.NOTE: PIE SHOULD NOT BE OVERLY JIGGLY WHEN YOU REMOVE IT FROM THE OVEN. If it shakes a lot, cover with foil and bake for an additional 20 minute or until set. Required baking time seems to vary widely with this recipe. Sometimes it takes 50 minutes; sometimes it takes 75!Allow to cool for several hours or overnight. Serve in thin slivers.
MARTHA'S BUTTERMILK PIE
Lemon zest and vanilla extract give the tangy buttermilk filling incredible depth of flavor. Martha made this recipe on "Martha Bakes" episode 712.

- Preheat the oven to 325 degrees.
- Combine sugar and flour in a large bowl. Add yolks and eggs, and whisk to combine. Whisk in butter, buttermilk, cream, zest, and vanilla until thoroughly combined. Pour into baked crust. Bake until filling is set but still wobbly, 45 to 55 minutes. Let cool to room temperature before serving.
POOR MAN'S PIE
This is an awesome recipe that I got from my coworker. It can be modified in many ways, including for the slow cooker. It's a simple meal of things you often already have on hand that really sticks to the bones, and it can also be a fun way to use up some leftovers.

- Preheat oven to 350 degrees F (175 degrees C).
- Cook and stir ground beef in a large skillet over medium heat until browned and crumbly, about 10 minutes; season with salt, black pepper, garlic powder, and onion powder. Drain excess grease. Stir cream of mushroom soup and green beans into ground beef and bring to a simmer.
- Spread ground beef mixture into a 9x13-inch casserole dish. Spread mashed potatoes evenly over ground beef mixture. Sprinkle Cheddar cheese over the top.
- Bake in the preheated oven until heated through, about 20 minutes.

POOR MAN'S SHEPHERD'S PIE

Steps:
- In a medium saucepan, bring water and brown rice to a boil. Reduce heat, cover and simmer for 45 to 50 minutes.
- Meanwhile, in a medium skillet over high heat, brown the ground beef and drain fat.
- Stir the mushroom soup, green onion, Worcestershire sauce, soy sauce and pepper into the skillet with the beef. Simmer on medium low heat for 10 minutes. Serve over the rice.

POOR WOMAN'S CHICKEN WELLINGTON
I kinda made this up as I went along, but my husband loves it! It's so much easier to make compared to the real thing, and a lot cheaper than going out to eat.

Steps:
- Using a stock pot I heat up the wine, shallots, garlic, butter, and bouillon on medium temperature.
- When wine has reduced somewhat and garlic is fragrant add chicken (I usually cube my chicken pieces). Cook on med high temperature.
- When chicken has cooked in the fragrant wine broth, add mushrooms.
- Continue to cook for about 3 minutes and then add remaining ingredients (except the pastry sheets) and stir.
- (Sometimes I will add heavy cream to this as well, but it's your preference).
- Cook for another 5 minutes and watch as it reduces.
- Using a loaf pan (sprayed with PAM) I layer pastry sheets between the chicken/mushroom sauce (about 6-7 high).
- On final layer of pastry I brush a little egg wash on for shine.
- Then bake at 350°F until the pastry is flaky/puffed/golden brown.
- Enjoy!

POOR WOMAN'S TAGINE
Ok, well, it's not really a tangine but it is a slow cooked dish! It's my variation on LadyPit's brown rice and lentil casserole. However, since it is significantly different and vegan to boot, I thought that it would be good to post. In the winter, if you use canned tomatoes, use the juice from the can to replace some of the water for extra tastiness.

- Combine all ingredients in a baking dish (I use a pyrex mixing bowl) and cover with foil.
- Bake covered for 1 hour and 30 minutes.
- Let sit covered for at least 15 minutes before eating. Even better the next day, after the flavors have developed a bit more.

POOR MAN'S APPLE COBBLER
Have a dessert craving and not sure what to make? Try this super simple apple cobbler. Made with self-rising flour and canned pie filling, you probably already have the ingredients in your pantry. The pie filling is dolloped on top but the crust magically bakes around it. This comes out of the oven with a beautiful golden brown crust. You can use any fruit you'd like. We opted for apple but cherry or blueberry would be delicious too. If you like a lot of fruit, you can even add an extra can of filling to the cobbler. Serve with a scoop of ice cream for a delicious dessert.

- Preheat oven to 350 degrees.
- Melt butter in a 9x13 (preferably glass) baking dish. Do this by placing it in the oven while it preheats.
- Mix sugar, flour, vanilla, and milk in a mixing bowl.
- Pour mixture into baking dish over the butter. Do not mix with butter.
- Spoon in apples or your fruit of choice in random spots.
- Bake for 45 minutes.
- The crust will rise around apples. Serve. Enjoy!
